I visited a sushi restaurant in Niseko for dinner, which my friend had made a reservation for. We arrived 30 minutes before the opening time and waited at the bar area. Then we were seated at the counter in the dining area. I decided to try the sushi and crab kaiseki course. I ordered a green tea highball. In this area, whiskey is usually used to mix with green tea, which was a unique experience for me. The green tea highball had a strong green tea flavor and was quite delicious.
Next, we had the kaiseki course which included appetizers, soup, and crab dishes served one after another. The crab included one leg each of snow crab and king crab, both with thick and meaty flesh that was delicious in its natural taste. Then came the sushi. They served a variety of Hokkaido and Kishu ingredients. I mostly left it to the chef's choice, but they also asked for my preferences. My favorite was the herring sushi. The tender herring had a surprising delicious taste that I had never experienced before. Since I focused mainly on sushi, I felt like I needed more, so I added a shrimp sushi at the end. I would like to visit again in a different season to try other ingredients. Thank you for the wonderful meal.
