I bought a potato bread that I love at a liquor shop in Hokuto City. It was incredibly delicious, and I later found out that the water used in the preparation is all made with the water from Shirakuchihama natural ma-kombu. This kombu is so precious that it is now called a phantom kombu. The husband's family's livelihood is as a kombu fisherman. By allowing it to mature in storage for several years, the seaweed smell is removed, and it is made to naturally blend in as bread-making water, resulting in a chewy texture and a rich umami flavor. It's the best! I wish I could buy it more easily, but it's far away. It's also sold online, but when I look, it's always SOLD OUT. If you find it, buy it! It's a bread that I definitely want to eat again. Thank you for the meal! ♡

Located on a quiet town road with good car access and parking for 3 cars in front of the store. A handmade shop attached to a residential house. They use homemade yeast and kombu water for kneading bread dough. They also use kombu water when cooking brown rice, which has great effects. I was very interested and decided to try their bread. I tried the Campanile - Black Sesame - Half (¥260). It was not crispy, but rather soft and flexible. The dough was rich in flavor and the sesame flavor was delicious. It was good as it is, and even better when toasted. I also tried the Campanile - Walnut and Dried Fruit - Half (¥290). This one had a firmer texture when baked. It was filled generously with dried fruits, including raisins, and was enjoyable in terms of taste and texture. It was delicious on its own. I also tried the Sake Kasu Yeast Pound Cake (¥200). Sake kasu = rice koji + yeast + lactic acid bacteria, so it's bound to be delicious... and it was. It had a subtle sweet sake flavor and a natural aroma. All the items were a hit. They are doing a great job.

I was finally able to visit the store. They make bread with natural yeast using water infused with real kelp. It was delicious! ^_^
