I had been curious about "Sichuan Traditional Hot Pot Shukkan," located in Kanayama, which is a popular restaurant known for its authentic hot pot. I made a reservation online and went there. There was a lot of fun in choosing and combining different broths, dipping sauces, and ingredients, and the taste was delicious. I found the spicy broth quite hot even at level 1! My husband, who enjoys spicier food than I do, thought it was hot too but was intrigued by level 2. My favorite was the refreshing mushroom broth!
Here’s what we ate:
We chose a three-flavor hot pot, so besides the default spicy broth, we selected two additional types:
◯ Spicy broth (spiciness level 1)
◯ Rich broth (tonkotsu flavor)
◯ Mushroom broth (light broth flavor)
◯ Meats: We had lamb, beef, and pork in various cuts, choosing from 5-6 options.
◯ Vegetables and other ingredients: There was a space in the back with various ingredients on round plates in the fridge. Like a conveyor belt sushi, the price varies by the color of the plate. We chose cilantro, cabbage, enoki mushrooms, maitake mushrooms, and squid tentacles.
◯ Dipping sauces: Alongside the ingredient space, there were numerous sauce dispensers where we mixed recommended sauces. I only tried about three different dipping sauces, but I really liked the "Xianjiao sauce," which had a Thai flavor. "Ponzu" was also good. But since the hot pot broth was already well-seasoned, the dipping sauces ended up being a bit too strong; I preferred eating directly from the pot.
◯ Bingfen: A jelly-like dessert topped with raisins, nuts, and black syrup—I found it very tasty!
- Reflection: I regret that I added lamb and cilantro, which have strong flavors, from the start, and the taste lingered until the end. Next time, I'll save the stronger-flavored ingredients for last.
- Caution: When I arrived at the restaurant, I could already smell the hot pot from the elevator, and even though my coat was covered, it absorbed the smell! I ended up having to take my clothes to the dry cleaner for the first time in years, so I'd recommend wearing something washable. The staff was also friendly, which was nice. Thank you for the meal!
