It is the Reiwa era. The Ramen Sengoku period - Many warriors are aiming for the top of the ramen world, wielding their skilled techniques and competing with their flavors. Today's lunch, I visited a ramen shop named after the warlord of the Sengoku period, "Sanada Yukimura," called "Sapporo Shinmendokoro Yukimura Tsukisamu Honten." The shop is located in Tsukisamu Higashi 1-jo 2-chome, Toyohira-ku, Sapporo. It is a roadside shop along the Shiraito Nakanojima street. There are 3 parking spaces available in front of the shop. The sign sticking out from the wall strangely says "Kiai" (spirit). Upon entering the shop, I am greeted with a spirited "Welcome!" It's a sudden spirited attack. According to the information, this shop is run by the owner, Tsujimura, who is from "Shirakaba Sanso" opened in 2016. If that's the case, the owner's specialty might be "miso"... However, the temperature today is 26 degrees. Mentally, I feel like having "tsukemen" or "hiyashi chuka." But trying "tsukemen" at a shop where the owner's skill level is uncertain is risky. I have written "rich soy sauce" in my notes. Oh, the dilemma. While pondering in front of the ticket machine, the next customer arrives. (Alright, let's do this) and I press the button for "miso" for 850 yen. Since butter is free, I also ask for that and take a seat. As I sit down, I overhear the conversation of the customer behind me. "The rich soy sauce here is delicious." "Today, I think I'll have the tsukemen." (What? Did I make a mistake??) From the kitchen, I hear the owner's spirited voice, "Miso, soy sauce, tsukemen, one each!" About 7 minutes later, with another spirited and loud shout of "Sorry for the wait!" a hot miso ramen is served in the middle of a scorching summer. The bowl for the noodles has a dragon on the body and a lightning mark on the base, a black Takadonburi. Oh, I've seen this somewhere before. Oh yes, it's the same bowl as "Ramen Dairen" in Minami Ward. I top the noodles with butter on a separate plate and I'm ready to eat. Let's dig in! First, the soup. Oh, the miso soup has a nice kick to it. It's hot and thick, quite delicious. The base is a special roasted miso soup made by simmering pork bones, pig feet, vegetables, and kombu for a long time, combined with white miso and white koji miso sauce. The soup is enhanced with burnt garlic oil and butter, adding richness. The flavor of white sesame, sansho pepper, and ginger also stand out, expressing the taste of Sapporo ramen. The noodles are medium-thick curly yellow aged egg noodles. The noodles, typical of Sapporo ramen, with a high water content and sharp corners, have a chewy texture. The noodles also do a good job of carrying the soup, typical of Sapporo ramen. The noodles are provided by Morizumi Seimen. The chashu consists of thinly sliced belly roll and diced block chashu. The belly roll is fatty and delicious. The diced chashu also allows you to enjoy the flavor of the meat. The fried onions floating around the chashu are fragrant. Additionally, the well-stir-fried bean sprouts and onions, ground meat hidden in the soup, salted bamboo shoots, and seaweed soaked in the soup all enhance the flavor of this ramen. In no time, the noodles and toppings are gone. I finish every last drop of the soup and it's delicious. Once again, I clean my plate and bowl. It was delicious.
