Recently, after the famous restaurant "Kitano Hana Hayashi" in Chitose was featured in the Michelin Guide, there has been a series of staff members from Kitano Hana who have been opening their own restaurants. This time, I heard that Mr. Date has opened his own restaurant and decided to visit. The location is about a 5-minute walk from Chitose Station, and among the Kitano Hana Brothers (Kitano Hana, Fukuro, Suzume), it is the closest to the station. In terms of size, Kitano Hana + Hayashi > Suzume > Fukuro. Considering this, it is impressive that Mr. Date decided to open such a large restaurant. Many people may be interested in the differences between the Kitano Hana Brothers' restaurants, so I will write from that perspective. Kitano Hana focuses on okonomi dishes, while Kitano Hana Hayashi offers a 12,000 yen course. As for Suzume, the prices range from 6,000 yen to 10,000 yen for courses. In terms of price range, Kitano Hana Hayashi > Suzume > Kitano Hana > Fukuro. This time, the atmosphere of the restaurant is more similar to Kitano Hana Hayashi, so I chose the 10,000 yen course to gauge the chef's enthusiasm. I will list the dishes I had below. - Soft-boiled octopus - Oyster marinated overnight - Sashimi of red sea bream and tilefish - Grilled turban shell - Blowfish sashimi - Dried and grilled Pacific saury - Crab innards mixed with crab meat - Nigiri sushi: Pacific saury, sweet shrimp, medium fatty tuna, red-fleshed fish, small skin, tilefish, splendid alfonsino, grilled kinki, topped with salmon roe and sea urchin - Rice bowl topped with conger eel Overall, the dishes were mostly delicious, although I did not particularly enjoy the sweet marinated oyster sauce. The crab innards mixed with crab meat had a generous amount of crab meat, which was nice. The nigiri sushi was meticulously prepared, reminiscent of the style of Kitano Hana. The total bill came to 18,000 yen, including a lot of alcohol. This may be due to the high cost of the drinks. The price may be higher than that of Kitano Hana Hayashi. If opening a similar restaurant in the same area as the mentor, it may be necessary to change the direction or add a unique touch to stand out. The chef has a sense of style, and I look forward to seeing what he will do in the future!
