This is a Jiro-style ramen restaurant in Muroran. It is located near Muroran National College of Technology. There is no parking lot. Around 80% of the customers on weekdays at 12:30 pm seem to be students, as the location is close to the college. They offer Jiro-style ramen and Chinese soba. The regular size of Jiro-style ramen is 250 grams for 900 yen. I chose the regular size with less vegetables and extra garlic. It was the perfect amount for me. The Jiro-style ramen is hearty and satisfying, especially with the thick slices of chashu. The soup is quite flavorful, even though it may be a bit strong for some. The restaurant has strict rules like no entry for people wearing perfume and a 1000 yen penalty for leaving food unfinished after ordering extra toppings. It seems like they take the quality of their soup seriously. There are not many Jiro-style ramen restaurants in the area, making this place quite valuable. Although the lunch hours are until 1:00 pm, they were still open past 1:00 pm. If you order extra garlic, be mindful of not bothering others with the strong smell.

A shop near Muroran National College of Technology where you can eat Jiro-style ramen. They also serve Chinese noodles, Jiro-style mixed noodles, and dipping noodles. The shop used to be located in the bustling area of Nakajima-cho, but has since relocated. It has been featured on the TV show "Sandwichman" and is frequented by university student YouTuber Parker. The interior of the shop has a retro cafe style with counter and table seating. For Jiro-style beginners, the rules and ordering process are clearly explained on a blackboard. During lunchtime on weekdays, there were many students. [Order] - Salt Ramen, Regular (¥900) * Extra vegetables, normal fat, normal garlic, normal taste strength, normal noodle firmness Note that you cannot add extra vegetables to a small ramen, only to a regular size or larger. Be careful not to overorder and leave food uneaten, as there is a penalty. [Tasting] The salt ramen was served quickly, with a generous amount of vegetables on top. Starting with the bean sprouts, steam rises vigorously. The texture is not too soft, with a crunchy bite. The soup has a perfect balance of salt with floating lard, making it surprisingly light and easy to drink. It's not heavy at all, making it just right for first-time Jiro-style eaters. The thick noodles have a chewy texture, and although there is only one slice, the chashu is extremely thick and flavorful, providing a satisfying bite. Also, the limited edition GOD toppings are amazing. With items like the Big Bang grilled chashu and Air's Rock Big Bang, I secretly look forward to seeing a competitive eater post a video about them someday. On this day, the weather suddenly turned rainy from the evening before, and it continued to rain all day. Despite that, the mission I had to complete was indoors, so no worries! But before getting down to business, I decided to visit a place that had caught my eye for years and recently relocated from Higashi-Muroran to Washibetsu. I had been avoiding it because I remembered that when it first opened, it mainly served Jiro-style ramen, which might be a bit too heavy for someone in their 50s like me... So, I finally made my way there with my sister and niece number 3. I ordered the "Chinese Ramen with White Soy Sauce and Extra Pork Fat" with a bang! My sister and niece each ordered the natural salt and special soy sauce versions of the Chinese ramen. The bowl is white, so it clashes a bit with the white soy sauce and pork fat, but I like the simple look. Let's dig in! Wait a minute!!! The umami of the animal ingredients, the subtle aroma of dried fish, the soft saltiness of the white soy sauce, the sweetness of the pork fat, the smooth slurp-worthy noodles, and the crisp bite all come together to create an incredibly delicious dish! The fluffy chicken chashu, the pork chashu cooked at low temperatures with great seasoning – you can tell they put a lot of care into their work. My sister and niece also seemed to enjoy their bowls, and hearing their positive feedback, I was even more satisfied. I will definitely come back here again! Thank you for the meal.

I tried the Jiro-style soy sauce ramen and it was delicious! I definitely want to eat it again. The chashu was also really tasty. It's a rare find in Muroran. However, the BGM inside the restaurant was too loud and annoying. I wish they could lower it to a more pleasant level.

Ramen Jiro, of course. I tried various inspired versions from the main store and other branches and here are my thoughts. I ordered the small GOD size without specifying my preferences and it was a refreshing type of ramen. It may not meet the expectations of a typical Jiro-style ramen, but it is still delicious. The noodles were excellent! You can order a medium or larger size with extra toppings. The broth was unexpectedly strong with a hint of bonito flavor, which may be divisive among customers. The chashu pork for both types of ramen was delicious and complemented the dish well. This ramen is a rare find in Muroran and definitely worth trying, even though tastes may vary. I haven't tried the Chinese-style tonkotsu ramen yet, but I have high hopes for it!

In Tokyo, there are a wide variety of ramen options available, including famous ramen shops from all over the country. However, in the Muroran area of Hokkaido where I live, there have been no Jiro-style ramen shops until now. I discovered "Shodai Koki" in Takasago-cho, Muroran on June 16, 2021 (it was relocated from Nakajima-cho). It used to be a cafe near Muroran National College of Technology. The menu offers both Jiro-style ramen and Chinese soba, catering to both preferences. It had been a while since I had Jiro-style ramen, so I played it safe and ordered a small size with soy sauce flavor. The portion was still quite large! The strategy of offering both Jiro-style and regular ramen is a great idea, as Jiro-style ramen tends to be more suitable for hearty eaters, while the Chinese soba option widens the customer base to include women and couples. This way, they can attract repeat customers with the quality of both types of ramen. Personally, I found Jiro-style ramen a bit challenging due to my age, so I'm considering trying the rich soy sauce flavor next time! 😊

I visited a ramen shop on Student Street in Muroran during a business trip. One of the purposes of my visit was to enjoy Jiro-style ramen while on the go. Since I finished work late, I arrived just before closing time and ordered the regular size Jiro-style ramen. I didn't want to drive back to Sapporo feeling too full and sleepy. The noodles were thick like those used in tsukemen, with a good chewy texture and a wheaty flavor. The pork was a bit dry but flavorful. The vegetables were on the softer side, with about 80% bean sprouts and 20% cabbage. The soup was light but packed a punch, lacking a strong dashi or soy sauce flavor, giving it a junk-food vibe. The garlic seemed to be grated roughly, not finely chopped. Perhaps this shop is popular among students due to its proximity to a university. Adding more vegetables would make it quite a filling meal, which would be great for cash-strapped students. Personally, I would prefer a stronger pork broth flavor and more sharpness in the seasoning. To the female staff member, please pay attention to your hair when handling food products.
