This is the third review, so I will keep it light. "Chinoya" is a food company established in 1883 in Fukuoka Prefecture. Originally started with soy sauce production, they also ventured into agriculture. They later opened a restaurant serving natural food using crops they grew themselves and fresh local ingredients. The restaurant is called "Chinoya" with a thatched roof. They also sell condiments, dashi, and sauces similar to the ones used in their dishes for customers to recreate the flavors at home. They do not use artificial seasonings or preservatives. This "Chinoya Daimaru Sapporo Store" is where they sell these products. The store has a luxurious feel with a dark gray color scheme.
They recently announced the construction of a factory in Ebetsu City, with completion scheduled for the end of May 2021. The construction cost is 5 billion yen, and they plan to develop new products using Hokkaido ingredients. This is a good business for Hokkaido, and I want to support it. They used to offer tastings in the store, but I haven't seen them since the pandemic. I used to enjoy trying the samples and then choosing products based on my preferences, but unfortunately, that is not possible now. They also sell the "Chinoya Ebi Dashi" limited to Sapporo. I am tempted by the limited edition label, but I ended up buying the regular "Chinoya Dashi" that my family always uses.

It is a powdered mixture of ingredients in a tea bag form. Ingredients include bonito flakes, dried sardines, grilled horse mackerel, sand lance, dried kelp, and powdered soy sauce. Boil to extract the dashi. Each bag contains 8g and makes 250ml of clear and beautiful dashi. With the grilled horse mackerel, it has a fragrant and natural flavor. The dashi alone tastes great. Price: 30 bags for 1,944 yen (tax included)
"Chinoya Dashi" has become a staple for miso soup in our house. When using the dashi to make miso soup, it turns out delicious with a flavor close to the restaurant's miso soup. Recently, I have been using it without extracting the dashi, resulting in a strong and rich dashi flavor. Personally, I prefer this method. I always end up having seconds. There are various condiments and dashi available nowadays, but I feel reassured knowing that they do not contain artificial seasonings or preservatives. Next time, I might try the "Chinoya Ebi Dashi" limited to Sapporo. It was a delicious meal.
