Located about a 3-minute walk from the subway Sakaisuji-Honmachi Station, this is a Michelin Bib Gourmand recommended restaurant in Osaka for its excellent quality. They offer a selection of 5-9 types of carefully selected domestic brand pork, serving a light and crispy tonkatsu with a fluffy and elegant texture. The restaurant, opened in 2016, has a total of 13 seats, with 2 staff members in the kitchen and 1 for customer service. I ordered the "Domestic Tenderloin Cutlet Set Meal for 1400 yen" this time. Reservations are only accepted for lunch and there are specific time slots, so be careful. Also, they will be closed for about a month starting from September 5th, so it was a good timing for my visit. This is a popular restaurant in Sakaisuji Hommachi that specializes in branded pork. The interior has 3 counter seats and 10 table seats. The counter seats have partitions between them, so the spacing is very wide. The atmosphere is very stylish with dim lighting, and the staff's brisk service was pleasant. This time, I ordered "Japanese pork mochibuta 50g x 3 pieces for 2800 yen" and "Angel shrimp fry for 380 yen." They were served in about 10 minutes. The batter was thin and crispy, with good oil drainage. I read online that "Japanese pork mochibuta is characterized by its umami and texture," but I found the umami of the meat to be a bit lacking. There was also a slight dryness in some parts, and I felt it lacked juiciness. Personally, I prefer it to be fried at a lower temperature for a longer time. There were various condiments on the table, including sweet/spicy sauce, 2 types of dressing, and 2 types of salt, with Awajishima seaweed salt being my favorite. I ordered the daily special, which was a combination of garlic pork loin and kinako pork tenderloin. The pork loin was quite rare, but the meat quality was solid. It wasn't the fluffy type of low-temperature cooked meat that I used to enjoy at a restaurant in Takadanobaba. The salt was delicious. The tenderloin was also tasty, and the rice was just enough to enjoy the flavor of the meat. The prices are high, so it's a bit challenging, but I would like to try a higher-grade meat next time, maybe 150g or 200g.

Selected for the Michelin 2023 Bib Gourmand for the first time with a rating of 3.6 on Tabelog, is this the next top tonkatsu restaurant? I went to eat without a reservation in the evening when I had some free time. There were about 5 groups of mainly foreign customers waiting in line (as expected from being featured in Michelin). Reservations are highly recommended due to the long wait, but they are also available for lunch. They offer a variety of branded pork, with many items sold out by the evening (see photo). I ordered the 150g Iwachu Pork (from Iwate) loin cutlet. The rice and cabbage are free in large portions (see photo of large portion). They also have regular set meals and side menu items available (see photo). The pork cutlet is deep-fried slowly and carefully, resulting in a crispy exterior and juicy interior. The loin cutlet had a good amount of tasty fat. I was satisfied with the 150g portion. They offer two types of sauce, sweet and spicy, as well as two types of salt, coarse Maldon salt from the UK and seaweed salt from Awaji Island. Since the price difference is not significant, I would like to try the premium Tokachi pasture-raised black pork or the special Japan X selection next time.

I'm very curious about the taste of the other brand pork! The cabbage portion is huge! 13:53 - Lined up in group 1, 14:08 - Entered the restaurant. The price of the Mixed Fry set meal at ¥1900 is a bit on the expensive side. Tonkatsu is one of my favorite genres, so my expectations were high. I have about 5 favorite tonkatsu restaurants in Tokyo, but currently only one in Osaka. I remember it was a restaurant called "epe" in Kita-Shinchi, and it was incredibly delicious when I visited it as a second stop on a food crawl. I was hoping to surpass that experience today. The service was impressively polite and pleasant. The first thing I tried was the tenderloin while it was still hot. It was delicious with a gentle elasticity and packed with flavor. I enjoyed it with two types of salt. At this point, it was on par with "epe" in Osaka. Next was the shrimp. The shrimp was slim but the batter was just right, and the shrimp itself was full of flavor. The tartar sauce, to put it simply, was very similar to McDonald's Filet-O-Fish tartar sauce, and it was quite tasty. Then came the minced cutlet. This was a pleasant surprise. It had a generous amount of onions, not just meaty but also tender, making it the best minced cutlet I've ever had. The cream croquette, however, was rather mediocre. It felt like a cheap canned sauce with a hint of added flavor. This greatly reduced my satisfaction. Also, the cabbage was disappointing. It lacked both crunchiness and flavor. I hope they pay more attention to the details. I recalled how the cabbage at "Narikura" was so good that I had multiple servings. The miso soup was more on the subtle side, with a modest amount of pork umami. It didn't leave a strong impression, but personally, I don't expect miso soup to be assertive, so this was fine for me. Overall, the restaurant is currently ranked 2nd among Osaka eateries. It has many good points and is a place I would like to visit again.

On a Sunday during lunchtime, there was a short line (2 groups waiting) at the restaurant. However, it was explained that there might be a wait of over an hour because priority was given to reserved customers. The staff even came out to inform customers about this outside the restaurant.
While waiting, I decided to do some research on the various brands of pork handled by this restaurant, as I usually eat without any prior knowledge when I decide to eat somewhere.
After some searching, I chose the "Louis Vuitton pork" (a pun) from the options available.
The pork has a low melting point of about 32.5 degrees Celsius, which means it melts in the mouth. When I finally got seated in the restaurant after about 35 minutes, I ordered the Shizuoka-produced Louis Vuitton pork loin cutlet set meal for 2,500 yen (tax included), with the option of free extra rice and cabbage.
The pork had an excellent amount of fat, which made it very delicious. It was tender except for the fat, which was... not particularly remarkable. The meal came with two types of sauce (sweet and spicy) and two types of salt (Awaji Island seaweed salt and Maldon salt from England). I tried different ways of eating it and found that enjoying the fat as it is was the best way.
I also tried using the other parts of the pork as side dishes with rice and sauce, and it was delicious until the end. Although the fat did not melt just by putting it in my mouth, I could feel its sweetness when chewing, without feeling greasiness, indicating a high-quality fat.
Overall, it was a bit pricey but very delicious. Thank you for the meal!

If you arrive after 6 PM, you'll need to wait in line, but the staff can notify you by phone when your table is ready, allowing you to pass the time at a nearby cafe (expect a wait of about an hour, so it's advisable to go with some extra time).
The variety of tonkatsu at KATSU Hana includes around 7 types of premium pork, which may vary daily. The one I tried this time was Ryukyu Pork, a choice not often found in other tonkatsu restaurants. The first thing I noticed about the tonkatsu was the strong crispiness of the coating and the tenderness of the pinkish meat inside. The coating was well-fried, while the meat inside had a rare appearance, and upon tasting it, I found it to be tender and juicy, with the delicious flavor of the loin spreading in my mouth. The fat content was also pleasantly firm and had a mild taste, making it quite to my liking. The pork with a mild flavor accentuated the taste of the coating, making this tonkatsu one that seems to tell its deliciousness through the coating.
Due to the strong coating, I felt that it might be more suitable to enjoy a more affordable pork rather than a higher-grade one. I wonder how the compatibility with the coating would be if I tried a slightly higher-grade pork next time at KATSU Hana. By the way, when asked about the rice and cabbage portion for the set, I requested a large serving, and I received a mountain of cabbage.

I tend to prioritize shops with black pork on the menu because I love black pork the most, but this is one of my favorite shops that I have been going to since it opened. The tonkatsu comes in three sizes (120g, 150g, 200g), and I ordered the largest 200g size for a satisfying meal. Since I eat tonkatsu regularly, I can immediately tell the size, and the 200g portion is clearly larger than that. The Gunma Prefecture black pork tonkatsu (200g for 3,000 yen) is cut in a way that matches the amount of fat in the meat, making it easy to eat. Unlike the "Sainokuni Black Pork" from the previous visit, this black pork has a light and melty fat that doesn't cause heartburn, making it easy to eat and goes well with white rice. One of the unique features of tonkatsu is the exceptional tenderness of the lean meat. The fat melts quickly, and the lean meat is tender, creating a harmonious texture where the flavors of the lean meat and fat blend easily. The mild lard aroma also pairs well with the tonkatsu, making it delicious. I made a reservation and arrived at the shop on time, but without a reservation, it can be difficult to get a seat due to its high popularity. As a bonus, I was given ice cream at the end, which I found to be a nice touch. The staff's attention to detail was also wonderful.
