Listed in the Tabelog Top 100 EAST 2022. The owner used to work part-time at a ramen chain store during college and eventually dived into the world of ramen making. In a region where miso ramen is dominant, this shop has become a leading establishment for light ramen. This time, I ordered the soy sauce wantan noodles. Soup: A luxurious soup made with a blend of premium ingredients such as Hinai-jidori chicken, Shintoku-jidori chicken, Tanba black chicken, Nagoya Cochin, Amakusa Daioh, pure Kinme pork, and Berkshire 50 pork, combined with soy sauce. Despite its simple composition, the explosion of umami fills your mouth. Noodles: Made with Hokkaido-grown Haruyutaka, Haruyokoi, and Harukirari, these medium-thin straight noodles spread the aroma of wheat and have a supple, silky texture that perfectly complements the richness of the soup. Toppings: Pork chashu (Rusutsu pork), wonton (Kinme pork, Tanba black chicken), menma, and Mitsuba. The toppings are so delicious that it's hard to describe in words. The popular restaurants in Sapporo always have long lines, but this shop gives out numbered tickets so you don't have to wait. I tried the special off-menu item, the Salt Wonton Noodles, since the owner was absent that day. I was expecting a dried fish broth ramen, but the soup was light and elegant with no fishy taste. It was so good I drank it all. Even though I got a numbered ticket, surprisingly there was no line that day. It was a Saturday but I was able to go without any issues.

Finally, my long-awaited dream came true, and I visited Japanese Ramen Noodle Lab Q. As I rarely have the opportunity to come from Kanagawa Prefecture to Hokkaido, this time I finally visited when the schedule of the Sapporo vs. Shonan game matched the opening hours of the ramen shop. The shop opened at 11 am, so I researched what time I should go, and found out that they distribute numbered tickets at 8 am, 9 am, and 10 am. I decided to go at 10 am so I could secure a reservation for 11 am. I received ticket number "24". I visited the Sapporo Clock Tower while holding the ticket. The ticket allowed me to enter the shop at the designated time, where I went downstairs to purchase a ticket for the Shoyu Wantan Men for 1750 yen. The impact of the soy sauce soup was impressive, with a soft and thin noodle that complemented it perfectly. The two slices of chashu and two wantan were different and delicious, but the soup's impact was overpowering. It was a bit pricey, but worth it for the delicious experience. As I was leaving, I had a friendly exchange with the staff, who thanked me for coming all the way from Kanagawa for the soccer match and dining at their shop. The atmosphere of the shop was impressive, with a sense of tension but also a dedication to providing customers with delicious ramen. The price may be higher than other ramen shops, but it includes the experience of the unique atmosphere, making it worth it. I will definitely visit again when I come to Hokkaido.

I finally visited Japanese Ramen NoodleLab Q as I had been wanting to go for a long time. This time, I ordered the soy sauce wonton noodles. The chashu included rusutsu pork belly and loin, and the wonton had two types: kinugawa pork and hinai-jidori chicken. The noodles were homemade with Hokkaido wheat, showing a great deal of attention to detail. The soup was incredibly delicious, I drank it all and didn't feel thirsty at all. I once ordered ramen online and wanted to visit this shop during my business trip to Sapporo. I heard that there is usually a long line, but I decided to try my luck when a sudden thunderstorm hit. Luckily, I was able to enter without much waiting, but it took almost 30 minutes for the ramen to be served. The soup was chicken-based with a clear taste, similar to Shinasoba-ya but even clearer and more transparent. The saltiness and oiliness were perfect. There were two types of char siu, one with a charcoal flavor. Both were rare and to my liking. They were served with mitsuba and menma. The noodles were soft, similar to those at Iida Shoten and Shinasoba-ya. The ramen came with a salted egg rice, which I understand the concept of, but I think it would be better with soy sauce. Overall, the ramen was of high quality, and I would definitely visit again when I return to Sapporo. I personally found it more delicious than the collab shop Nippon Ramen Rin at Tokyo Station.

I was really curious about this shop. It is located within walking distance from Sapporo Station, and their specialty is shoyu (soy sauce) ramen, not miso ramen. I had heard about this shop when the owner was featured on a TV show a few years ago, and I had decided to visit when I went to Sapporo. I visited around 1:30 pm on a Friday, and there were a lot of chairs inside the shop where you could wait. There were about 4 people waiting in line. I only had to wait for about 10 minutes before being seated. Maybe because it was late, I was able to eat right away. I ordered the shoyu ramen for 1300 yen, which seemed quite high-end, but it exceeded my expectations! The flavor was amazing, with a sharpness of soy sauce and a gentle richness of umami from the meat. The noodles were thin and chewy. The ramen came with two types of chashu (roasted pork slices) as toppings, and each topping was carefully made. Each topping had its own presence, yet the overall balance was perfect, creating a mysterious feeling. This is delicious!! It's so delicious!! I would totally understand if it was over 1000 yen. I want to try a different menu next time. I am completely satisfied. Thank you for the meal!!

NIPPON RAMEN 凛 RIN TOKYO was delicious, so I decided to visit the main store that they produced. I arrived around 1:30 pm and was able to get in relatively smoothly, but there was a line afterwards. It seems like if you come after 1:30 pm, the wait should be around 20 minutes or less. The ramen costs 1300 yen and is a clear soy sauce ramen, very similar to the one at NIPPON RAMEN 凛 RIN TOKYO. So, for people in Tokyo, it's safe to stick with the soy sauce ramen at NIPPON RAMEN 凛 RIN TOKYO, but it's worth trying their seasonal limited items or unique menu options as well.

I arrived around 14:15 and was told that they were running out of noodles, but luckily I managed to get the last bowl! The soy sauce chashu ramen was delicious! The thickened soup had a rich flavor. The straight thin noodles were sticky and absorbed the flavor of the soup while still maintaining a chewy texture. I'm not very good with words, but it was like a "perfectly crafted dish"!

I visited Japanese Ramen Noodle Lab Q and had their special soy sauce ramen for 2,500 yen. It was delicious as always. The texture of the noodles seemed slightly different this time. However, Sapporo is also hot just like Tokyo. The interior of the restaurant was not much different from Tokyo, but the air conditioning didn't seem to work well, making it too hot to fully concentrate on eating. Visit on 8/22/2023 (Tue) at 13:47. I was able to enter the store immediately. I purchased a special soy sauce ramen ticket (2,500 yen). 14:00: The ramen arrived. The soup is a clean soy sauce base with chicken. It feels like a high-end soy sauce ramen. Each ingredient is carefully selected, and it was delicious, but I thought 2,500 yen for one bowl was a bit expensive. The wonton filling was rich and distinctive, so I highly recommend the wonton. There was no particular line at the time of leaving the store.

I ordered the soy sauce wonton noodles! I arrived around 1:30 pm. There were about 5 people waiting inside the restaurant. Some people who had reservation tickets arrived later, around 12:30 pm. I was wondering if they would be seated before me, but I was actually seated first. The table was already set up. They seem to pay attention to the details like the angle of the setup. The water is self-serve in a bottle on the table, but it was a bit warm. The soy sauce wonton noodles arrived. They seem to have a focus on quality ingredients and homemade noodles. It was just like a delicious ramen. The prices are a bit on the higher side though.

On a regular day, I arrived just before 1 pm during the Bon holiday and found fewer people waiting than I expected. It took about 40 minutes to be seated. I ordered the soy sauce wonton noodles, soft-boiled egg, and dumplings. The ramen broth was a bit salty for my taste. The noodles were thin and straight, with a good texture, and the chashu was delicious. The egg was different from regular eggs, with a pale yolk, but surprisingly tasty. The dumplings were of normal size but at 450 yen each, quite expensive! They were indeed delicious, made with high-quality ingredients. Given the price, I would have been upset if they weren't tasty. This place serves refined ramen, but there are other places with equally delicious ramen at a more affordable price. As a commoner like myself, what matters more than the origin of the ingredients is whether the food is delicious enough to make me want to come back. In that regard, I may not revisit this place. The staff, particularly the lady who guided us, was efficient and friendly, making the wait stress-free. I would give her more points than the ramen itself.

This is a ramen shop located underground behind a clock tower. The line extended from inside the shop to halfway down the stairs, and it was very hot as it was summer. Inside the shop, the air conditioning was working well, so it was a bit tough. Before entering the shop, we purchased meal tickets, and it took about 15 minutes to get our ramen after entering the shop. I had the special soy sauce ramen, and my companion had the salt ramen. The soy sauce ramen is highly recommended. The soup has a nice dashi flavor and is refreshing and rich. The noodles are smooth. The egg has a light yellow yolk and a rich flavor. There are several types of chashu, all of which are quite delicious. As for the wonton, the skin is thick and the filling is firm, not delicate or trendy with a smooth texture. It has a rough texture. The salt ramen, on the other hand, has different noodles from the soy sauce ramen, slightly flat and thick noodles. The soup is light, but the taste is not outstanding, a bit blurry. Overall, it's delicious, but not so much that I would want to come back!

Visited during the middle of the day on August 15th, during the Bon festival. There was already a line outside the restaurant. It seems there's always a line no matter when you visit. I ordered the soy sauce wonton noodles. The wontons were large and came in two types: meat-based and shrimp-based. Both had a satisfying taste and were delicious! There were also two types of char siu, both of which were delicious as well. The noodles and soup were perfectly paired, showing the restaurant's dedication to quality. The staff, including young members, were friendly and even wished me well as I left, considering the hot weather outside. From start to finish, it was a pleasant experience. This restaurant is truly exceptional!

The atmosphere of the store is great! The staff's customer service is excellent! Full of cleanliness and stylishness, this is the first ramen shop I've been to with such a great atmosphere and service. I ordered the special soy sauce ramen with wonton and chashu, and it was a perfect ramen where the noodles and broth were completely integrated, not too rich or too light, just perfect. I would like to give it a perfect score, but one of the chashu options and one of the wonton options were not to my liking, so personally, this is the score. This is more like a Michelin star than a Bib Gourmand. My partner had the cold ramen, but it can't be compared to the regular ramen.

I visited the grave in the morning and then had ramen for lunch. The restaurant had a nice atmosphere, with a clean and clear soup for the salt ramen and a strong flavor for the soy sauce ramen. The chicken chashu was tender and delicious, and the garnishes of white leeks and green onions added a nice touch. The staff were friendly and professional. However, the elevator had a strong smell of garbage, which was quite unpleasant. Overall, the experience was good, but the elevator odor was a downside.

Soy sauce ramen for 1800 yen. I visited on a weekday afternoon and was seated quickly. The soup had a nice hint of Japanese flavor, the thin noodles were easy to eat, and the standout was the chashu. There were different types of chashu piled on top of the ramen, with the chicken chashu being particularly delicious. Although a bit pricey, I recommend trying the chashu ramen on your first visit.

I visited after 2 months! The cute girl who always provides excellent service will be leaving this month, which is a shame. The ramen was as delicious as always with its consistent quality. The noodles, soup, toppings like chashu, menma, and seasoned egg were all top-notch. I enjoyed every bit of it and finished the soup as well. I will definitely be coming back next month!
