Charcoal-grilled Italian restaurant "CARBO" in Doyama. On this day, we went bar hopping from Higashi Street to Doyama. Ate and drank heartily at two places, feeling really full. Could have just gone home at that point, but as a food blogger, going to a third place is a must. Oh, I remembered! So, we headed to "CARBO" in Doyama, known for its Italian dishes cooked with charcoal. It's a place where you can enjoy authentic Roman-style charcoal-grilled dishes. I used to love this place, but haven't been able to visit due to the pandemic, so it was a long-awaited return. Despite arriving late, the place was almost full. Still a popular spot! I ordered a fresh fruit spritzer for a dessert-like sweet drink. Cheers with the recommended rum and pineapple kiwi tonic! The truffle carbonara was a standout dish, an adaptation of the famous carbonara from the birthplace in Rome. The rich sauce perfectly coated the thick pappardelle pasta!! And the generous amount of Parmigiano cheese and truffle added a punch!!! I intended to end my meal there, but ended up adding a beer... Next time, I need to go for a full meal. I'll definitely be back!

Recently, I told the staff at a izakaya I frequent that I've been really into carbonara, and they mentioned that a friend of theirs owns a restaurant that serves it. I hesitated to visit at first because the atmosphere seemed a bit sketchy, but the restaurant itself turned out to be very stylish and had a nice, calm ambiance. I dropped in on a whim, without a reservation, and it seemed like they were fully booked. However, they said they could squeeze me in for about an hour, so I decided to quickly enjoy a meal there.
They had a variety of homemade drinks like sangria and kiwi gin and tonic, so I tried some of those. The menu only listed an appetizer platter for two people, but they said they could make a single portion, so I ordered that. The presentation was beautiful and the flavors were delicious, especially the chicken ham and omelette. The truffle-infused potato salad served on baguette with truffle oil drizzled on top was incredibly aromatic!
Finally, the truffle carbonara that I came for. They had homemade pappardelle and rigatoni, and I chose the pappardelle this time. It was served on a unique and impressive plate specially ordered from a ceramic artist. It was Instagram-worthy for sure! The rich cheese sauce was topped with truffle and bacon, creating a delightful combination. The delicate pappardelle paired perfectly with the intense cheese sauce, truffle aroma, and wheaty flavor.
It was delicious, but the cheese didn't have the distinctive taste of Parmigiano or Pecorino. When I asked, they said they used Parmesan cheese. Using a more common Parmesan instead of the typical Pecorino probably helps achieve such a rich flavor. They also used bacon instead of guanciale for the same reason. This would definitely be a hit with women! The restaurant was getting busier with reservations coming in, so I left a bit early.
The staff was friendly and very pleasant. The popularity of this restaurant was evident with all the reservations. I look forward to returning and trying their charcoal-grilled steak and desserts at a more leisurely pace next time!

It was incredibly delicious. The pasta in particular was amazing. Even though I thought I was too full to eat more, once I ordered it, it was so delicious that I finished it in no time. The truffle pizza was also fantastic. It was a wonderful restaurant with great cheese and truffle dishes. Thank you for the meal.

I went to a restaurant that I had been curious about, even though it is a little far from Umeda. I ordered the all-you-can-drink + food set for 5,500 yen per person. The cheese, truffle, meat, and all the dishes were of high quality, and the food was excellent. The appetizers may have been the best! The main dishes were also delicious, and being able to drink alcohol made it even better!

The place was a bit hard to find, but had a cozy hidden gem vibe. The truffle whiskey I had on the rocks had a strong whiskey scent, but I couldn't really taste or smell the truffle despite there being a slice in it. Overall, it was a good experience considering the price, quantity, and quality in relation to the location.

The staff were polite and even offered to take photos for us. The restaurant is a bit small, but they seated us by the wall since we had a reservation. The appetizer platter can be chosen according to the number of people, and the famous truffle carbonara can be ordered in a large portion for sharing, which was very convenient. The carbonara was incredibly delicious and definitely a must-try. The only downside was that the group sitting two tables away was too loud, but that's not the fault of the restaurant. I will definitely go back again.

The air conditioning seemed to be malfunctioning, but they kept checking in to see if I was too hot and offered to move me to a different table. The dishes were all very generous in portion size and delicious. Personally, I loved the assorted appetizer plate the most, but unfortunately, I forgot to take a picture of it!

The interior has a calm atmosphere with a counter seating for 7 and 15 table seats. The dishes are cute and uplifting. Highly recommended is the Carbonara. It is an authentic Roman Carbonara that has been researched and arranged to allow you to feel the rich aroma of truffles. The rich sauce goes well with Pappardelle (thick noodles) and is delicious. The assorted appetizers are also visually appealing and good! The meat was also tender!
They have over 20 carefully selected wines and homemade drinks infused with fruits in whiskey and spirits, which are highly recommended. It's a delight for those who love alcohol. Thank you for the meal.

I had been curious about this restaurant for a while. I visited for the first time and was impressed by the great atmosphere and delicious food. I had the course meal and the appetizers were delicious from the start! It was great to have all-you-can-drink option with two friends who enjoy drinking. The cost performance was good, so it's understandable that the dishes were meant to be shared by 2-3 people, but it would have been more impressive if we could have each had our own plate instead of sharing. However, the staff were quick and we were able to enjoy without inconvenience. They even gave us focaccia as a souvenir when we left. It was a good experience!

I heard from my junior that CARBO was delicious, so I decided to go. The operation was good, and the taste was good too. The restaurant had a casual Osteria-like atmosphere with reasonable prices. I feel bad for not paying much attention to the server, but the Rigatoni with orange-colored sauce and truffle caught my eye. I forgot to take a photo of it. This was the famous Truffle Carbonara, and it was delicious with the chunky bacon and focaccia. I will be more careful next time.

All the courses were delicious, especially the famous truffle carbonara and focaccia were my favorites. The staff were very friendly, and we even received a souvenir when we left, making it a wonderful experience. I definitely want to visit again. Just one thing, sitting at the end of the counter, I could hear the staff's interactions (taking orders from other customers and processing payments), which was a bit distracting.

Located in a shady area and down a back alley, but don't let that deter you - this place comes highly recommended! The portion sizes, flavors, service from the staff, and overall value were all excellent. The pasta was outstanding, with delicious sauces. The bread was served piping hot, and I couldn't resist getting seconds! They even offered extra pasta sauce as a bonus. The double main course fish dish was also delicious, and the French toast dessert was a hit! The sparkling wine and white wine from the all-you-can-drink menu were also very tasty. To top it off, they even escorted us outside and gave us focaccia as a parting gift. All of this for just 5500 yen with drinks included! The only downsides were the limited space and the overpowering scent of truffle, but overall, this place is highly recommended!
