I ordered the classic tsukemen at this restaurant. I wasn't expecting much, but it turned out to be really delicious! Both the soup and the noodles were very satisfying. The noodles were clear like hiyashi chuka, thin and easy to eat, with a nice firmness. The ingredients in the soup were delicious, and the sweet and thick soup had just the right amount of umami from the dried fish. A common issue with tsukemen is that you can get tired of the flavor due to the large portion, but with this tsukemen, you can enjoy flavor changes about three times. You can add chopped onions, sudachi, ginger, shichimi, and even warm up the cooled soup by adding a heated stone at the end, similar to "tsukemen philosophy." These thoughtful touches are uniquely Japanese. It was delicious, enjoyable, and a highly satisfying tsukemen experience. While tsukemen portions are usually large and challenging, this tsukemen had a modest portion size, filling you up just right at about 90% full.
