Today's lunch was at the long-awaited "Kuwanomi" restaurant. I had heard that it was a highly rated restaurant, but it is a hidden gem located in an area near Hiragishi, which is known for having a lineup of famous ramen shops. I usually follow my rule of "eating lunch at places I visit for work," so I often visit popular shops in areas with many customers, but I rarely have the opportunity to visit places with fewer customers. This time, I happened to have work nearby, so I finally decided to visit. The restaurant is located at 3-14 Hiragishi, Toyohira-ku, Sapporo. To get there, you need to head towards Makomanai on Hiragishi-dori, turn left at Shiraoi and Moiwaya-dori, and aim for Nambetsu-hiragishi Station on the subway. When you see Max Value, make a right turn. The restaurant is on the opposite side of "NOFUJI" and "Maruha BEYOND" when you turn left there. As you walk along the small road next to the subway tracks above ground, you will find the restaurant on your right. You wouldn't be able to find it if you didn't know about it. There are two parking spaces available in front of the restaurant. I entered the restaurant at 1:00 PM. There are only two staff members, the owner and his wife. The restaurant, which only has counter seats, was quite busy. It's truly a hidden popular restaurant. Now, let's take a look at the menu. They seem to offer ramen based on three flavors with various arrangements, but during lunchtime (11:00 AM to 2:00 PM), the ramen is 650 yen, and rice dishes are 220 yen, which is quite reasonable. That sounds interesting, but today I will go with the most popular menu, the "Black Soy Sauce Ramen" for 880 yen. (Note: prices are as of the visit date) This restaurant opened in 2017. The owner, Mr. Kuwahara of "Sapporo Ramen Kuwanomi," entered the ramen industry because of his marriage to his wife, who used to work at a ramen shop. Since then, he has gained experience and training, and finally achieved his dream of opening his own shop. They aim to provide ramen with a soup that everyone can enjoy. From the kitchen where the ingredients are sautéed, you can see a vigorous flame rising. The ramen was served in less than 5 minutes. The jet-black soup with a lard oil film on the surface, abundant toppings, and the impressive fried garlic make it a visually appealing Sapporo ramen. The bowl for the noodles is a white Narutodon. Now, let's dig in. First, the soup. It's piping hot! It tastes even better than I expected. The soup is a black broth with no noticeable thickness, reminiscent of soba broth with a slightly sweet taste. The addition of fried garlic adds a nice touch, balancing the Japanese and Western elements well. It's an interesting soup. The noodles are thin, yellow curly noodles. The aged noodles have a firm texture and are hot and chewy. It's a typical Sapporo ramen noodle. The noodles are provided by Nishiyama Seimen. The chashu is a large slice of roast pork. It has a slightly crispy texture but tastes delicious. It's quite cheap at 50 yen for an additional slice of chashu. I'll definitely add more next time. In addition, the toppings include hot and thin-sliced menma, white negi, spinach, a flavorful boiled egg, sautéed bean sprouts, and ground meat. By using sautéed bean sprouts and ground meat fried in lard, a flavor that everyone in Sapporo likes is achieved. The fried garlic also adds a nice touch. On the other hand, the combination of spinach and boiled egg, derived from Chinese-style ramen, is a unique combination that is not commonly seen. I slurp up the noodles and toppings, and before I know it, the bowl is empty. I finish every last drop of the soup, and it was delicious once again. A ramen with a soup that you can drink to the last drop. It's a bowl of ramen that demonstrates the owner's solid skills. Each ingredient is conventional, but the way they are combined is skillful. I believe the owner's years of training are clearly evident in this ramen. Next time, I'll definitely try the "Rich Miso Ramen." I'm also curious about the second most popular menu, the "Rich Salt Ramen." It may not be flashy, but it's a hidden gem with solid skills. It was delicious.
