Introducing a local company in Bihoro Town, Hokkaido, that is working hard. They produce pork soy sauce. It is a joint venture between local volunteers and students from Bihoro High School who want to develop local specialty products. The "Bihoro Smiling Project" involves high school students in Bihoro Town turning non-standard vegetables from local farmers into fertilizer for pig farming, leading to the development of soy sauce made from pork. The product is called "Bihoro Pork Soy Sauce - Pork Umamimamama" and is made from pork from Bihoro Town, rice koji, and salt. This pork soy sauce, which contains 1.7 times the umami of regular soy sauce, is rare nationwide. It is a delicious seasoning that can be used in a variety of cuisines. It is sold at roadside stations, so please try it. The company is currently working on developing new products using pork.

"I found two restaurants in Bihoro when I searched on Tabelog on my way back from Tsukubetsu. There aren't many reviews, but I decided to try one of them. It turned out to be a good choice, although they didn't have what Papa had written about, they had 'pork soy sauce'. It seems like you can make soy sauce out of anything. I bought it for 702 yen, which I think is a bit expensive. I wonder how I'll use it. I tried it with soba noodles, but it was too strong for dipping sauce. Maybe it would go better with something more authentic. I tried it with tofu, but that didn't work either. Next, I'll try it with natto. It seems like a waste, as I'm struggling to find a good way to use this expensive soy sauce. Maybe it would be better for simmered dishes or fried chicken. It's difficult to fully utilize this expensive soy sauce."
