In August in Sapporo, after visiting a farm produce market, having soup curry, and eating at a conveyor belt sushi restaurant, it's time for "ramen" at Shinmen Hodaka in the Sapporo area. I have visited this place many times and it is one of my top 3 ramen shops in Sapporo. My favorite flavors lately are miso, salt, soy sauce, and chicken soy sauce in a ratio of 6:3:0.5:0.5. This time, I ordered miso ramen and my wife ordered miso ramen with extra noodles. The appearance of the ramen is great as always, with a rich and flavorful broth and chewy, curly noodles. The toppings include chashu with a hint of ginger on top. The soup has a mild oil film on top, typical of the Muranaka style, but the rich and deep flavor is still there. The chashu and minced meat toppings were delicious, and I even enjoyed changing the flavor by mixing in the ginger towards the end. Overall, it was a satisfying meal at Shinmen Hodaka.

I had the Miso Chashu Ramen (1080 yen). The soup has a rich umami flavor with a hint of miso aroma, and it's not greasy but rather gentle. The medium-thick curly noodles are slightly soft, and the stir-fried bean sprouts and onions are crunchy, giving it a pure and refreshing taste. The chashu has a firm texture and a meaty flavor. The Chicken Shoyu Ramen (830 yen) has a strong chicken flavor but also a gentle soup that tastes delicious. It comes with medium-thin curly noodles, naruto, fried tofu, spinach, all of which have a traditional yet tasty flavor. The quiet and calming atmosphere is also nice.

This was my third visit (although my food log says it's the fourth) and I had the salt ramen. In my opinion, this place serves the best miso ramen! The salt ramen here is similar to the one at Kaimei in Ebetsu. It's light and refreshing. The service is still great, there's no shouting coming from the kitchen, and the flow of customers in and out is smooth and pleasant.

Second visit. This time I had the refreshing soy sauce ramen. Located near Nango, the soy sauce ramen at Ichijiku is similar but I personally think it's even more delicious. The water is also tasty, even when cold. If you come to this restaurant, I recommend trying the miso ramen next time! I'll try the salt ramen next.

Currently, the menu for 2020 is being displayed, but the prices have been increased. The menu consists of miso, salt, soy sauce, chicken... I order chicken soy sauce ramen. When the ramen arrives, I immediately smell a scent of kerosene (?), which I personally do not like. The noodles, I quickly recognize by the smell, are like the old-fashioned Sapporo ramen noodles, yellow and curly. The taste is as expected. The soup doesn't have a strong "chicken" flavor, and the taste is also old-fashioned.

In August 2023, I visited a popular ramen shop called "塩" along Nango Street, with a rating of 3.62 on Tabelog. This shop specializes in pure and clear broth ramen, which always attracts a long line of customers. The interior of the shop is clean and the kitchen is spotless. You purchase your meal ticket from a vending machine, with the ramen priced at 830 yen. The shop used to sell ramen for 1000 yen, but now it's more affordable at 830 yen.
Although the shop is known for its miso ramen, I always stick to my favorite, the "塩" (salt) ramen. The soup has a subtle sesame flavor, with a light and not too greasy broth. The appearance may be deceiving, but the soup is actually quite gentle and light. The crunchy bean sprouts add a nice texture, and the char siu pork is tender and flavorful. The noodles are cooked perfectly, with a firm and chewy texture that is typical of Sapporo-style ramen.
Overall, the quality of the food is consistent and I would love to eat here every day. The flavors are mild and comforting, truly living up to the reputation of this popular shop. Thank you for the delicious meal!

A popular "pure sumi style" restaurant. The owner is said to be from "Sumire Susukino" shop. Visited at 12:40 on a weekday and the restaurant was almost full, but managed to get in smoothly as they were just changing customers. The interior has a casual atmosphere with counter and table seats. Purchased the "Miso Ramen (830 yen)" from the ticket vending machine inside. It arrived in about 10 minutes. The soup, as expected from pure sumi style, had less oil film (lard) and was mild but extremely hot. It was a bit difficult to taste the richness in the first half due to the heat of the soup, but gradually the umami flavor increased and it became delicious! In the second half, I melted the ginger on top of the chashu for a slight flavor change. The noodles were the classic yellow medium-thick curly noodles, providing a sense of stability. I couldn't tell which noodle factory they were from, Mori-zumi or Nishiyama. The toppings included tender chashu and sliced chashu, both well-prepared. Thin menma, crunchy bean sprouts and onions, and slightly coarse minced meat at the bottom. The service was polite and I was quite impressed. Overall, it was a delicious bowl with a balanced taste of mild "pure sumi style" with a good depth of flavor. However, personally, I prefer a slightly richer flavor.

Today, I went to a place that I haven't been to in a while. They are known for their miso ramen, but their salt ramen is also delicious. I really like the chashu pork here. The restaurant is called "眞麺穂高" and it is located at 4-2-15 Higashi Oyachi, Atsubetsu-ku, Sapporo, Hokkaido. They are open from 11:00 to 15:00 and from 17:00 to 20:00, closed on Mondays (or the following day if it's a holiday). They have parking available. It's a pretty good place around the Nishi 20-chome area of Sapporo. I searched and visited this restaurant because it was close to my workplace. I don't eat ramen enough to talk about its intricacies, but as a regular person, I enjoyed the light salt ramen soup. I visited the restaurant around noon on a weekday and there were about 2 groups ahead of me, but I was seated fairly quickly. The soup with chashu was very delicious. It looked rich, but was surprisingly not heavy and easy to eat. The chashu was tender and really tasty! I would definitely like to revisit this place when I go to Oyachi.

On a regular day at 11:40, there were already two people waiting ahead of me at this popular restaurant. As I thought about that, by noon, customers started pouring in. It's really popular, haha. I encountered this place during my fieldwork today. Surprisingly, the owner used to work at "Sumire." So when I saw they had a limited quantity "Chicken Shoyu" ramen, I, a chicken enthusiast, knew I had to go for that! I ordered the "Chicken Shoyu Chashu Ramen (1080 yen)" at the ticket machine. With 5 seats at the counter and 4 tables for 2 without sharing, it's a bit inefficient, so I had to wait a bit. And then, the ramen was served with a bang. At first sight, I was like (^ω^) oh! It had a lovely appearance. As I slurped up the soup with the spoon, I could feel a faint taste of chicken, and as I drank more, I felt a deep, delicious flavor grabbing hold of me. It's light yet so captivating. A wonderful type that leaves happiness in your mouth for a long time. I really like it. I didn't feel the "Sumire" essence in this soup (in my opinion). The tender chashu that falls apart is fantastic! I usually don't like chashu that falls apart, but this one is exquisite! The noodles are slightly thin, easy to slurp, and delicious. Everything in the bowl is top-notch. Grateful to have encountered such an exquisite bowl. Next time, should I go for miso or stick with the chicken for a repeat? Already, I'm daydreaming about my next visit.

I ordered the "Miso Chashu Ramen" for 1,080 yen, which I had seen in photos from other reviewers and looked delicious. The ramen arrived in a plain white bowl on a plain white table. At first glance, it looked like something you would get at a casual eatery. The soup was hot and had a light but deep flavor, making me want to drink it all at once. The noodles were medium thickness and had a slight curl that picked up the soup well. It reminded me of the ramen at the "Sumire" where the owner trained. The most distinctive feature of this ramen was the chashu. It was so tender that it would bend when picked up with chopsticks, and it had a melt-in-your-mouth texture with just the right amount of fat. The menu only offered rice, with no extra items like gyoza or fried rice. It was all about the ramen here, with options for miso, salt, or soy sauce flavors. Surprisingly, many people around me ordered the soy sauce ramen, which must be delicious too.

I visited a restaurant in Atsubetsu that I was interested in. I had a late lunch at 2:30 PM, but there were already 3 groups of customers in the restaurant, so it seems to be a popular place. I ordered the miso ramen (830 yen), and the soup was light but had a depth of flavor that was incredibly delicious. The chashu was tender, and there was also a rolled chashu included. Ginger was added towards the end, and it paired well with the dish. Surprisingly, I ended up finishing the soup completely. It was a delicious meal.

Initially, I was planning to go to "Shoyuya Honten," a sister shop of "Oton Shokudo" in Ebetsu, but ended up going to "Hodaka-san" in Otani, recommended by my companion. When we arrived, about 20 minutes before opening, there were already two groups of customers waiting. It's a popular place. There is ample parking available. When it was time for opening, we entered. The shop has 5 counter seats and 2 tables. It's a small place. During the first round, there were 4 groups and 9 people. Except for the special menu chicken soy sauce, all dishes came out at the same time. The shop has high ratings on Tabelog. The food was indeed delicious. However, after eating, there were many pieces of cut noodles left at the bottom of the soup. All at once... I understand, and there were many people waiting outside the shop as well. It felt a bit wasteful. I had the soy sauce which was delicious, and my companion had the miso soup which was exquisite. However, it felt a bit messy? The shop is popular, and not very big, so I can understand. I would like to give this place another try.

You purchase your meal ticket at the ticket machine near the entrance. They have counter seats and table seats. I ordered the "Miso Chashu Ramen (1,080 yen)." It was a bit different from the typical chashu ramen, but the delicious miso chashu satisfied my taste buds.

I finished my business in Shin-Sapporo and on my way back, I stopped by Hotaka-san along Minamisato-dori for a second round of lunch. I had no plans to come here at all, but when I passed by, I was drawn in by the unexpectedly empty parking lot in front of the restaurant and decided to go in. (The restaurant was almost full... I wonder if everyone walked here?) Since I didn't prepare in advance, I simply ordered the soy sauce ramen today. After about 10 minutes, the soy sauce ramen was brought to me. Lately, I have been looking forward to the deliciousness of this jet-black soy sauce ramen. The soup was close to the best I've ever had, with a rich flavor! The chashu was so tender that it fell apart just by touching it with chopsticks, and it was incredibly delicious, but the noodles didn't seem to blend well with the soup, so it felt somewhat unsatisfying. Maybe I expected too much from the noodles because the soup was so delicious.

I'm not sure what "Junsu Midaka" is, but I love Sapporo miso ramen. It has a strong ginger flavor and a nice aroma, making it more refined compared to others in the same category. It's a good kind of junk food. When I was a child, I used to dislike this thick Sapporo-style noodles, but good things are good after all.
