I received a call from "Michinoku Goro," a legendary reviewer who has been traveling around the country since the early days of Tabelog and is now a YouTuber. He recommended a menu that he found incredibly delicious, so I visited the restaurant the next day. They offer a unique menu of Soki soba, where the flavor changes depending on the cut of meat used. I decided to try the "Yugafu" with a rare "Shirumiso" broth, following Michinoku Goro's recommendation. Another regular customer, Macpon, who also attended the first unofficial Tabelog gathering, highly recommends this dish as well. I ordered the "Yugafu - Shirumiso" for 1,150 yen. The soba noodles are made using a traditional method called wood ash hand-pulled, which is rare in Okinawa nowadays. The dish is made with a focus on health in every aspect. The tender and juicy bite-sized Soki, the gentle natural broth, and the savory and rich miso flavor blend perfectly with a subtle hint of spices. It was delicious! Although it is slightly salty, making you thirsty, the balance of flavors is necessary for the miso flavor to shine. It has been about three years since my last visit, and I noticed changes in the taste, menu lineup, and ordering process, but the friendly and welcoming atmosphere remains unchanged. The restaurant has managed to preserve the flavors of Okinawa while establishing its own unique style of "Fuyusai Okinawan cuisine." Despite being busy, the owner took the time to chat with me and shared some insights. It was a meaningful and enjoyable experience. Thank you for the hospitality.

I tried the Silk Ramen at Yugafu, the owner said it was sour but it actually had a soy sauce ramen-like flavor which I quite enjoyed. I recommend it. I suggest not going on a hot day and not getting the large size, as the place doesn't have air conditioning and eating hot food on a hot day made it quite spicy. My friend got the large size and struggled to finish it as the noodles absorbed the broth, making it seem like it never decreased. It was a funny situation.

In Hokkaido, there is a popular Okinawa soba restaurant for some reason, and I had been curious about it for a while. I ordered a limited menu item, and it arrived fairly quickly. At first, I felt like the dish was a bit lacking in salt, but as I kept eating, it started to taste more and more delicious, and before I knew it, I had finished it all in no time!

When I think of Okinawa soba, I imagine it with 2 or 3 slices of meat on top, but this bowl had lots of meat in it, and the portion was generous! The price of 1150 yen was reasonable for this amount. The couple running the shop, or maybe they were just a cute couple, were very charming and made me feel relaxed, just like when I visited Okinawa. ☺️

First visit♪ When I think of Soki soba, I suddenly feel like eating it for some reason haha. No photos allowed inside the restaurant (but okay for outside and the food). There are various information written at the entrance such as menu and notices. Even now after the pandemic, masks are required and temperature checks are done before entering. It's run by an elderly couple, so I think these precautions are necessary! In addition to the 4 types shown in the photo, there were also daily specials written on a small board inside. I was torn between the popular Urizun and the Soki bowl, but I chose the Soki bowl and soba set = Yunagi bowl set! When it was brought out, I was surprised - I expected a smaller bowl, but it was actually big! The soba had a bit less noodles than usual, but it was still very satisfying♪ The Soki was soft and plentiful with chewy cartilage. And the soba noodles were chewy and delicious! Personally, I would have preferred a stronger broth and less salt, but it's a place I want to visit again⭐︎ Oh, and don't forget to write the same order on both sides of the paper!

When it comes to authentic and delicious Okinawan soba in Sapporo City, look no further than Fuyusai in Atsubetsu Minami. Today, I decided to try the Yuunagi Don Set because I was craving noodles and rice. The Soki Soba has a gentle and tasty soup that I would love to have after a night out in Susukino. The Spicy Miso Soki Don has a rich flavor, but the rice complements it well. There's plenty of meat on top, so you'll feel satisfied. Another satisfying meal, thank you.

It arrived in 11-12 minutes, beautifully presented with small pieces of tender spare ribs on top. The soup had a light animal-based broth with a hint of seafood dashi, perfectly seasoned. The noodles were firm with a smooth texture, easy to slurp. The spare ribs were well-cooked and incredibly tender, especially the thin pieces. The dish was garnished with thinly sliced pickled ginger and chopped green onions. Overall, the dish was delicious, showcasing the chef's skills and care for the customers.

This is a shop located at 5-17-4 Atsubetsu Minami, Atsubetsu-ku, Sapporo, Hokkaido. This was my first visit to confirm the information provided. The building and interior are stylish. They offer a variety of menu items that explore the different flavors of pork, as well as a great value pork bowl set menu. I visited on a Thursday around 11:40 with a friend. There were 3 groups of customers before us. We sat at the counter near the window. We placed our order using a special form. We ordered the "Spicy Miso Pork Bowl and Soba Set". My friend upgraded to a large portion of noodles. The interior of the restaurant is decorated with handmade decorations, which made the time pass quickly. Our food was served in 15 minutes. The noodles and bowl were surprisingly filling, with a full portion for each of us. The soup was a bit light, but the handmade noodles were delicious. The visual presentation of the Spicy Miso Pork Bowl was impressive, with the pork being rich and flavorful. It's safe to say that we came here for this dish specifically. It was truly delicious. Thank you for the wonderful meal!

The hand-made noodles had a firm texture and were enjoyable to slurp. The generous portions of pork cartilage provided a satisfying chew. As Sapporo gets hotter, I may not be in Okinawa, but I look forward to coming back to this place for another visit when I need to replenish my salt intake after sweating.

This is a shop I've wanted to visit for a long time, especially since it's in my neighborhood. I ordered the "Urizun" and the Shikwasa juice (totaling 1500 yen). "Urizun" had more meat than I expected, with about 10 pieces of 3x2 cm size cubes. The menu mentioned a good balance of meat and bones, but the soft bones were actually collagen-packed and very tender, requiring almost no chewing effort. The meat had a grilled surface but a gentle, light taste of the soup, which was surprisingly delicious with the natural flavor of the meat. The soup had a unique taste, not like dashi or other common broths, but more like a mineral-rich, clear and refreshing broth with a strong umami that faded away smoothly. The noodles were quite soft and delicate, with a slightly chewy texture and a thin square shape. Although lacking in firmness, they complemented the soup well. The Shikwasa juice was quite sour but tasty. The hot spring water, sourced from fossilized coral, was also unique in flavor and very refreshing. I recommend trying the water over regular water. You can opt for a larger portion of noodles or order the Shikwasa juice with the noodles. The limited menu that day was taco rice, which was not prominently displayed. No photography was allowed inside, only of the ordered items. Customers must remove their shoes before entering and undergo alcohol disinfection and temperature checks. I ordered the Karasan Don Set for 1130 yen (including Okinawan soba and spicy miso pork bowl). While waiting for the food, I read about the shop's commitment to using wood ash in their Okinawan soba, a traditional method that is becoming rare due to the difficulty of obtaining the ingredients. The food was served after about 10 minutes, and the aroma of the spicy miso pork bowl was enticing. The soup, although not explained in detail, was clearly free of artificial seasonings and had a rich flavor that was enjoyable to drink. The noodles, with their unique texture and flavor, along with the well-cooked pork bowl, were incredibly delicious. It was my first time trying it, and I was extremely satisfied with my choice. I would like to visit again to try all the menu items. When searching for Okinawan soba nationwide, this shop was ranked first on Tabelog on the day I visited and even now. The soup had a refined soy sauce flavor with hints of animal-based dashi and light fish stock, and surprisingly, it was not too salty. The noodles were slightly thinner and had a soft texture, which paired well with the soup. As for the toppings, they resembled those of Sabani from Okinawa, with tender pork cartilage, fatty tofu, grilled leeks, finely chopped leeks, and thinly sliced ginger. The arrangement of the toppings even depicted the shape of Sabani. Traditional Okinawan soba is usually soy sauce-based, and there are only a few places on the main island of Okinawa that serve it, so I was delighted to be able to enjoy it here in Sapporo.
