I love dishes with demi-glace sauce, such as beef stew, hamburg steak, shrimp fry, cream croquette, potage, gratin, and more. The origin of this preference lies in this restaurant. When I was a child, my family used to dine out here every weekend, as my father had a connection to this place since its opening. I remember it was located a bit further back on the Kamiyama-cho side across the industrial road from the current location. My favorite dish back then was the tongue stew (I think it was called "red wine-braised beef tongue" on the menu), with its tender tongue soaked in slightly bitter demi-glace sauce that melted in my mouth, providing a luxurious dining experience. I also used to order gratin, potage soup, hamburg steak, spaghetti with meat sauce, and more. The flavors of demi-glace sauce and bechamel sauce that I learned here have stayed with me. After the restaurant moved to its current location, I lost the opportunity to visit due to my family circumstances, and I moved to Tokyo for work. It has been 30 years since I last visited. Recently, I heard that the restaurant was still in operation, so I revisited it with a mix of nostalgia and uncertainty about whether my memories had been idealized. The current establishment is new to me, but I could spot some furniture and decorations that reminded me of the past. It's a retro-style Western restaurant that exudes a Showa-era charm. I ordered the tongue stew and potage soup, and when I tasted the soup, it was exactly the same as I remembered - delicious and unchanged. When the tongue stew arrived, I cautiously took a bite and was struck by the familiar flavor that hadn't changed over the years. It brought back a flood of memories, and I almost felt like crying. It was still delicious, just as I remembered it. Despite having tried various upscale dishes in Tokyo, such as those at Ginza's Nanban Ginen-tei and Akasaka's Tsutsui, I can confidently say that the food here is delicious. Perhaps it's just my personal preference, but I genuinely believe that the dishes at this restaurant are exceptional. If you ever decide to visit this place, I recommend trying their dinner menu on a leisurely day instead of opting for the affordable lunch sets. The quality of the food here is truly remarkable. I will definitely visit again when I return to Hakodate.
