It is said that the head chef at Kitano Hana, a restaurant known for its difficulty in making reservations, trained at Hayashi. They even see you off outside when you leave. This place offers better value for money compared to Hayashi, with both tatami seating and a counter available. Courses start from 5,000 yen. When you're looking for authentic Hokkaido cuisine in Chitose, this place comes highly recommended. The restaurant is non-smoking, but there is an ashtray at the entrance. Credit cards are accepted.

This time, we didn't go to Sapporo, but instead found a sushi restaurant in Chitose city near the airport. It's a bit quiet and away from the bustling city, but the atmosphere of the restaurant is really nice and promising. We had a course meal and each dish was carefully prepared, which was impressive. The nigiri sushi consisted of 5 pieces, and you can tell that a lot of effort was put into making each one. They were delicious. Hokkaido never disappoints when it comes to good sushi. You can find great sushi anywhere here.

Last order at 21:00. There were courses priced at 5000, 7000, and 10000 yen, and I chose the 7000 yen course. For the appetizers, we had simmered octopus, Hokkai shrimp, and wasabi stem pickles, as well as raw herring, Tokishirazu, Juto flounder, and scallops. We also had seaweed chawanmushi and grilled silver cod. For the sushi, we had sandfish, scallops, sweet shrimp, salted red meat, salted medium fatty tuna, kohada, line-caught horse mackerel, and golden eye snapper. We added flower crab and anglerfish liver. The sake was cheaper than at Susukino and quite delicious.

It's been a while since I visited. Today, I will have the okonomi. The appetizers are plentiful so naturally I drink a lot. I drank and ate to my heart's content. Considering how much I had, the price was very reasonable. I had a lot, but the foie gras was especially delicious. The Sayori sushi was also top-notch. Thank you for the feast!

This sushi restaurant has been taking care of me so much that I can already call myself a regular customer. I always sit at the counter with my child, taking care of them while enjoying the sushi. The staff are always kind and never seem bothered by the child. The head chef, who used to work at a famous restaurant in Chitose, serves delicious sushi rice seasoned with red vinegar and offers a great selection of sake. They also receive fresh ingredients by air from the mainland. This time, I had isaki, cutlassfish, and even requested for shinko, which they kindly provided. In addition to what is shown in the photos, we enjoyed various other dishes as well. The raw shrimp from the aquarium was delicious, and the shinko was a taste of happiness. I thought I wouldn't be able to eat it this year, so I am truly grateful. Chef, I will continue to visit often, so please take care of me. Thank you for the wonderful meal.

Sushi restaurant in Chitose - First visit alone on a weekday - Chef's selection of 10 pieces of nigiri set for 3,500 yen + tax: - Soy sauce - ? - Surf clam - Lean tuna - Hanpoku shrimp from Hanpoku - Snow crab - Seasonal cherry salmon - Spear squid - Salmon roe soy sauce marinated - Scallop - Kanpyo roll - Chawanmushi / Soup - The threshold is too high, so I usually feel like I can't go, but I read on Facebook that they offer takeout, so I decided to give it a try before the restrictions are lifted. According to Facebook, they are open for lunch, which is unusual as they normally only open in the evenings. I messaged them the day before just to be sure, and they confirmed the reservation. It's along a road I often pass by, but I never noticed the restaurant before. There is a sophisticated curtain hanging at the entrance. There are counter seats and sunken kotatsu seating, with other customers already seated. There is a pleasant aroma of incense in the air. The counter seats are not regular chairs but sofas. I thought they only had flyers and rice bowls, but they also offer nigiri. The chef asked if I had any allergies or dislikes, to which I replied no. They set a black square tray with chopstick rests, chopsticks, and a wet towel. They asked what drink I would like, and I requested water. There is ginger on a small elevated stand, and they mentioned that the soy sauce is already provided. Each piece of nigiri is served one by one. I forgot if I should reach out and put it directly into my mouth or place it on the tray in front of me. I was too shy to ask, so I waited until the proprietress passed by and asked her quietly. She kindly said I could eat it however I liked. After the first piece of nigiri, they served chawanmushi. I was unsure if I should eat it in between the nigiri or at the end. It was sweetened and topped with black seaweed. It was delicious. The kanpyo roll was melting. The best soup came last. I wondered if soup should be eaten with the nigiri. They also offered hot tea. One of the other customers at the counter was called "sensei," and they were discussing a trial, so I assumed he was a lawyer. At first, they seemed to be talking only to regular customers, making me feel a bit out of place, but the chef was considerate and engaged me in conversation as well. The proprietress was also very elegant. I thought about taking a photo on my way out, but they ended up seeing me off, which was a nice gesture. I'm glad I took the photo earlier. Thank you for the wonderful meal. As of May, they are accepting reservations for lunch and takeout with advance notice.

Recently, after the famous restaurant "Kitano Hana Hayashi" in Chitose was featured in the Michelin Guide, there has been a series of staff members from Kitano Hana who have been opening their own restaurants. This time, I heard that Mr. Date has opened his own restaurant and decided to visit. The location is about a 5-minute walk from Chitose Station, and among the Kitano Hana Brothers (Kitano Hana, Fukuro, Suzume), it is the closest to the station. In terms of size, Kitano Hana + Hayashi > Suzume > Fukuro. Considering this, it is impressive that Mr. Date decided to open such a large restaurant. Many people may be interested in the differences between the Kitano Hana Brothers' restaurants, so I will write from that perspective. Kitano Hana focuses on okonomi dishes, while Kitano Hana Hayashi offers a 12,000 yen course. As for Suzume, the prices range from 6,000 yen to 10,000 yen for courses. In terms of price range, Kitano Hana Hayashi > Suzume > Kitano Hana > Fukuro. This time, the atmosphere of the restaurant is more similar to Kitano Hana Hayashi, so I chose the 10,000 yen course to gauge the chef's enthusiasm. I will list the dishes I had below. - Soft-boiled octopus - Oyster marinated overnight - Sashimi of red sea bream and tilefish - Grilled turban shell - Blowfish sashimi - Dried and grilled Pacific saury - Crab innards mixed with crab meat - Nigiri sushi: Pacific saury, sweet shrimp, medium fatty tuna, red-fleshed fish, small skin, tilefish, splendid alfonsino, grilled kinki, topped with salmon roe and sea urchin - Rice bowl topped with conger eel Overall, the dishes were mostly delicious, although I did not particularly enjoy the sweet marinated oyster sauce. The crab innards mixed with crab meat had a generous amount of crab meat, which was nice. The nigiri sushi was meticulously prepared, reminiscent of the style of Kitano Hana. The total bill came to 18,000 yen, including a lot of alcohol. This may be due to the high cost of the drinks. The price may be higher than that of Kitano Hana Hayashi. If opening a similar restaurant in the same area as the mentor, it may be necessary to change the direction or add a unique touch to stand out. The chef has a sense of style, and I look forward to seeing what he will do in the future!

It was delicious! And the cost performance was excellent. I love karasumi, so I also had homemade karasumi and dried shiokara. I want to enjoy them with sake on my day off tomorrow. I love sushi, especially the red vinegar rice and the toppings were carefully prepared from local ingredients to tuna, each one was delicious. I will definitely go back!

We found a restaurant near Chitose Airport with private rooms and made a reservation in advance for a group of 10 people. We had a course meal and everything was delicious.
