Although I was curious about the reissued ramen, I decided to go with the classic soy sauce flavor. The taste was sharp and distinct, yet had a gentle roundness to it. It was quite to my liking. After a long time, I visited a famous restaurant in Settsu City. The previous owner here trained in noodle making at Fujiwara Seimen in Asahikawa over 40 years ago. His mentor at the time was the owner of the famous "Nanashi" restaurant (later founded Showa Ramen Fukuya). About 10 years ago, when I came to this restaurant, I heard this story and the following month I went to Sapporo to deliver a message from the previous owner to the then owner of Fukuya. Time flies, it's been 10 years already. Now the restaurant is run by the second generation. The atmosphere inside the restaurant remains the same. I ordered the "reprint version soy sauce ramen." It has a unique mature soy sauce flavor. The chewy noodles are also good! The taste is different from the current soy sauce ramen, it used to be standard back in the day, but now it feels quite distinctive. I also talked a little with the second generation about the incident from 10 years ago. Even just going around eating ramen, there are many interactions and encounters with people, accumulating a history.

I came to Suita on my day off and found this ramen shop straight ahead from the south exit of Hankyu Masumi Station. It only takes about a minute to walk there. The shop has a traditional feel with its door wide open. Inside, there is an L-shaped counter that can seat about seven people on the left side, and a hand washing area and water dispenser on the right side. After placing my order with the owner, I waited a bit and then my bowl of ramen arrived. The soup is a blend of tonkotsu and seafood soy sauce, with a black color and a layer of lard on top. It has a rich flavor with a good balance of saltiness, light acidity, and sweetness. The curly medium-thick noodles have a nice texture that pairs well with the soup. The ramen shop I wanted to visit was under renovation, so I went to this place on the opposite side of the station. It had only a counter with the chef behind it. You have to get your own water. It had that classic ramen shop vibe. They had soy sauce, salt, and miso flavors, but I went with the standard soy sauce. I wanted some meat, so I ordered the chashu ramen. Ramen is a personal preference, and for me, it was just average. I think the rice was 200 yen, which seemed a bit expensive.

Visited for the first time on a Sunday evening in March 2023. The restaurant, located in Settsu City, Osaka Prefecture, is called "Azarashi" in Ainu language, and it was established in 1970. Upon arrival at 18:10, I found only one customer already seated at the counter near the entrance. The menu offered the usual soy sauce and salt ramen, as well as a limited edition "reprint" version from the establishment era, which was said to have a stronger soy sauce and oil flavor. Feeling intrigued, I ordered the ⭐Reprint Soy Sauce Ramen for ¥950. As expected of Asahikawa ramen, the hot broth was covered with lard to maintain its heat. The complex broth had a rich umami flavor from a mix of ingredients like pork bones, dried fish, and kelp. The combination of soy sauce and lard added depth and richness to the broth, providing both satisfying and nuanced flavors. The homemade noodles were about 2mm thick, made with whole wheat flour and high hydration, giving them a soft yet chewy texture. The noodles soaked up the broth beautifully, creating a harmonious balance of flavors with each slurp. The toppings included tender pork chashu, bamboo shoots, and green onions, all adding to the overall deliciousness of the dish. The chashu paired perfectly with the broth, and the green onions provided a nice touch. I found myself enjoying the ramen so much that I wondered why I hadn't visited this place sooner.

Head to Tokkari Honten in Settsu City, Osaka Prefecture. It's right in front of the Minami-guchi (south exit) of Hankyu Kyoto Line's Shojaku Station. The interior has 7 L-shaped counter seats. Self-serve water with only GS white Kosho on the table. Visited on a Sunday at 6:30 PM with no other customers. Ordered the "Reprint Soy Sauce" limited to 20 servings per day for 950 yen, with a taste from 1970. The soup has a fresh, savory aroma like when meat is grilled (burnt soy sauce?), with a deep acidity that leaves an impression. Despite its pitch-black appearance, it doesn't have the prickly saltiness like "black" ramen. The slightly slimy lard covering the surface adds to the enjoyable drinking experience, creating a truly delicious soup. The slightly shiny, wavy medium noodles bathed in lard have a smooth slurping sensation, good elasticity, and a chewy texture that pairs perfectly with the soup. Toppings include simple yet hearty char siu slices with a firm texture, crunchy bamboo shoots, and white onions. Those who had the chance to eat this ramen 50 years ago must have been truly happy. A rare Asahikawa ramen shop in Osaka. By the way, when I lived in Tokyo, I went to an Asahikawa ramen shop several times, and it was a miso ramen shop, so I had the image that Asahikawa ramen = miso, but it seems that soy sauce is more mainstream. The soup is a dark brown color, but when you take a sip, it is surprisingly smooth and mellow. The umami of pork and seafood broth and the aroma of lard match well and are very delicious. The noodles are medium-thick curly noodles with low water content, which go well with the soup. The toppings are char siu, white negi, and menma. The char siu is thinly sliced and tender and moist. It was delicious. I will come back again.

In Osaka, can you eat Hokkaido ramen? As a Hokkaido native, I haven't been able to go back home much due to COVID-19, and I've found that Osaka's ramen is often chicken-based or with low-temperature cooked chashu, which has left me feeling a bit lonely. This Tokkari ramen had a strong salt-based flavor, and it paired perfectly with rice (with sweet pickles on the side!). It was a black miso ramen that you don't see often in Osaka, and it warmed me up and was incredibly delicious.

I visited the Asahikawa Ramen specialty store Tokkari Main Store near Masugake Station in Settsu City. I arrived just after lunchtime and luckily there was no wait. The menu includes soy sauce ramen, salt ramen, miso ramen, and a limited edition 1970s-style ramen (only 20 servings per day) in soy sauce and salt flavors. I tried the limited edition Asahikawa soy sauce ramen. The black soup is the standout feature of this bowl. The first bite reveals the strong soy sauce and saltiness as expected from the appearance. It truly captures the taste of the Showa era. However, after a few more bites, the sweet richness of the pork bone, the flavor and richness of seafood start to come through. Sprinkling white pepper enhances these flavors, making it delicious. The richness of lard also supports the taste well. The medium-thick curly noodles have a firm texture that complements the strong soup. The bamboo shoots blend well with the soup, and the generous amount of green onions adds a refreshing touch. It was a deeply flavorful bowl, thank you for the meal.

I went to Tokkari. The shop was a bit small and there was only one staff member. This time, I had miso ramen. The spicy miso on top really enhanced the flavor and it was delicious. The taste was rich and satisfying. The smell of ramen also wafts outside the shop, so whenever I pass by, I always feel like eating it.

Delicious! If you like rich soy sauce ramen, this is a must-try. The chashu is cooked just right, not too raw, which I really like. I've been to various famous ramen shops in Osaka recently, but this one is my favorite. I will definitely go again. I have visited almost all the famous soy sauce ramen shops in western Japan, but this place ranks high for me among the Kansai area. I want to fully enjoy Kansai's soy sauce ramen.

I ordered the Soy Sauce Chashu Ramen (900 yen). The soy sauce flavor is prominent in the soup, but I also detected some strange taste, like a hint of wateriness. Maybe it's just me. Other than that faint strange taste, the ramen is delicious. The green onions go well with it.

Another reason is that I have a reservation at a favorite restaurant with my wife tonight, so I want to enjoy delicious food and drinks in the best condition! (laughs) However, I was too hungry, so I made a second visit to Tokkari Honpo, located right near Shoujaku Station. This is the only store they have, where you can enjoy Asahikawa ramen from Hokkaido. This time, I had the limited 20 servings of the reissued soy sauce ramen, along with rice. It cost 1,050 yen for a holiday lunch for one person. The soup was pitch black, with a slightly tangy and rich flavor. It had a pork bone-based fish sauce soy sauce flavor with plenty of oil. It goes well with rice. I prefer the normal soy sauce ramen I had last time. The medium-thick curly noodles had a satisfying texture. It was a simple ramen, but the kind of taste that makes you want to eat it again. When I arrived, there were no other customers. Later, three groups came in, and the counter was almost full. It's a small shop with only a counter. The owner was working alone. I wonder if there will be someone to inherit this taste in the future? I hope it doesn't disappear. The menma has a rich soy sauce flavor and a great crunch! The noodles are chewy and when mixed with the soup, it's irresistible! Delicious! Even though it's rich in fat, the soy sauce and green onions prevent it from feeling heavy. Oh, I really like this soy sauce ramen.

It's my first visit to Tokkari Honten near Shojaku Station. It is a specialty shop for Asahikawa Ramen. I arrived at 11:25. The shop was already open with four customers ahead of me. There were still seats available. The ramen arrived at 11:40. I ordered the Shoyu Chashu Ramen for 850 yen. It might be my first time trying Asahikawa Ramen. Let's dig in. The appearance is on the black side, but the sweetness and acidity are subtle, creating a unique and delicious taste. The medium-thick noodles are chewy and go well with the soup. Slurping the noodles coated in the soup brings a feeling of happiness. The chashu is well-seasoned, giving a nostalgic taste. The generous amount of green onions adds a nice flavor variation. "I felt like having a bowl of soy sauce ramen from a long-established shop, so I parked my car at a nearby coin parking lot and arrived at the shop around 11:40, just after it opened. I saw someone who had been walking ahead of me get drawn into the shop, which made me chuckle. It's funny how that happens sometimes, and it creates a sense of familiarity when you have the same ramen shop in mind. I sat down at the counter. This is my second review of the shop, but I must have been here about 10 times already. I usually go for the reissued soy sauce ramen, so it's been a while since I had the regular soy sauce one. The noodles are lifted with a flat strainer. Watching the shop owner handle the noodles is satisfying. I once heard someone say that there are no bad shops that use a flat strainer. The bowl arrived shortly after. It had a simple appearance with two slices of medium-thick chashu, menma, and white negi. The soup had a jet-black color with a noticeable amount of oil. Let's dig in! First, the soup... It has a deep black color like Toyama Black, but it's not as soy sauce-flavored as it looks. It's rich with a good amount of lard, and the savory aroma of soy sauce shines through. The clear pork bone and seafood broth is nostalgically comforting and delicious. The style is Asahikawa ramen. Ramen from colder regions tends to have a sharp soy sauce flavor and a generous amount of oil. The noodles paired with it were medium-thick straight noodles. They were lightly colored with soy sauce and had a chewy and delicious texture. The chashu was thinly sliced, but you could still taste the richness of the meat. It was moist and tender, not too heavy even when eaten with the noodles. It was a tasty bowl with a good aftertaste. I might try the regular salt flavor next time."
