Guessu
I happened to come across a oyster ramen shop while walking down the street, with very high ratings on Tabelog. The ordering system is done through a ticket machine outside the shop. The machine only accepts cash, so the person in front of me gave up on buying. There are three types of ramen available: oyster white broth which blends oyster with pork and chicken, oyster clear broth which uses only oyster broth, and tsukemen. I chose the oyster clear broth because I love oysters. I also added smoked egg. The interior of the shop is stylish, with a dark room featuring artful lighting similar to teamLab. A stylish ramen shop to eat in? Personally, not something I seek. Oyster clear broth ramen: 1,000 yen Smoked egg: 180 yen The soup has a strong oyster aroma and flavor. Finely chopped onions are scattered throughout. The menma is thin to be eaten together with the noodles. The noodles are chewy curly noodles. The chashu is thin. The wonton seems to be shrimp. There is one oyster. It has a smoked flavor. The additional smoked egg I ordered was a nice addition. At first, I had some resistance to the strong oyster flavor of the soup, wondering if it really fits in a ramen soup, but after a few bites, I started to appreciate the deliciousness. The onions are a key element, initially the freshly chopped bitterness is strong, but as time passes, the sharpness softens, bringing out sweetness and a refreshing taste that perfectly complements the rich soup. (The onions are great from the beginning, but it might be tricky to get it right) The noodles, being curly, mix well with the soup, and the menma, which is as thin as the noodles, can be eaten together, making it delicious. The chashu is also tender. The wonton skin is also tender. The oyster has a solid flavor, maybe slightly smoked. The smoked egg adds depth and a smoky aroma when slightly crushed. It is definitely worth adding. Oyster lovers will definitely love this delicious, new style of ramen. Next time, I will try the oyster white broth.
