Visited "Chuka Soba Mutahiro Osaka Sakai Higashi Branch" in Sakai City, Osaka Prefecture. Around the station, nearby coin parking costs around 400-600 yen for 50 minutes. Visited close to closing time on a Saturday at 9:30 PM, with a queue of 3 people outside. Waited for about 5 minutes before entering and selected the "Special Niboshi Ramen" for 1,050 yen from the ticket machine. If you have a child up to first grade, they can have a free children's ramen, which is a generous service. The bright interior has an L-shaped counter with 10 seats and one 4-person table, with colorful lanterns hanging. Each person has their own self-serve water pot on the table, and the service is brisk and polite. The condiments on the table include vinegar, black pepper, shichimi, and ramen sauce. If you ask, they will provide ginger and yuzu pepper for chicken ramen. The soup has a bold bitterness from the niboshi and a subtle acidity, possibly from the chicken broth. The back fat adds a refreshing touch without being too greasy, resulting in a refreshing soup overall. The thick curly noodles have a firm chewiness and a smooth wheat flavor. The unexpected ingredient of a wonton (Ittan Momen) without filling adds a playful touch to the dish, with a cute mascot wearing a straw hat on the sign. Toppings include pork shoulder loin, chicken breast, flavored egg, bamboo shoots, seaweed, Mitsuba, chopped onions, and narutomaki, making for a colorful bowl. The chopped onions and seaweed add a great aroma to the soup, complementing the back fat niboshi well. It was a delicious meal!
