2016/3 Revisit "Memorable Ramen Shop Series in Bibai, Part 10" The most visited ramen shop in Bibai city where you can enjoy traditional Sapporo ramen. However, it can be a bit of a wait as they make each order one at a time, especially when there are two to three groups of customers. It would be better if they could handle around four orders at once. On this day, unfortunately, it was the case. The "shio" (salt) and "miso" flavors seemed a bit less flavorful than before. Nevertheless, it is one of the few ramen specialty shops in Bibai. I hope it continues to thrive.
2015/5 Revisit "Tantanmen" 800 yen I had high expectations for this dish, but it turned out to be a spicy miso ramen. It contains blue lettuce, wood ear mushrooms, minced meat, and bean sprouts. The spiciness comes from miso with doubanjiang and chili oil. The acidity of doubanjiang surprisingly complements the dish well. This ramen is quite unique. "Bibai Horyu" is really doing a good job.
2014/9 Revisit Whenever I crave miso ramen in Bibai, I end up coming here. I haven't visited the other Horyu stores, so I can't compare, but this place serves a consistent "old-school Sapporo miso ramen." The price is also reasonable at 700 yen. Today, the saltiness was just right. Perhaps I've gotten used to the taste, but my rating has slightly improved.
In Bibai, when you feel like having ramen, you visit. The current "Sanmai" is priced at 700 yen. This is the classic Sapporo ramen. Bean sprouts and onions are nicely cooked. Wakame seaweed is a nostalgic staple in a way. The menma and seasoned char siu are good, and the char siu is on the firmer side. I presume the soup is a blend of pork bones and chicken bones. While it is rare to see the noodles lifted with a flat sieve nowadays, the ramen chef's skillful technique is impressive. However, they put the noodles in the bowl before pouring the soup, so I was worried they might get soggy. Nevertheless, the Nishiyama egg noodles do not stretch due to their high water content. The soy sauce is not the Sapporo black type but a light brown color. It's a matter of preference, but I prefer the miso flavor. In Bibai, there are few ramen shops, and this one, not facing the national highway, is a local favorite. It's a reliable bowl of ramen in Bibai.
