"On December 16, 2022, the café "Shirokuma Mikazuki Coffee" operated by "Shirokuma Pan" in Shiraishi-ku opened its doors. Located a 5-minute walk from Miyanozawa Station on the subway, the front of the store was adorned with celebration flowers, and there were many customers, creating a lively atmosphere. The operation consisted of "two older women and seven young men and women," which seemed like a large team in the food and beverage industry where there is a shortage of manpower. The capacity included "6 counter seats, 4 tables for 4 people, 1 table for 2 people," and several low tables were placed in a spacious raised area, not all visible but around 5-6 tables, possibly targeting families with children. Sitting at the counter seat, there were AC power outlets, USB ports, and Wi-Fi available right in front of you. Looking at the menu, they boasted sandwiches and sweets made with croissants, with curry, gratin, pasta, pancakes, and more. I ordered the "Shirokuma Blend @ 539" which took 15 minutes to arrive. I started to feel like I was being forgotten, but just as I was starting to wonder, it arrived with a "Sorry to keep you waiting." Sitting at the small café counter, when the hand-drip coffee is visible, there is no anxiety, but in a large café, you can't see what's happening, and you may wonder if your order is being processed. Although there were a fair number of customers, the staff was also numerous, and the time taken seemed excessive. Perhaps the operation is not yet settled shortly after opening, or on the contrary, it may be brewed carefully. However, I also saw the floor staff checking with the kitchen about the serving time for the delayed orders. Dishes like pancakes that require cooking time may be better to inform in advance. The coffee served in a solid gray cup had a lower temperature, a mild acidity, and a moderate bitterness, not particularly special, hence the cost performance was also mediocre. Upon reviewing the menu, the pricing of "Decaf @ 825 yen" compared to "Blend @ 539 yen" seemed questionable. Although it is a new store, I felt that some areas, such as the cleanliness of the counter and the toilet, were slightly neglected. From the moment I entered, three plates of pancakes were left in the corner of the counter, and I wondered if they were going to serve them to customers. They remained there, untouched, without being cleared or moved to an unseen area. Surely, this is a store that will continue to "evolve and improve," but I hope they will strive to achieve stable operations soon. I would like to visit again after some time, and at that time, I would like to enjoy a meal in a slightly calmer atmosphere. Thank you for the meal."
