The Tsuke Soba had a rich seafood broth with a hint of acidity, similar to Daishoken. The fact that the ingredients were not in the dipping sauce was a plus. Today was hot and humid, so I ordered the cold boiled sardine soba for 1200 yen. They don't offer extra-large portions, so I also got the truffle soy sauce butter rice. The butter rice arrived in less than 10 minutes. Soon after, the cold boiled sardine soba was served. The quality of cold soba can vary, but how was this one? I took a sip of the soup and it was absolutely exquisite! The flavor and umami of the sardines were bursting, yet so refined! There was no roughness at all. The meat on top looked like a rose and was like a work of art. I usually don't finish my soup, but this time I drank it all in one go. This is definitely a place I will come back to. I was completely satisfied with this fantastic dish.
