A restaurant where you can enjoy loin cutlet from various premium pig breeds. The high-quality pork is deep-fried to a crisp, delivering an abundance of flavor from both the meat and fat. This place is a sister store of Tonkatsu @, and if you're interested, details are provided below. This was my third visit, and I hope to provide a review comparing it to my previous experiences with Gobar Pork and Sasuke Pork.
I ordered the "Running Pig" 200g for 3,500 yen, which I was curious about since it was mentioned on their official Instagram. The name seems to precede it, as the red meat is quite muscular, giving the feeling of really eating meat. The dense meat releases pure juice that bursts forth. On the other hand, the fatty parts have a very rich flavor. Compared to the two previous types, I felt more of a contrast between the flavors of the lean and fatty parts. As a result, the lean portions are best enjoyed simply with salt, while the fatty parts can be paired with sauce or mustard, allowing for different tasting experiences.
Since it is a muscular pig, those who prefer softer textures might not find it to their liking, but I enjoyed it. Briefly comparing to the previous types: Gobar Pork has a dense texture with a moist, clingy feel and clear meat juices and fat. Sasuke Pork stands out with a strong flavor from the red meat, and it seems to have a higher ratio of fat. There are other specialty pigs they handle, so I look forward to trying more comparisons in the future.

Following up on last week’s visit, I found myself at the gym again and, after some light exercise, had an irresistible craving for amazing tonkatsu. The pork is sourced from Sakaiya, and the chef, with exceptional skill, coats it in specially made breadcrumbs and deep-fries it in both low-temperature and high-temperature oils for a perfectly crispy finish. After frying, the tonkatsu rests on a stand to drain, resulting in a perfectly cooked cutlet with a slight pink center. In my experience, great tonkatsu has a rich meat flavor, so you can dip it in sauce and still appreciate the taste of the salt. Not many places manage this, but this restaurant definitely does. Today, I enjoyed the “Running Pig” loin, which has a firm, flavorful red meat and an exquisite sweetness in the fat. It’s my favorite type of pork.

I made a reservation and visited again. Recently, it seems to be my pattern to go to the driving range followed by this place (laughs). After trying all the varieties, I've started to understand my preferences. My favorite is the "Running Pig." Perhaps because they are free-range, the meat has a firm texture and a good chew to it. On the other hand, the fat is sweet and rich. Today, I had the loin, and my companion had the tenderloin. Both were equally delicious, making it hard to choose a favorite. While the tonkatsu sauce and the sweeter sauce are of course delicious, my top recommendation is the salt and mustard. Normally, once I eat regular tonkatsu with sauce, I can't go back to salt, but with delicious tonkatsu, the flavor of the meat is so strong that I can switch back to salt.

I visited "Tonkatsu Butaro" in Nagoya City. As the name suggests, it’s a tonkatsu restaurant that serves pork from the renowned Sakaiya butcher shop, favored by top chefs nationwide. The interior has a calm atmosphere similar to that of a high-quality kaiseki restaurant, with only counter seating available.
I ordered the tonkatsu set meal (4,000 yen), which includes braised pork, homemade minced pork cutlet, and a tasting of two types of loin cutlets, along with cabbage, rice, miso soup, and pickles. Each time an order is taken, the pork is cut right in front of you. The special panko breadcrumbs are stored in a wooden box, and the pork is carefully fried at both low and high temperatures.
The finished tonkatsu has a crispy coating, while the meat is tender and juicy. It’s tender but still has a bite, which is different from the trendy low-temperature cooked varieties. The blended oil made from lard, rice oil, and plain sesame oil is so high-quality that it doesn’t leave a heavy feeling in the stomach. The rice, cooked in a donabe (earthen pot), and the fresh cabbage, along with every side dish, are all impeccable.
This time, the loin cutlets were made from "Hashiru Pork," and the fillet was from "Sasuke Pork." Notably, the special pork brands I saw at Sakaiya cost about 400 yen for 100 grams, which is on par with the price of domestic beef. This restaurant is perfect for those seeking high-quality tonkatsu or for a date.

I often wonder what high-class tonkatsu really is, so I went to a restaurant with slightly higher prices than usual. The pork from Sakaeya seemed to have very good quality. If it's not just a placebo, then it must be true. The fat had no unpleasant odor but was flavorful and delicious. The red meat was rich in taste, and that was also very good. While I could feel the texture of the meat as I bit into it, it was still easy to chew. One part is the ingredient quality, and the other must be the frying technique. They used two types of oil; perhaps the difference in temperature contributed to the result. The coating was crispy without being tough. In summary, it was tonkatsu through and through, but with none of the shortcomings often found in cheap versions, making it quite elegant. It was a wonderful experience. Since I somehow preferred the Gobal pork, I might try having just that next time.

The shipment of Saito Pork, known for its rich flavor and deep taste that doesn't feel like a tenderloin, was unavailable, so I decided to try Sasuke Pork’s tenderloin for the first time. While it has a slightly different character than Saito Pork, Sasuke Pork is also incredibly flavorful and has a depth that you wouldn't expect from a tenderloin. The homemade sweet sauce and tonkatsu sauce are delicious, but when enjoyed with mustard and salt, the flavor of the meat really stands out. I used to prefer loin cuts, but this tenderloin is of such high quality that I might end up ordering tenderloin only for a while (laughs).

The last time my friend ordered Saito Pork tenderloin, it had an incredibly deep flavor, surpassing any tenderloin I had ever tasted. So, surprisingly for someone who usually prefers loin cuts, I ordered 200g of Saito Pork tenderloin. Since it’s a tonkatsu shop, I didn’t experience any significant delays in service, and the person was attentive to the customers. I hit it off with my friend and decided to visit this restaurant! We made a reservation that morning and went for lunch. This place is part of the Bottegongo group, which includes Italian and yakiniku restaurants, as well as tonkatsu places! At Tonkatsu Butataro, the cozy interior has just seven counter seats, and you can choose the type of pork and the part of the meat, which is great! Today, we went for a hearty pork lunch.
Here’s what we had:
- Saito Pork Loin 150g for 3,600 yen
- Sasuke Pork Loin 150g for 2,800 yen
- Ginger Pork Shoulder (a la carte) for 1,500 yen
Each dish comes with unlimited cabbage, white rice, and red miso soup, but as usual, I skipped the rice! We had homemade sauce, Japanese mustard, and salt for seasoning, which made it fun to change things up.
We shared everything, and the thick cutlets, cooked at a low temperature, were tender with a light batter, so they didn’t feel heavy at all. I couldn’t really tell the difference between Sasuke Pork and Saito Pork, as I’m not a connoisseur! We joked that it would have been nice to compare the fillet and loin as we enjoyed our lunch.
The crispy cabbage went perfectly with a delicious dressing, and I had seconds! Both the Tonkatsu and Butataro had a quiet but efficient chef working solo. Thank you for the wonderful meal! 🌟

I had been feeling a bit sad that a tonkatsu specialty restaurant in Nagoya, which I thought was the best, switched to lunch-only hours and temporarily closed until November. However, I recently learned that this place is a sister restaurant, so I promptly made a reservation for my first visit. They source rare pork from Sakaeya in Shiga Prefecture. Today, I had the Aino Natural Pork loin (200g), while my companion had the Saito Pork fillet (200g). The Natural Pork had a sweet fat that was quite delicious, but the Saito Pork fillet had a rich flavor and was of such exceptional quality that it was hard to come by. The tonkatsu isn’t cheap, but given the quality of the pork, it’s worth it. I’m definitely planning to visit again.

I visited Tonkatsu Butataro located in Sakae. After reading reviews, I decided to order the Chef’s Choice 230g (4380 yen). This option includes a selection of three types of pork—loin, filet, and minced meat—prepared from premium brand pork. The restaurant has only seven counter seats and operates with one staff member, allowing patrons to observe the chef trimming the excess fat from the meat right in front of them. It's a great experience to enjoy the cooking process in such a refined setting.
As for the food, I personally loved the Loin Cutlet made from Gobaru Pork. The fat had a subtle sweetness, and eating it fresh from the fryer was wonderful. Later, when paired with a generous amount of sauce on a square plate, it tasted incredible! While I typically prefer filet cutlets with miso sauce, I found that a really good restaurant makes the loin cutlet shine with just salt.
Additionally, the freshness of the oil was excellent, and I didn't experience any heaviness after the meal, which is an essential quality of a great restaurant. Thank you for the meal!
P.S. Given its location, I think this place could also be a good choice for companion visits in the evening.
