This place used to be a yakitori restaurant since I was a child, but it closed down at some point. It then became a curry restaurant, or sometimes it was just left vacant for a few years. However, when "彩哲 isato" opened, it became a thriving restaurant with a constant flow of customers. My wife noticed this and had been wanting to try it for a few years. However, both my wife and I... actually don't like waiting in line, so we had never tried it before. But this time, with my wife working until 1 pm and our son away for a school event, we decided to visit after 1 pm... And luckily, there were exactly 2 seats available, so we were seated right away. The aroma of the seafood-based soup was delightful! We decided to order the "Dried Mackerel Salt Ramen" for me and the "Soy Sauce Ramen" for my wife. The prices were actually 100 yen more expensive than what was listed on Tabelog. The Dried Mackerel Salt Ramen was a first for me... The soup, with its seafood-based salt flavor, was light yet had depth. The extra fat, maybe back fat, was plentiful and just to my liking. The flat noodles had a nice chew to them and were delicious! And the dried mackerel and dried mochi, also a first for me, were delightful. The dried mackerel easily fell apart and tasted great when chewed... It was prepared well with no bones at all. The dried mochi was not too hard or too soft, and it blended well with the soup's flavor. The thin slices of chashu were not too flavorful, allowing the soup to enhance their taste. The light and well-rounded seafood-based salt ramen was easy to eat, and I finished it with pleasure! Thank you for the meal. When I asked my wife about the Soy Sauce Ramen, she said the soup, based on chicken bones, was light and delicious. Her impressions of the flat noodles and chashu were similar to mine. However, she mentioned that there was a bit too much fat in it. Looking at the photo of the Soy Sauce Ramen, there seemed to be some color in the fat... Perhaps it was chicken fat. My wife usually likes back fat in ramen, but for some reason, she doesn't like chicken fat. Well, that's just personal preference, so it can't be helped. My wife herself said she wanted to go back again, so we will definitely revisit when we can get in without waiting. Today, we had a late lunch, so we didn't order the "kaedama," but I am personally very interested in the idea of "changing noodles"...
