The soup is a pork bone-based, lard soy sauce flavor. The noodles are thick straight noodles. The toppings include pork belly chashu, cabbage, and bean sprouts. The rich and flavorful soup is made by emulsifying pork bone broth with plenty of lard, adding a thick soy sauce seasoning with sweetness from the lard, and bringing out the umami of the pork bone broth. It has a punchy, junky finish with plenty of garlic. The homemade noodles have a firm bounce and can be enjoyed heartily. The large and thick chashu is well-seasoned and delicious. You can adjust the amount of vegetables, lard, and garlic to your preference. I ordered everything in regular size. Additionally, you can enjoy flavor variations with the provided shichimi, black pepper, and fish powder.
