This is Otaru. Am I the only one who feels like I have to eat sushi when I come to Otaru? By the way, when you go to a sushi restaurant, I sometimes wonder what the staff are thinking when they hear "please be friendly" when paying. Nowadays, it is used a lot so I think many craftsmen don't mind, but I remember researching the meaning and origin of it once. I have never used it even when paying, but I remember being made a funny face when I asked for it back then. I started researching the meaning and origin, but sometimes I end up researching completely unrelated things. Even now, I can spend 2-3 hours doing that, but back when I didn't have a computer as a student, I used to look up various words in the dictionary endlessly instead of studying, and I miss those days.
Going back to the topic, I also want to try visiting yakiniku restaurants in Otaru, but I feel like I can't be satisfied until I have visited all the sushi restaurants first. In Otaru, there are only two sushi restaurants left to visit, which are Machi no Sushi Honten and Yamato-ya. There are only about 40 sushi restaurants in Otaru, so I have to visit more than double that number to complete a full tour. I also want to visit all the sushi restaurants in the Sapporo area, including those in the city. Nihonbashi and Masuzushi Honten were good, but Shikama didn't suit my taste, and I was even more disappointed here. The heavy and dense shari that doesn't dissolve easily, the slight acidity and lack of umami make the sushi taste out of place. I don't know how many chefs there are, but even with a team of three sushi chefs, the shari feels almost the same regardless of who is making it. The tuna has the deliciousness of fresh bluefin tuna, without any sinew and with a smooth texture, but the state of the shari still has a negative effect. What is this rough seasoning on the ikura... etc.
