Masao's Noodle House in Kitashinchi is a popular spot for delicious ramen. I had tried to visit a couple of times before, but it was always closed for various reasons. Finally, I managed to visit this time and the place was empty. I ordered the salt ramen while my friend got the soy sauce ramen. The broth for both is made from a blend of chicken and bonito dashi, along with vegetable soup. The noodles are firm with a good chew. The salt ramen had a clear and flavorful broth that paired well with the noodles. The soy sauce ramen was a bit sweet, but still tasty. The standout was the delicious chashu, which was cooked through and had a great flavor. It would be perfect with a cold beer. The prices are a bit high, but worth it for a satisfying meal after a night of drinking. Overall, I recommend the salt ramen for a hangover cure.

First visit! The interior of the shop has only a counter. The staff are not very friendly, but not unpleasant either, more like a master type who works diligently. I was interested in the fried chicken, but the staff advised me that the portion was too much for one person, so I ordered salt ramen with seasoned egg, dumplings, and mentaiko rice. The salt ramen is very light and delicious! It seems like it would go down easily even after drinking. The dumplings have a crispy outer layer and a juicy filling, perfectly cooked. At 8:30 pm, there were few customers, but since they are open until late at night, it seems like a good place for a drink as a second or third stop. Thank you for the meal!

The shop is cozy and small in the basement, with an unfriendly shop owner. I had the large serving of tsukemen, while my partner had the salt ramen. The tsukemen had small pieces of char siu in the soup, with a hint of burnt garlic maybe? It was delicious and quite filling. My partner's salt ramen was light and tasty without any strong flavors. I would like to give it a 3.5 rating, but because of the unfriendly service, I'll deduct one point.

Located a 5.6-minute walk from Kitashinchi Station, this restaurant is in the basement of a building across from ANA Hotel. With a rating of 3.57 on Tabelog, it is quite highly regarded. I visited around 8pm on a weekday for dinner. Despite it being an early hour for Kitashinchi, there were no other customers. The menu offers four types of ramen: salt, soy sauce, tsukemen, and tantanmen. Intrigued by the soy sauce ramen as well, I ordered the salt ramen for 900 yen and the green onion rice for 300 yen. The soup is described on the menu as a balanced blend of chicken, bonito, and vegetable broth, and indeed it is difficult to pinpoint the flavor, though there is a hint of seaweed in the salt ramen. The broth is light and gentle, perfect for sipping. The chashu is well-seasoned with soy sauce and melts in your mouth. Delicious! The noodles are straight, medium thickness, and have a neutral flavor. The green onion rice is a dish of rice mixed with green onions, ramen sauce, and sesame oil. It has a stronger flavor than the ramen, and when poured with the ramen soup, it creates a calming and comforting taste. During the day, it seems like they're not open, as it's more of a nighttime spot. They have a wide variety of alcohol options and some appetizers as well. I ordered the tantanmen, which I didn't see many reviews about. It didn't have ground meat, but instead had diced chashu. The soup was spicy. The noodles were thin and curly. Considering the price, I'm not sure if it's worth it, but the taste was delicious. I'd like to try other ramen dishes next time.

Next, the Salt Ramen was served with toppings such as chashu, chopped green onions, and mizuna, keeping it simple. The golden-colored soup had a beautiful appearance. The soup, made from a blend of Himalayan rock salt and Okinawan sea salt, was quite light with a slightly salty taste, but the mizuna and chopped green onions balanced it out. Overall, it had a gentle flavor with a good amount of richness that complemented the flavor of the chashu. The thin straight noodles cooked in plenty of water had a good texture. Today is Friday, my liver-rest day. I decided to dine out without drinking alcohol, so I visited a ramen restaurant in Shinchi. This place used to be called "Miyazawa" before the renewal. I think I visited Miyazawa a long time ago, maybe around 20 years ago or even longer. I don't remember much, but I think it was a late-night meal after drinking. When I entered the restaurant, there were some customers enjoying themselves in a more izakaya-like atmosphere rather than a ramen shop, probably because it's Friday. I ordered soy sauce ramen with flavored egg for 1,050 yen. The owner of the restaurant has a rough appearance, more like a master of an izakaya than a ramen shop. He looks like he enjoys chatting with regular customers. The soy sauce ramen that arrived had an elegant appearance, reminiscent of Shinchi in some way. The noodles were firm and had a unique color resembling soba noodles. The soup was light and more like "Chinese soba" than "Chinese ramen." It was delicious, but I couldn't help but think it would be even better with a drink. Thank you for the meal. I'll visit again on a day other than my liver-rest day.

Salt ramen for ¥850 and gyoza for ¥450 at 18:45 on August 26, 2022. Another restaurant that opened at 18:00 strangely closed due to running out of soup. Running out of soup in just 30 minutes, what on earth... Could it be because they were open for lunch? So, I escaped to this place. The chef, like Minoru Kobayashi, is peeling boiled eggs. The store looks like a drinking establishment, with only an L-shaped counter, resembling a traditional Japanese cuisine restaurant in Kitashinchi. If it weren't a ramen shop, I wouldn't have dared to enter. As for the gyoza, it was average. Can't help it, right? The salt ramen... lukewarm and thin!! Adding leeks, Chinese cabbage, and chrysanthemum greens makes the soup even thinner. Despite being thin, the seasoning makes the tongue tingle. The noodles are thin, curly noodles cooked al dente. This ramen is truly meant for a post-drinking meal. It seems like having it for dinner is not the concept of this place. You probably need to be drunk and sloppy to truly find it delicious. It's impossible for a sober person!!

Located in the depths of Kitashinchi, in the basement of a building on the street in front of ANA Crowne Plaza Hotel, is "Menya Shokudo Masao." This is a ramen shop that we stumbled upon during our Kitashinchi ramen exploration at night. The interior of the shop consists only of a counter, with just one foreign customer already seated. Unlike an izakaya or bar, this is a true ramen shop. There are also some small dishes available. I ordered the "Ramen (Salt)" which was served in a stylish oval bowl. The clear soup is made with Himalayan rock salt and Okinawan salt, providing a strong yet gentle flavor. It pairs well with the translucent thin noodles. The char siu, mizuna, and green onions were also included. I'm usually not a fan of mizuna, but it surprisingly complemented the dish. It was delicious. I even added some ramen pepper from the table to change up the flavor (laughs). I couldn't stop eating and finished every last bite. It was incredibly delicious. I now understand why this taste is loved by many. Thank you for the meal!

I visited "Menya Shokudo Masao" past midnight on a certain day in June 2022. Located about a 3-4 minute walk from Kitashinchi Station, on the basement floor of a building. I visited to have a bowl of ramen as a late-night meal after drinking plenty of alcohol. The restaurant was not very spacious, with only 2 other customers inside. I sat alone at the counter and ordered the "Salt Ramen" for ¥850. Normally, this place is known for being a spot to enjoy some drinks and snacks before having ramen, but on this day, I only ordered the ramen. While waiting for my food, I was engaged in conversation by a cheerful foreigner sitting next to me, adding to the late-night atmosphere of Kitashinchi. After about 7-8 minutes, the ramen was served. The ramen consisted of curly noodles in a clear salt soup, topped with chashu, green onions, and mizuna. Tasting the soup, I could sense a slightly strong saltiness but with a good umami flavor. The salt ramen was soothing for my tipsy body. The curly noodles had a nice firmness and absorbed the soup well. The chopped green onions and mizuna added a refreshing touch. The salt ramen at "Masao" was very easy to eat, and despite the small portion, I finished it quickly. I felt like having another bowl, but I paid with PayPay and headed back to my hotel. It was a convenient late-night ramen spot to know in Kitashinchi.

It's past 1 am and it's my first visit. There are 4 customers already enjoying themselves. The owner, who is working alone, is managing well with the customers. I ordered the salt ramen for 850 yen. It arrived in about 5 minutes. The noodles are slightly thin with plenty of soup. The soup starts off salty but then becomes a bit bland. It looks nice, but I can't taste the broth. The chashu is well-seasoned and delicious. Well, I guess it's okay.

I ate a lot in the drunken state and went to a recommended ramen shop in Kitashinchi. The sesame tantanmen was delicious!! It has a rich flavor, and the aroma of chili oil triggers my appetite.
