Head to 'Pepe Ramen' in Kita-ku, Osaka. It is located on the 2nd floor of NIPPO Kitashinchi Building, about 190m south from JR Tozai Line Kitashinchi Station exit 11-21. Upon arriving at the shop, you will be greeted by a bar-like door. Inside, you will find a tight space with unique miscellaneous items scattered around, and 6 counter seats. I visited on a Wednesday night, 30 minutes after opening, with no other customers. The restaurant is located in a drinking district, so it may get busier later in the evening. On the table, you will find garlic soy sauce, yuzu shichimi, and mixed pepper for flavor enhancement. Water is self-service. I ordered the 'Pepe Shio DX' for 1,100 yen. You can choose the noodle portion size from 80g, 120g, or 160g for the same price, but if you don't specify, it will be 120g. The chicken clear broth with lots of chicken oil floating on top is made using not only chicken bones but also whole chicken, along with dashi from Rausu kombu and shiitake mushrooms, and the umami of clams (dried scallops?). The salt seasoning is mixed in, creating a clear yet robust soup. The saltiness is not overpowering, allowing you to enjoy the umami without hesitation. The firm, thin straight noodles have a nice crunch, which I personally like. They are low in water content, so it's inevitable that the sweet spot is short, making it ideal to slurp them up quickly. The skewers include chicken meatballs with ginger-infused cartilage and pork belly wrapped in white leeks with a smoky oil finish. The thinly sliced chashu, well-cooked without being dry, has a subtle soy sauce aroma that stands out even more in the salt soup. Other toppings include a creamy yolk marinated egg, menma, and garnished green onions. This high-quality bowl is too good to be the last drink of the night. Thank you for the treat!
