Visited without a reservation on Saturday at 9:00 PM. When asked if there was availability, the atmosphere became tense as there were only 2 seats left, apparently reserved for customers who didn't show up even after their reservation time had passed. They tried calling to confirm again, but it seemed like no one was answering, so the restaurant eventually gave up and luckily seated us. We opted for the chef's choice sashimi and sushi.
----- Taste Impressions -----
The first sashimi platter arrived without any explanation, which was a bit disappointing as I would have liked to know more about what I was eating. However, all the pieces tasted delicious. Instead of ginger, they served cotton tofu, which was surprising. The chef kept serving us different types of fish like sea bream, cutlassfish, and bonito. Then a fish called "akou" was served, also known as splendid alfonsino, which was chewy and quite tasty. The squid with strawberry jam topping turned out to be squid with salmon roe, a unique combination that was refreshing. The salt and sudachi pairing was familiar, but the less common combinations were interesting and fun to try. Another standout was the razor clam, served with rice at the bottom like a risotto, with a delicious clam broth seeping through. Normally, I would need to add extra dishes to feel satisfied, but this time, the course alone filled me up. The variety of uncommon ingredients and creative twists made the dining experience enjoyable.

I had a brief conversation with the head chef, who mentioned that we were lucky to get a table since there was no contact from the customers who had a reservation at 8:30 PM, and we happened to arrive at 9:00 PM. It was truly fortunate timing, and even the regular customers mentioned that it's rare to get a table without a reservation. By the time we left, we had somewhat blended in with the atmosphere, so it was a good experience. Some customers who left while we were dining had made reservations for their next visit, so I recommend making a reservation if you're interested.
