On a Sunday evening, I dined at "Sushi-ya no Uokin Meguro," a restaurant I had reserved about two weeks in advance. This sushi spot is operated by "Uokin," a popular restaurant known for its fresh seafood and casual dining atmosphere. It’s a great place to enjoy sushi at the counter.
**Date and Time:** November 2024, Sunday at 18:00
**Number of Guests:** 2
**Restaurant:** This newly opened and beautifully designed restaurant just started in April 2024. It operates on a completely reservation-only basis with set start times at 16:00, 18:00, and 20:30. The place was bustling and fully booked that evening. While I checked online for reservations on Tabelog, it seemed relatively easy to secure a spot. Customers can enjoy conversations with the chef at the counter while savoring sushi and drinks, although the chef was quite reserved, focusing intently on preparing the sushi and providing explanations for each dish served one-by-one. Handling eight guests at once can be quite challenging for him, especially to deliver all the items on the day's menu within the time limit.

Chef’s Selection Sushi Course with 24 Dishes
**Meal:** Counting the dishes from appetizers to dessert, I received a total of 26 dishes plus 2 extra, making for a grand total of 28 dishes for 8,300 yen (plus an additional 10% service charge). This course includes high-end ingredients like medium fatty tuna, abalone, sweet shrimp, and sea urchin, which I believe is quite affordable at this price. When the chef started making takoyaki, I wondered why, but it turns out he wanted to offer the tender octopus used in a different presentation. I'm glad I'm a fan of takoyaki; it’s interesting to have takoyaki at a sushi restaurant! Personally, I really enjoyed the aji (horse mackerel) gari maki, which consists of open aji roll combined with cucumber and sweet ginger. The fatty aji paired with the sweet and fragrant ginger made for a refreshing treat, and it was nice to have it served later in the meal as my stomach was starting to fill.
