I visited the dining hall Masafuku that I was curious about for a solo lunch. The Daiku-danchi where this shop is located is a bit isolated, as it is away from the center and has two entrances to the housing complex. I have been there a few times in the past, even though I have acquaintances living there. Around 12 o'clock, there were three customers, probably neighbors. I originally planned to have the duck seiro, but since I had bread for breakfast, I wanted rice as well. I ended up ordering the pork bowl (regular) for 840 yen and the mori soba for 600 yen, with a little less rice. There was a sign in the store saying, "We use the finest flour for our soba, and our sauce is made with traditional soy sauce and authentic bonito flakes, creating a truly blissful taste." As I sat at the counter, I watched the process of making the food. First, they sliced a chunk of pork loin, then added sauce to a frying pan and cooked the meat. The pork bowl arrived first! The shine of the meat caught my eye - the thick pork loin was easy to eat as the knife went through it, and the not overly sweet, well-cooked sauce coated it nicely. The fat from the meat was distributed evenly, bringing out the goodness of the fried pork bowl. The freshly cooked rice was delicious, and the simmered warabi fern on the side dish had a rich dashi flavor. When I had eaten about a third of the meal, the mori soba arrived. It was quite a generous portion (sweating). The thin-cut 80% buckwheat soba had a good texture, moist but not overly so, and the noodles were long! They were not standing up straight, but they seemed to be as long as my outstretched arm. The broth, made with bonito flakes, had a good flavor - not too sweet or too salty, just right. If this place were closer to my neighborhood, I might come here for regular meals! The soba broth seemed to be made with a medium-rich boiling broth (based on how it tasted, but not confirmed). I had a meal at this locally loved shop run by a couple who work together seamlessly. Thank you for the meal!
