For lunch on this day, I went to "Jinsei Yumeji Tokumen" in Yotsubashi, Osaka. This restaurant is still open and operating despite the challenges of the pandemic, so I wanted to show my support by having lunch there. I ordered the "Mix Noodles Large," which comes with 230g of noodles. The noodles in this dish were thick and chewy. On top of the noodles, there were thinly sliced pork loin chashu, chicken chashu, and tuna or mackerel flakes, along with bamboo shoots, chopped seaweed, finely chopped green onions, and a half-cooked egg yolk in the center. The sauce was a soy-based sauce with a hint of seafood flavor. I mixed everything together thoroughly before eating, and the combination of the chewy noodles and flavorful toppings was absolutely delicious. I remember that this dish used to come with an extra serving of rice, but it seems like that option is no longer available. Even without the extra rice, this dish is still amazing.

I ordered the special mixed noodles (with everything, free extra noodles) for 1250 yen plus a pork bowl for 400 yen. The special mixed noodles are topped with thinly sliced ​​char siu in a circular pattern, as well as chicken char siu, chopped pork char siu, menma, chopped seaweed, green onions, and egg yolk for a beautiful presentation. Scoop up the medium-thick homemade noodles from the bottom, mix well, add dried fish vinegar and chili oil to taste. Mix everything well and take a bite... the thinly sliced char siu and noodles are well coated with the sauce, with the spiciness of the chili oil and the tanginess of the dried fish vinegar adding accents to the flavor, making it delicious. Headed to "Jinsei Yumeji Tokumen" in Chuo-ku, Osaka. It is located about 300m northwest from exit 4 of the Tanimachi Yonchome Station on the Osaka Metro Tanimachi Line. There are a few coin parking lots around charging around 300 yen for 30 minutes. Visited on a Wednesday at 7:30 pm with 3 other customers present. The interior has a small L-shaped counter with seating for about 6-8 people. The owner runs the shop alone. Based on their official Twitter account, evening hours can be irregular due to ingredient shortages or the owner's schedule, so it's essential to check in advance if visiting at night. The basic noodle menu includes Chinese soba (light or rich), fish and shellfish salt soba, mixed soba, and Shimacho mixed soba. I selected the "Chinese soba" for 850 yen from the ticket vending machine and requested the light soy sauce flavoring. The soup, made with soft water to bring out the potential of dried bonito and kelp, has a rich umami taste that seems like it would significantly increase the cost if made without chemical seasonings. However, the combination of rich dried bonito and light soy sauce results in a slightly salty taste that somewhat spoils the excellent broth. The noodles, slightly high in water content, are medium-thin straight noodles with a chewy texture. Although they support the flavor with whole wheat, personally, I prefer the rich wheat flavor of the firm, crunchy, low-water noodles that are a staple of niboshi ramen. Toppings include tender chicken breast, ham-like pork shoulder loin, half-boiled egg with a moist texture, slightly crunchy menma, and a little bit of green onion as a garnish. You can choose between light soy sauce or dark soy sauce for the soup. The manager recommended the light soy sauce as it brings out the flavor of the broth better, so I chose that. The presentation of the ramen was beautiful, almost like French cuisine. The soup was clear and when I took a sip, it had a refined fish broth flavor. The noodles had a unique texture. This ramen might be more suited for those who prefer a light fish broth without strong flavors, rather than those who like a bold punch of fish or animal-based broth.

Today, I had a meeting in Osaka city for the second day in a row... It was supposed to end in the morning since it's Saturday, but it ended up going a bit longer and finished around 1:30 pm. I was a bit disappointed with the odd timing, so I wandered around looking for lunch. I remembered having ramen in this area yesterday for both lunch and dinner, so I decided to go for ramen again for lunch. I wanted something light this time, so I settled on a salt ramen. I found a good restaurant and walked there. It was hot today, so I figured I needed some salt in my system to replace the sweat. There were only three other customers when I arrived around 1:30 pm - a young person engrossed in their phone and a couple. I hesitated between the default fish and shellfish salt ramen for 900 yen and the cold ramen option, but eventually went with the default one. The ramen arrived in just 5 minutes since it was not crowded. The salt ramen had a nice aroma, with plenty of clams and a strong shellfish broth flavor. The noodles were thin and straight, which absorbed the soup well. The slices of rare chashu added a nice touch, not overpowering the salt flavor. The chicken was not too strong in taste but still satisfying to eat. I bet it would taste even better after a few drinks. I also noticed a light and dark soy sauce ramen on the menu that I want to try next time. Overall, it was a delicious meal.

At TanKou Chuka Soba at 6:30 pm, we were able to sit down right away with around 3 people. The noodles were delicious, the seasoned egg was excellent, and the hot broth was refreshing. The Chashu rice bowl had various cuts and types of Chashu, which is not common to see in a bowl.

It had a large piece of pork chashu, a small piece of chicken chashu, half a boiled egg, bamboo shoots, and green onions. The soup had a rich soy sauce color and was not too oily. Let's dig in! First, the soup... One sip and the umami flavor of the seafood broth hit me all at once. It was light and you could keep drinking it endlessly. It was deliciously gentle without any artificial seasoning. It wasn't as salty as it looked, so you could really enjoy the flavor of the broth. It seems like they have improved it since the last time I had it. It was incredibly delicious. The smooth homemade noodles paired perfectly with the soup. The chicken chashu was thick and lightly seasoned, while the pork chashu was made from loin. It was slightly rare, tender, and packed with meaty flavor. I was happy to see half a boiled egg included in the default set, and it was perfectly runny. It's cold so let's go eat ramen. I went to a winter ramen shop and was worried about where to put my coat and bag. There were chairs with backrests, but it's difficult with round chairs. I saw coat hangers in the interior photo, so I decided to go. I ordered the seafood salt ramen for 900 yen. The ramen arrived with lots of clams. The soup was mild and gentle, made with clam broth. The noodles were not thin, but rather medium-thin. The clams added flavor but were a bit cumbersome to eat. The chicken ham chashu was okay, but I would have preferred pork. There were tough menma, half-boiled egg, green onions, and a mini tomato. The tomato was a nice addition. Overall, I should have chosen soy sauce flavor. I have tried to go to Tokumen a few times but it was always closed. However, it was open on Friday night! When we entered, there were only two of us but it quickly filled up with more customers coming in. I ordered the Chuka Soba Tori Mayo Don Set for 1200 yen, and my husband ordered the Fish and Shellfish Salt Soba for 900 yen. The owner seemed to be handling everything alone, from cooking to cleaning, and it looked quite challenging. Our dishes arrived in about 10 minutes. The rich soy sauce soup had a sharp and delicious taste! The straight thin noodles paired well with the soup. It is now one of my top 3 favorite soy sauce soups I've ever had. The Tori Mayo Don had light chicken chashu with plenty of green onions that complemented each other well. It had a slightly spicy flavor with a hint of chili oil.
