The Jun tonkotsu ramen had thin straight noodles and a soup with a low viscosity, lacking richness, without the typical thick and clingy texture of tonkotsu ramen. The Tomato tonkotsu ramen had medium-thick flat noodles and a soup base with tomato and spicy ingredients, but the tomato acidity was not noticeable, leaving only the spiciness dominating. It was neither like tonkotsu ramen nor tantanmen, giving off a somewhat mediocre impression.

Located in the competitive Fukushima area, it always attracts a lot of customers. I visited around 5 pm this time, so I was able to sit down without waiting. They have all-day service, which is great! The noodles are thin, and you can choose the firmness. Fukuoka ramen is known for its firm noodles, but for Kansai people, a bit softer may be just right. The soup is a bit less gamey compared to the authentic one. Maybe this suits Kansai people better? It's recommended to customize your ramen by adding red pickled ginger or mustard greens on the table. The slightly light soup is great for customization. If you order extra noodles, they lend you a magical seasoning to enhance the flavor, so adding this is also good. It's also great as a finishing touch after drinking, so it's very useful.

It was made carefully, so I had to wait a bit, but first, the Tomato Tonkotsu ramen... delicious! It has a slight spiciness followed by a very tasty pork bone flavor. The ramen with boiled egg for 1000 yen is a good deal, considering the high cost of living. The taste is mild and quite mellow. The soup is easy to drink and enjoyable, even for those who don't like tonkotsu broth. The noodles were delicious as well. The standout was the chashu, which was tender, juicy, and tasty. Personally, I prefer a stronger tonkotsu flavor, but the mild taste was still good. I wish there were more toppings to enhance the overall flavor.

At Mankai Fukushima Honke, you can enjoy authentic Hakata-style tonkotsu ramen, which is delicious. But in the summer, what you really want to try is the spicy tomato ramen called Piri-Kara Tomato Tonkotsu. This time, I tried it as a risotto set for ¥1,130. When you purchase the ticket for the Piri-Kara Tomato Tonkotsu, they give you a paper apron, which is a nice touch. The Piri-Kara Tomato Tonkotsu is served first. It consists of a special spicy tomato sauce mixed with creamy tonkotsu soup. The tonkotsu soup, made by simmering "Mochi Pork" for 16 hours, has no unpleasant smell. The noodles have a texture similar to fresh pasta, made with a high water content. The noodles are coated in melted cheese and the tomato sauce tonkotsu soup, creating a fusion of tonkotsu and Italian flavors. Sprinkling coarse ground black and white pepper on top adds a nice touch. The chashu pork is made using "Mochi Pork" in two different ways - lean meat and belly, both of which complement the tomato ramen well. Towards the end of the meal, they bring you rice with cheese for the risotto. Pouring the remaining soup over the rice, you get a deliciously sweet and chewy risotto with the cheese melting in. And just when you think it's over, the spiciness kicks in, adding another layer of flavor. I finished every last bit, and I will definitely be back next summer for this delightful dish. Fukushima Station is about a 5-minute walk away. This Hakata ramen shop has a high rating of 3.63 on Tabelog. It's my first visit in about a year and a half. The location is nestled between Ramen JET and Mitsuboshi Seimenjo. It seems to be quietly operating amidst the top ramen shops. You buy your meal ticket at the vending machine upon entering. I chose the most popular item, the "Pure Tonkotsu with Egg" for 1,000 yen. I asked for the noodles to be cooked normally. The soup is light and has a refreshing taste. It's not thin, but has a good balance of Japanese-style dashi, possibly made from kombu, bonito, or jaw. The noodles didn't seem different from others, but they had a good firmness. The chashu comes in two types, belly and loin. It's not melt-in-your-mouth type, but more like ham with a good chew, and the fatty part is sweet and quite delicious. I also ordered the "Spicy Mustard Greens" for the tonkotsu ramen, which was quite spicy and added a nice kick to the pork bone flavor. I added an extra serving of noodles for 180 yen, and left the shop feeling full and satisfied. The shop and staff may not be flashy, but they serve delicious ramen that showcases the skill of the craftsmen. Thank you for the meal.

I went to Mankai-san in Fukushima, Osaka. I ordered the Jun Ton ramen. Unlike most Hakata tonkotsu ramen shops that have a strong pork bone smell, this place had no pork bone smell at all, haha. The soup had the umami of pork bone but was refreshing in the aftertaste.

Today I went to Fukushima for work... After finishing a job, it was past 1:00 PM and I was hungry. I felt like having ramen. So, I visited Mankai-san. I entered around 1:10 PM. It was about 70% full. It's a shop that serves Hakata tonkotsu ramen, but there was no pork bone smell inside or outside the shop. I ordered from the ticket machine. Hmm, there are many options but I'll go with something simple. I chose the Junton (pure pork) ramen and also added extra noodles. A female staff member guided me to the counter. When I handed in my ticket, they asked me about the firmness of the noodles. I chose normal for the Junton and decided to think about the extra noodles after finishing the ramen. After waiting for about 8 minutes... it arrived! The Junton ramen! Oh! The chashu was slightly pink! Now, let's start with the soup... Wow, it's super mild. It has a creamy and smooth mouthfeel with a strong umami flavor that seems to come from the pork bone, but the aftertaste is refreshing. The most distinctive feature is that there is absolutely no pork bone smell. The noodles... thin straight noodles. I asked for normal firmness, and they had a slightly firm yet satisfying texture. The chashu... there was one slice of rolled chashu and one slice of pork belly, both of average size and thickness. The slight pink color suggests they were cooked at a low temperature. Both were tender and moist, complementing the creamy soup well. For the extra noodles... since the first serving was slightly firm, I asked for them to be softer. They had a pleasantly chewy texture, and I personally prefer them softer. Adding a little vinegar for flavor variation brought out the bold taste of the soup. I finished it all in one go. A mild and creamy tonkotsu ramen. It had a gentle flavor. Thank you for the meal.

Arrived before 4 o'clock on Sunday, walked about 4 minutes north from JR Fukushima Station and found the restaurant. It was convenient that they have continuous service during idol time. The interior has a counter and a large oval table. After purchasing from the ticket machine and sitting at the counter, they asked about the firmness of the noodles. I requested normal and it was ready quickly. However, on the way to bring it, they spilled the soup with a bang, but surprisingly they served it as is! The sides and bottom were sticky with soup... I wish they had at least wiped it off, but I decided to eat it anyway. The cloudy tonkotsu soup didn't have the typical strong pork smell, and the mild tonkotsu flavor combined with scallop and seaweed gave it a light taste. Unfortunately, the pork belly chashu, like last time, had a strong raw smell in the center and I couldn't eat it. I feel like it was tastier before, but it might have been my imagination. Around 12 o'clock, I visited the Hakata tonkotsu ramen restaurant "Mankai Fukushima Honke" by myself. It is located about 4 minutes from JR Loop Line Fukushima Station. The owner, who trained at Ippudo for many years, opened "Mankai." The cloudy tonkotsu soup is clear and flavorful, showing the time and effort put into its preparation. The layout of the restaurant is also nice, with a beautiful cherry blossom painting on the wall and unique table shapes.

On the first day of the 3-day weekend, I visited the Fukumai Fukushima Honten branch of Hakata tonkotsu ramen. I arrived about 10 minutes before the 11 o'clock opening and got a pole ticket. Soon after, I started lining up and by the time they opened, it was almost full due to its popularity. I ordered the "Jun Ton" for 800 yen. It had thin noodles with chashu, wood ear mushrooms, green onions, and a thick, rich soup. The flavor was strong but without any unpleasant smell. Both the appearance and taste were exactly like a pure Hakata tonkotsu ramen, and it was very delicious.

The tonkotsu flavor was mild, and the soy sauce was also light, lacking a bit of punch. Adding the spicy pickled mustard greens on the table brought out a nice spiciness and richness. The thick-cut pork belly chashu seemed undercooked in the center, so I tried a bite but it tasted a bit risky, so I left it. The thin noodles I ordered had a good firmness, and the soft-boiled egg was delicious with a creamy yolk. It was a light tonkotsu ramen without the typical tonkotsu smell. Thank you for the meal.
