****April 27, 2010 Dinner Review****
For dinner, I had pork shabu-shabu. Pork belly with tofu, green onions, enoki mushrooms, and mizuna, and lettuce. The hot pot had sliced garlic and red chili peppers in hot water. The sauce was a clear broth, more like a soup. I added plenty of green onions to the broth served in a small bowl and wrapped the shabu-shabu meat around them. The unique sweetness of the pork fat combined with the broth's umami was delicious. Shabu-shabu the lettuce in the soup with floating pork fat was also tasty. I discovered a new charm of lettuce - it retains its crunchy texture even when cooked. The meal ended with ramen, and by that time, the soup had a nice richness from the pork fat. Adding lots of green onions to the ramen made it a delightful meal. It was a happy day.
****April 27, 2010 Lunch Review****
I couldn't resist trying the sushi at "Fujika" after being impressed by the meat and garlic rice yesterday. The sushi counter had a variety of delicious fish, so I decided to have lunch there. Tomato salad and tempura white shrimp were served as appetizers. The tomato salad, served with pickled ginger, was surprisingly delicious when the ginger was placed on the tomato. The sushi I had was salmon, which was fresh king salmon. The beautifully striped flesh with a hint of shimmering fat was a sight to behold. The salmon melted in the mouth, perfectly balanced between fat and flesh, with a light and savory taste. The chef's cooking skills were outstanding, and I look forward to trying more delicious dishes.
****April 26, 2010 Dinner Review****
During a business trip to Chitose, I visited the restaurant "Fujika" for dinner. The restaurant has a counter and tables, with private rooms for larger parties. I opted for the counter seating, where I could watch the open kitchen. Although known for sushi and seafood dishes, they also had a recommendation for meat. I tried the "Beef Ribeye Grilled on a Net," which was shown to me in its raw state, a beautiful piece of meat. It was lightly seared rare, and served with garlic soy sauce and rock salt. The aroma of the charcoal grilling was appetizing, and the meat's fat melted in the mouth with a sweet taste. The fat disappeared smoothly after eating, not overwhelming. The garlic soy sauce paired perfectly with the meat, creating an irresistible flavor. For the finale, I had garlic rice with the meat fat, finely chopped garlic, and green onions, which was not on the menu but recommended by the chef. It was a satisfying meal.
