I will have lunch at "Kokotsunagi" today! This area is a fierce battleground for ramen, with shops like "Haruta" and "Kou" (originally one character in kanji so there is no way to hide it), I haven't been to many of the shops yet, so I'm spoiled for choice! It's really popular, so it was a good idea to line up early. I purchased a ticket for "Kitakata Ramen (¥880)" from the ticket machine! I really wanted to order this item, I wanted to experience the excitement of Kitakata Ramen I had on my trip to Tohoku two years ago again! The ramen I ordered was revealed in about 3 minutes! The clear brown soup is beautiful... there is no oily feeling at all, it seems gentle on the body! When I took a sip of the soup, I felt that the flavor of pork bones and dried fish was not assertive, but rather restrained. It has a light taste with umami that gradually comes through, and you can feel the richness. The clean atmosphere is proportional to the fact that it does not cause indigestion and has a gentle taste that permeates the body! The Kitakata ramen I had two years ago was a thick type with plenty of back fat, which enhanced the sweetness of the fat without interfering with the soup, but this one that removes the strong taste and heaviness is also good. The noodles are thick, flat, curly noodles, which are the best for Kitakata Ramen! With a high water content, they are firm and chewy, with a chewy elasticity and firmness that is irresistible, and you can even enjoy the taste of wheat in the noodles! The fishy umami unique to seafood is included in the soup, so the noodles are well coated! The chashu is the modern type of ramen that is often seen, which melts in your mouth as soon as you bite into it, revealing the sweet flavor of the fat and the smooth texture! If you want to be fully satisfied, it is a must to add extra meat for 350 yen! The menma was a dark brown color, but it wasn't too salty, so maybe it was meant to be eaten with the soup. This may divide opinions as it has a crunchy texture. Next time, I might try the miso, salt, or oil ramen, I guess I'll have to check SNS for limited ramen. Thank you for the meal.
