Feast Travel Part 10 - Visit to Hokkaido in 2022 at night. The place is located right outside the Nishi 18-chome station on the Sapporo Municipal Subway. This restaurant is by reservation only and only allows one seating per customer, so reservations are required if you want to go. The reason for the reservation-only policy is that they dismantle the lamb purchased during the day only for the reserved orders of the day, offering lamb meat with a serious emphasis on freshness. Just that alone gets you excited, right!! When you enter the restaurant, it looks like a Genghis Khan (grilled lamb) restaurant, with plenty of smoke, so if you don't like the smell, you should consider your attire before going. There is a place where you can hang your outerwear on a hanger where the smoke does not reach. Now, here are the impressions of what we ate: 1) Raw lamb sashimi 1,190 yen - It seems like it was just dismantled by the owner while we were eating Genghis Khan... Freshness... Amazing!! The cut is from the loin, but the taste is seriously like horse sashimi!!! Refreshing, no hint of any peculiar taste, just rich in flavor!! This is the menu that symbolizes this restaurant. I think it's hard to find lamb of this quality elsewhere!! 2) Raw lamb meat 1,190 yen - It's finished rare in 20 seconds on one side, and it's good to eat. When you actually eat it, even though it's a lean cut, the flavor is concentrated and there is no hint of raw smell. This is exquisite!! A true specialty!! 3) Lamb shoulder loin 1,310 yen - This meat has plenty of fat, so when grilling it, the fat drips down, making it quite juicy, but when you eat it, it's refreshing and you can eat as many pieces as you want. Again, because the quality of the meat is good, there is no peculiar lamb smell!! This is also delicious!! 4) Lamb skin 1,190 yen - This menu includes not only the skin but also the meat around it. When well grilled, it becomes crispy and juicy, with a good balance of the deliciousness of the meat and the richness of the fat. This is a dish that can be offered only because it is dismantled and prepared at the restaurant!! Delicious!! 5) Lamb breast gland meat 1,190 yen - This is the part known as the "shibire" (numbing) and when you eat it, it's surprisingly creamy!! It has a creamy texture similar to liver but without the unique taste. This was quite different from the loin, with a different richness! Delicious!! 6) Assorted vegetables (onions, long green onions, bean sprouts, cabbage, garlic) - These vegetables, stir-fried with the fat that comes out when grilling the shoulder loin, are unique to the restaurant, with a light but flavorful sauce that goes perfectly with the vegetables! You can eat this vegetable stir-fry endlessly!! 7) Lamb meat hamburger (1 piece) 250 yen - This has an even stronger flavor, like a lamb meat yukhoe, and it goes incredibly well with rice!! It has a hearty and rich flavor, so as someone with a child's palate, this might have been the most delicious! When you visit this restaurant, this is a must-order!! Overall, the unique salt sauce that the restaurant puts on the meat has a French-like quality, enhancing the flavor of the meat. It has a mysterious power to make you feel like you can keep eating without getting tired. Anyway, this restaurant is a place where the owner personally dismantles the meat during the day and provides lamb meat with outstanding freshness and quality, so the quality and freshness of the meat are outstanding, and the taste is unique to this place, more like "only one" than No. 1 Genghis Khan!!
