お猿と狸
In the Niyon district, there is a small izakaya called "Saito~"♪ Oh, that bald guy who used to say "Pe!" is no longer on the screen. I wonder if the boom is over now? I kind of felt a strange closeness to that old man character, so I feel a bit lonely. Anyway, Saito~♪ The restaurant's slogan strangely piques an old man's interest. "A small izakaya where you can eat and drink as you like!" The owner, who gained experience at a high-class Japanese restaurant, is committed to handmade dishes that stimulate both visual and taste senses! We are striving for cost performance every day! We have a wide variety of food and drink items! It's located on the second floor of a building that is a bit tucked away! It may be a bit hard to find, so please look for it!! The Maibasuketto store is a landmark! Well, well. Experience at a high-class Japanese restaurant, huh. Let's see. It's located on a major street in front of Hokudai, so I thought I could find it right away, but the building is a bit hidden so you can't see it until you get closer. I climb the stairs twice, open the automatic door, and I'm welcomed. There's a counter right in front of me, and I'm immediately seated. First things first, a draft beer for the old man. The price is reasonable, and the glass has a nice curve. The old man feels welcome. Immediately, three small dishes are served as a complimentary appetizer in a set container, here you go. They seem to understand the feelings of a drinker well. My expectations are rising. As I carefully look at the menu, the recommended dish is written on the wall, so let's have the fried flounder. It says it's a special price, and depending on the size, it does seem like a good deal. Moving on to the alcohol, did the flounder just swim over to me? It's been fried beautifully from head to tail, light, crispy, and delicious! It's not a large flounder, but that makes it even more delicious. It remains crispy and crunchy until the end, so delicious! Goes well with the alcohol^^ The stewed sinew is made with bonito broth, a taste from a restaurant where the owner showed off his skills in Nihonbashi, Tokyo. It's a dish that's not often found in Hokkaido. Even in Shinbashi, this taste must stand out a bit. Hmm, gulp♪ It's written on the menu as their specialty, so I think I'll try the tsukune with salt. Oh, they've also put in a lot of effort with the cartilage, haven't they? A little surprise and solidly delicious dishes. They are all delicious, and I keep ordering more drinks♪ The only thing that's a bit lonely is that the owner is mostly stuck in the kitchen. If you want to attract picky old men and women to a small izakaya like this, you need to have banter with the owner. You should be able to create a more enjoyable atmosphere. I enjoyed the solid flavors, so the key will be how to create the character and culture of the restaurant. There are many excellent shops in Kita-ku, so the range of choices is expanding, which is a pleasant dilemma. It seems they also have regular customers, and they host group parties for women, so I hope this restaurant will do well. Looking forward to it, pe! Laughing ===========
