飛んだ決まった
In April 2019, I visited a sushi restaurant called "Sushidokoro Kuan" located along Hanagin-dori in Otaru City for the first time. I remembered being told by the head chef of a certain sushi restaurant that they were relocating, so I decided to visit for lunch. The new location is near the soba restaurant "Ichifuku", and while there is no parking lot, there is a coin parking lot nearby where you can park one car in front of the shop. The interior of the restaurant has a counter with 6 seats and 3 table seats. Looking at the menu, there are 5 types of nigiri sushi (ranging from 1,600 yen to 5,000 yen), and I chose the second from the bottom, "Sakura", as it is spring. The "Sakura" set (2,500 yen) included chutoro, hirame, hotate, kitamai, (medium) botanebi, squid, tsubu, zuwai, ikura, and uni. All the ingredients were fresh and of good quality, typical of Ezo-style sushi, and I had no complaints. The rice was lightly packed and fell apart in the mouth as soon as I took a bite, so I ended up eating with my hands instead of chopsticks. After finishing the meal, I noticed a botanebi lying in the case and requested the "Flying Special" that I had also tried at "Orizushi" nearby. Yes, it's the combination of shrimp head and uni gunkan! Uni is a great ingredient that goes well with many things, and the combination with shrimp head was exquisite. I had a chat with the head chef, whom I met for the first time this time. He is originally from Biei in Shakotan and trained at "Masazushi" in Otaru before becoming independent. He operated in Hanazono for about 10 years, but had to move here because the main store of a certain kamaboko shop was being renovated and torn down. The flow of customers is completely different from the previous store, so it will be tough to get used to, but they offer courses and a la carte dishes in the evening, with the white shrimp tempura being highly recommended. I will have to come back at night next time.
