Had a year-end party with 4 colleagues, seniors and juniors, at a favorite izakaya. The dishes and sake at this place are a perfect match. We enjoyed unique dishes like Taro Salad and White Strawberry Sake, and had a great time. I highly recommend this place to everyone. Thank you for the wonderful meal!

A very calming shop. Piano music playing inside, and a brisk and friendly female owner. The selection of Japanese sake is abundant and it's hard to choose. The complimentary ice fish chawanmushi is delicious. The refined seasoning is exquisite. The pork loin with spring onions and egg is also delicious! A great shop that makes you want to come back again and again!

The menu featured cutting-edge food and a wide selection of wine and sake, along with delicious appetizers. Each bite was full of flavor. This restaurant is truly exceptional, a hidden gem on a mysterious snowy night.

- Appetizer (bamboo shoots and firefly squid soup): A delicate and elegant taste with a subtle and soothing broth. The texture of Kyoto bamboo shoots, seaweed, and rich firefly squid create a harmonious blend. My friend exclaimed, "I want to come back to this place even if I have to walk from Sapporo Station with an empty stomach" (laughs).
- Deep-fried chicken wings: Crispy skin on the outside with juicy meat inside, another satisfying dish. My friend was delighted, saying, "What is this? The crispy skin, the juiciness, and the flavor of the meat are amazing!"
- Assorted sashimi: Scallops, cherry salmon, squid, sea urchin, mackerel, and tuna beautifully arranged in halves for sharing. This thoughtful gesture truly warms the heart. The cherry salmon was fatty and had a sweet, melt-in-your-mouth texture.
- Sea urchin and white asparagus: To savor the best of Hokkaido, we ordered white asparagus with sea urchin. The thickness, texture, and sweetness of the asparagus surprised us, making us smile with delight ☺︎ Our strategy to gradually increase my friend's favorite restaurants is a success! Thank you once again, Izakaya Tokusan. It was a delightful meal.

The firefly squid was prepared carefully and easy to eat. The homemade karasumi (bottarga) had a moist texture with a subtle flavor of sake. The sashimi platter included fresh fish like Japanese halfbeak, saury, cherry trout, scallop, surf clam, and sea urchin. Each dish was full of rich flavors. The marinated mantis shrimp with soy sauce was a perfect match for Japanese sake. The sea urchin and squid salad had a delightful texture and intense flavor. The pickled mackerel with strong salty taste paired well with sake. The deep-fried spring onions with pork loin and scrambled eggs had a delicious broth-like flavor. Just the sea bream miso alone makes the sake go down smoothly (laughs). ● Haruko's plum and wasabi grated whitebait with a freshly grated wasabi and a salty plum that stands out. It's a dish that makes you crave for hot sake. ● Red snapper plum and shiso tempura. The golden, beautifully thin coating of shiso tempura is a clean hit! I visited Tokusa based on recommendations from food enthusiasts. I was really looking forward to it because I trust the two people who recommended it to me. Here is a summary of my experience:
- Fugu Miso Soup: Elegant and delicate, yet delicious.
- Uramachida Sake: I had this at a soba restaurant before and it's really tasty and easy to drink.
- Dried Persimmon and White Miso: High sugar content like dried persimmons, smooth white miso, a perfect combination.
- Sweet Chestnut Tempura: I was delighted the moment it arrived at the table. It was sweet and enjoyable.
- Fried Chicken Wings: The crispy skin and juicy meat made this dish so delicious that I had to tell the owner how good it was.
- Pork Loin and Shrimp with Egg: The basic broth was strong, and the fluffy egg and shrimp were delicious.
- Fig Cheese: A light and refreshing dessert with fig cheese and sprouted grain crackers.
- Grilled Blackthroat Seaperch: Perfectly cooked with a crispy texture.
- Fugu Skin with Ponzu Sauce: The sweetness and acidity of the ponzu sauce paired perfectly with the chewy fugu skin.

I have a favorite restaurant that I visit regularly to enjoy seasonal dishes. This was my third visit, around 7 pm on a weekday. The atmosphere is always comforting with the quiet and reserved owner and the friendly and kind-hearted wife. The place was less crowded than usual due to the rain, with only two groups of five customers in the tatami seating area and one person at the counter. I first discovered my love for sake with the ponzu sake that I tried on my first visit to this restaurant, so whenever I come here, I always go for the ponzu sake (although they have other options on the menu). For my first drink, I tried the "Musubi Yui" at 850 yen, a junmai ginjo sake from Yuki Sake Brewery in Ibaraki Prefecture. It had a sweet aroma but a crisp taste, which I really enjoyed. The appetizer was "Firefly Squid and Rape Blossom with Vinegar Miso," made with seasonal ingredients. I ordered the "White Fish with Ponzu" for 680 yen, which had a fresh and crunchy texture that paired well with the light ponzu sauce. My favorite dishes at this restaurant are the ones with vinegar, and the "Surf Clam and Rape Blossom with Sesame Dressing" at 850 yen did not disappoint. The surf clam was tender, and the sesame dressing was smooth and flavorful. The "Seared Horse Mackerel" at 950 yen was a revelation, with a unique broth-like flavor and a generous topping of white sesame seeds. For my second drink, I tried the "Yamazaki Brewery" junmai ginjo nama sake called "Haru Kasumi" at 750 yen, which had a refreshing effervescence and a sharp flavor. After about an hour, I bid farewell to the restaurant and was kindly escorted out by the owner. I look forward to returning when spring vegetables are in season. Thank you for the delicious meal!

This shop is located about a 15-minute walk from Nishi 18-chome or Nishi 28-chome subway stations. It is a very atmospheric shop with a counter and raised seating area shaped like a grand piano when viewed from above. I visited with a friend. First, we were served an appetizer of plump oysters and seaweed soup with delicious broth. We each ordered what we wanted, but the recommended dish was freshly fried thick tofu, which was really delicious! The hotate sashimi, recommended sawara and celery ponzu, simmered duck breast, matsukawa umeshiso fry, smoked herring with cream cheese, pickled herring, and oyster porridge for finishing were all delicious. We also had to try the hot sake. Everything was carefully made and delicious. It was a great power charge. I would love to visit again.
