I had a large serving of forest soba. The noodles were plentiful and filling, served in a bowl shaped like a mortar. The broth was rich and flavorful, with a good texture and taste. The restaurant, renovated from a house, had a relaxed atmosphere with a shoe-free policy.

I stopped by for lunch while passing through Furano City without going through the city center. Despite it being a weekday, the restaurant was full and the parking lot was packed, showing its popularity. I enjoyed delicious soba noodles in a relaxed atmosphere. It was so tasty that I would like to visit again if I am nearby.

Furano City in the southern part is a mountainous area, where a small authentic soba restaurant renovated from an old folk house is located. The female owner, who trained at the famous restaurant "Date O" and was looking for a property to start her own business, happened to come across this old folk house that appeared like a boat on the river and fell in love with the nature of Furano, deciding to open her restaurant here. The motto here is "freshly ground, freshly made, freshly boiled" soba, using a blend of soba from Ibaraki prefecture, Kurosato, and others. Probably mainly using traditional varieties. Mori soba (soba served with dipping sauce) for 700 yen was served in a long and deep red-purple sieve, just like at "Date O". The soba itself was similar in color and shape, but the taste and texture were slightly different. It seems to be a mix of 20% wheat and 80% soba. The soba had a strong elasticity and chewiness, with a rich sweetness spreading in the mouth rather than a strong aroma when chewed. The broth was thick and flavorful with a strong, spicy kick. It's best to enjoy the soba by dipping it halfway into the broth. The condiments were delicate and well-balanced. In conclusion, it was a satisfying authentic soba experience. While inheriting the refined atmosphere and potential of "Date O", it also incorporated the rustic charm and delicious water of Furano. In the Furano area, known as the "navel of Hokkaido", there are no restaurants offering soba in the style of the Ondatemura school, so this restaurant is likely to make a significant impact in meeting that demand.

Visited on a certain day in May 2021 in Kami-Furano to have coffee beans roasted and bought bread at a bakery that my wife wanted to visit. We then decided to drive to a famous cherry blossom spot in Yamabe to see if the cherry blossoms were in bloom, but unfortunately, due to the cold weather, the buds were still closed. So, we decided to head back. Oh, we haven't had lunch yet! Where should we go? My wife mentioned that she saw a soba restaurant near the town of Yamabe earlier. So, we decided to go there. When we arrived at around 1 pm, there were only two cars in the parking lot. We quickly looked at the menu. I initially thought of just having soba, but to support the restaurant, I decided to order the lunch set, while my wife and son ordered soba and assorted tempura. After about 15 minutes, the appetizers arrived, including fern and udo nut salad, cheese miso-marinated tuna, duck roast, simmered squid and daikon, among others. The tempura came next, with shrimp tempura, asparagus, bracken, and onions. Finally, the soba arrived, and it was beautifully cut and had a rich aroma. The soba had a good texture and a refreshing taste. The dipping sauce was a bit too spicy for my liking, but overall, it was a satisfying meal. The portion sizes were not large, but the variety of dishes made up for it. It was a delicious lunch.

"Soba Mori: 700 yen. This is a hand-made soba restaurant. I visited in the early afternoon and there were no other customers. The soba noodles are cut very thin, giving them a light texture. I personally prefer them to be a bit firmer. I will try the warm noodles next time."

I went during lunchtime on the weekend. By the time it was past 12 o'clock, the parking lot was full, and there were waiting customers due to the bustling crowd. (The waiting time was generally around 5-10 minutes before getting a table.) The restaurant is located a bit off the main road, so it might be a little hard to find without a sign. Inside the restaurant, there are only table seats with two tables for 2 people, one for 4 people, and one for 6 people. I ordered the Chicken and Burdock Soba and the Nameko Mushroom and Grated Radish Soba. The Soba served in a bamboo basket had thin noodles with a firm texture, making it very easy to eat. The warm soba, on the other hand, lacked the same chewiness as the soba in the basket, which some young people found a bit unsatisfying, but they were delighted by the incredibly delicious Nameko mushrooms. Notably, the dipping sauce was exceptionally delicious, whether hot or cold, and we both finished it without worrying about the salt content. It's a restaurant that makes you want to go back for more.

When I went to Furano, I checked out the restaurant on Tabelog and decided to give it a try. It was quite crowded around lunchtime, and parking spaces were limited, so if it's full, you might have to give up. The restaurant had a homey feel, and the prices were a bit high. I had the pork belly simmered soba, which was around 1600-1800 yen, and my husband had the plum grated soba. Despite the hot weather, the Dyson fan provided a nice breeze. The selection of novels was impressive, with recent titles and even works by a Kushiro author who won the Naoki Prize and had a movie adaptation. It took a bit of time due to the crowd, but I enjoyed reading the novel thoroughly and coincidentally, our food arrived just as I finished. The pork belly was tender and delicious, and the soba was also tasty. Just like the name of the restaurant, the scent of the soba was delightful. I would definitely want to eat here again when I visit Furano.

Located in the outskirts of Furano, a town known as the "belly button" of central Hokkaido, this soba restaurant is a hidden gem. With only about 20 buildings along the national highway, it is mostly towards the southern part of Furano. The restaurant is a converted residential house with a dedicated space for soba-making, dining, and a kitchen, while the living quarters are tucked away in the back. The spacious dining area is well-equipped with COVID-19 prevention measures, and you can even see the kitchen from your seat, which adds to the charm of the place. The soba noodles, made by the husband, are a beautiful shade of green and have a perfect texture that allows the flavor to shine through. The broth, prepared by the wife, is rich and complements the noodles perfectly. The garnishes, such as wasabi and green onions, add a delicate touch to the dish. Enjoying the chewy texture of the soba noodles, combined with the flavorful broth and the subtle heat of the garnishes, makes for a delightful dining experience. Overall, this restaurant is a must-visit for soba lovers, despite its remote location.

I ordered two servings of cold clam soba noodles with extra noodles for a total of 2,400 yen using Furano meal vouchers. The noodles were served freshly boiled in two separate portions, allowing me to enjoy the hand-made soba. The service by the owner and the cooking by the chef were unexpectedly good. The broth was also to my liking - light and delicious. The clams were especially large and tasty. For those visiting Hokkaido, I recommend trying the seasonal menu with clams.

I found a sign for a hand-cut stone mill soba restaurant and decided to try it out. The owner trained at a Michelin-starred restaurant before opening this place just 3 days ago. The soba was delicious with a great flavor and texture, made with a lot of care using high-quality ingredients like soba noodles, soy sauce, and dashi broth. I had grated soba and my wife had duck soba, and the total came to just over 2,000 yen. We were both very satisfied with the meal. Although it's far from where I live, I would love to come back if I have the chance.
