A long, narrow shop facing the back. Run by a quiet old man and a friendly landlady. Ordered "Chicken Ramen with White Soy Sauce and Flavored Egg (1100 yen)" from the ticket machine next to the entrance. The dish was quickly prepared and served. The owner kindly advised to hold the bowl from the top. The aroma of the chicken soup was strong and delightful. The soup was clear yet had a distinct soy sauce flavor, creating a unique combination. The thin, soft noodles resembled simmered somen noodles rather than typical ramen noodles. The pork chashu was light and tender, and to my surprise, there was chicken chashu hidden underneath. The soft-boiled flavored egg was rich and flavorful. Everything was so delicious that I almost considered ordering another bowl, but decided to try a different restaurant instead. Overall, it was a happy day enjoying the delicious chicken soup at this shop!

I finally visited a restaurant I had been curious about! The parking lot was conveniently located nearby. I ordered the "Chef's Recommendation" which was the "Shoyu Ramen with flavored egg". The soup was perfectly balanced, the noodles had a nice texture, and the flavored egg was delicious. The presentation was also great, and the aftertaste was excellent! I want to try other menu items as well!

Miso ramen is popular even though white soy sauce and soy sauce are popular. This time, I deliberately had miso ramen. The light soup is definitely delicious. The more you drink, the better it tastes. The moist chashu pork is a bit strong. The noodles are thin straight noodles like Ippudo's, with a good firm texture and smoothness, but they are a strange type of noodles. It's 1050 yen for this, and the bright atmosphere isn't bad either.

I ordered Chicken Ramen with White Soy Sauce and a seasoned egg (1,100 yen) along with a regular-sized meat rice bowl (380 yen) for a total of 1,480 yen at this restaurant that won the Michelin Guide Hokkaido 2017 Bib Gourmand award. When I arrived around 1 pm on a weekday, there were no other customers. I was a bit worried, but I ordered the Chicken Ramen and meat rice bowl from the ticket machine. The food arrived quickly, and I was pleasantly surprised by how delicious it was! I loved the clear noodles in the chicken ramen, and the generous portion of meat on the rice bowl was fantastic. It felt like a great deal. I would definitely want to visit again if I'm nearby. Thank you for the meal.

On the way back to the company from Ishikari, I tried to have lunch at "Araton" in the central market, but the market parking lot was full. There were also many buses parked, giving a sense of tourism revival, so I had to retreat. Since I was in a car, I headed to "Sakurajima" in Nishino, but the parking lot here was also full (tears). Finally, I arrived at "Ramen Takuma" as the third option. The parking lot in front of the store was empty and I was able to park safely. The clear golden soup with neatly lined noodles. Mitsuba placed next to the lean pork. And when I tasted it, I was even more surprised! I visited Takeuma for the first time. I tried the most popular dish, Chicken Ramen with White Soy Sauce. It was my first time trying a light ramen as I usually prefer rich flavors, but it was just right for me as I was feeling a bit hungover. The noodles were thin and the soup was clear, making it a guilt-free ramen experience. The service by the owner's wife was also very pleasant and left a good impression. Thank you for the meal!

I went to the restaurant after receiving limited information on LINE. This time, I tried the Nagaoka-style ginger soy sauce ramen, which is a local ramen from Nagaoka City, Niigata Prefecture. I ordered the limited option 2 and also couldn't resist ordering the Nikumeshi (meat rice). I apologize for ordering at the last minute... The dishes were quickly prepared and they looked delicious. The soup had a nice balance of not being too sweet, with a hint of sweetness from the lard. When you mix in the ginger, the flavor intensifies and the whole dish comes together. The ramen was topped with chashu, menma, green onions, seaweed, spinach, and a seasoned egg - plenty of toppings. It was so delicious! Of course, the regular menu is also tasty, but I won't miss out on the limited items! Looking forward to the next limited edition! Thank you for the meal.

I tried the most popular "Chicken Ramen with White Soy Sauce and Flavored Egg"! My companion had the owner's recommendation, "Shoyu Ramen". The "White Soy Sauce" soup seemed light at first, but it had a solid soy sauce flavor that was not apparent from the photo! It felt quite rich. The golden-colored oil on top was shining, and it was not too heavy, which was nice. The noodles were straight as shown in the photo! They were smooth and slippery. It was delicious! The soup and noodles matched well, and I finished it in no time. It looked like salt but tasted like soy sauce, a strangely satisfying ramen. By the way, my companion's "Shoyu Ramen" seemed to be made with dried fish. It had a solid seafood soup base. And the "Niku Meshi" had meat on top of the rice! This was "Simmered Chicken", a must-try dish. It's a delicious Japanese dish that you should have as a side dish with rice! When I looked closely at the food ticket, I realized that it was a specialty of "Ramen Takuma"! It was perfect! Overall, I enjoyed the meal very much. Thank you for the meal.

The back fat ramen is my second time trying it, following last year. The noodles are thick so it takes a bit of time to cook. The back fat wasn't as heavy as the name suggests, it felt like a refined fat. The soup was carefully made with a rich broth. The noodles, fat, and soup had the perfect balance and were delicious. Recently, the coupon has changed to Tukutuku, and when I registered, I got a meat rice bowl. This was also delicious!

The richness of the pork back fat and the sweetness of the onions add a nice touch. The spiciness also enhances the flavor as you progress through the bowl, making it a satisfying meal. You can add onions for an extra 50 yen, which is highly recommended. I was surprised by the thick noodles in this ramen, but they provided a great chewy texture. Overall, highly recommended.

Upon entering the shop, there was a ticket machine to the left with a handwritten declaration stating that they do not accept requests for firm noodles. I chose the Chinese soba for 950 yen and it was served at 17:22 on Friday, April 21, 2023. I finished eating the noodles by 17:25 and completed the meal by 17:28. The noodles were not exactly what I expected, but they reminded me of the Chinese soba I used to enjoy in Sendai. I have been wandering in search of noodles like these, reminiscent of the simple and delicious 100 yen ramen I used to have at "Super Asamitsu" next to a shrine in Asahikawa. Back then, I didn't pay much attention to the soup but focused on how delicious the noodles were. Nowadays, starting with the soup is like a suicidal act of burning your mouth. It's a shame to see people using utensils like ladles to drink the soup first. This brings back memories of the original Ramen Jiro, where people ate noodles without using ladles, just like I did.

Today, I chose the meat rice without hesitation as I am moving my body. I also added extra chashu with this month's coupon. I chose white soy sauce. The soup is light but flavorful. The noodles are cooked just right. They have a good texture. The chashu is also tasty. The sauce for the meat rice is delicious. I couldn't eat the Yamagata spicy miso ramen last time, but it was back on the menu! Today, with my wife and kids out of the house, it was the perfect opportunity to go. I finished work quickly and made it just before the last order. I ordered the limited edition ramen and extra chashu rice through the ticket machine. I also used a LINE coupon to get extra noodles. I sat down and listened to the Fighters game on the radio while waiting. After a while, the ramen was ready and it was delicious! The first bite was so good. The garlic flavor was strong but not overpowering. The noodles were flat and medium thick, perfect for soaking up the soup. The spicy miso had a gentle heat, and the chashu rice was also tasty. Popular restaurant in the western part of the Yamate area. I visited the restaurant before and had trouble finding a parking spot, so this time I arrived before opening hours. I ordered the limited "Bara Niboshi Chashu" for 1100 yen, which is inspired by a ramen shop in Aomori. I also used a coupon from their Line account to order a Chashu rice bowl. [Soup] The soup, made with Aomori dried sardines, is not very fishy. The appearance and chashu reminded me of Kitakata ramen. Honestly, it was a tasty but forgettable niboshi soup. There are other popular shops with similar flavors, so it may appeal to many people. [Noodles] Thick noodles with high water content. They were smooth and chewy, very delicious. The noodles were also similar to Kitakata style. [Chashu] Thinly seasoned pork belly chashu. The meat lacked flavor. [Flavored Egg] The soft-boiled egg was perfectly runny and had a nice depth of flavor, very tasty! [Chashu Rice Bowl] The chashu was soft but dry. I personally don't prefer this type of texture. [Overall] Despite being a busy and popular restaurant, I appreciated that they asked if I had any coupons when ordering. I preferred the chicken soba I had previously, rating it a 3.7, while the niboshi ramen this time was a 3.3. Taking an average, I rate it a 3.5. Thank you for the meal! 🍜

I received a notification on LINE about a limited ox tendon Chinese ramen, and I've been wanting to try it someday. Today, I had the chance as I was eating alone for lunch and the weather was nice, so I decided to walk there. I ordered the limited number 3 button on the ticket machine. When I come here, I can't miss out on the meat rice, so I pressed the meat rice button. First, the meat rice was ready, followed by the ramen. The soup was beautifully clear as always. It had a light taste with a rich flavor spreading in my mouth. And most importantly, the ox tendon. It was simmered well and was very tender! It was absolutely delicious! The price was a bit on the higher side as mentioned on LINE, but the satisfaction level was quite high. It seems to be available until around the 26th, so if you're interested, definitely give it a try! Thank you for the delicious meal.

On the second day in Sapporo, around 9:30 in the morning, I received a message from Takama-san on LINE. It said, "Today is the 19th, which means it's Maikai Chuka Soba Day." Well, I must go try it since I've been wanting to. I quickly left the hotel, took care of some errands, and headed towards Kotoni. I arrived around 10:45, and although the first two parking spaces were taken, there were three spots further away that were empty. The weather was fine, so I lined up as the fifth person in the queue. The curtain was lifted, and after a short wait, I ordered the "limited edition" Maikai Chuka Soba at the ticket machine and handed it to the staff. The order was complete, and I sat at the counter. After about 10 minutes, the bowl was served. It looked similar to the beef tendon Chuka Soba from the previous day, but I believe there was chicken oil floating on top. It came with two slices of char siu, menma, wood ear mushrooms, and a flavored egg. I took a sip of the white soy sauce-based soup. Wow! This is delicious! The various elements combined to create a fantastic flavor, making it the best white soy sauce-based ramen I've ever had. To think they call this a "Maikai" dish, what a luxurious menu. The low-temperature cooked pork shoulder char siu was thinly sliced and smooth. The wood ear mushrooms were thinly cut, providing a nice texture that complemented the dish. The medium-thin noodles were smooth and slurp-worthy. The soup had a great depth of flavor. The level of perfection in this bowl is incredible. There is no compromise in the taste of both the regular and limited menu items. I finished every last drop, left the restaurant, and savored the experience in my car before heading to my next destination.

I arrived in Doto before 1 pm, stopped at two places, and it was already 2:30 pm. Since it had been about 4 hours since breakfast, I decided to have lunch at Takama, which is open all day on weekends. Even though it was this time, the parking lot was empty. However, inside, there were only two empty seats, reaffirming that Takama is indeed one of the top restaurants in the Nishi ward. This time, I ordered the limited-time "Beef Tendon Ramen" by pressing the button for option 3. I also added a seasoned egg with a LINE coupon. The ramen was served in about 5 minutes. The clear soup with simmered beef tendons, and the green Kyoto-grown Kujo negi, looked very appealing. I took a sip of the soup, which had a distinct beef flavor, and the richness clung to my lips. It was quite delicious, but I found it a bit too salty for my taste. The noodles were the usual chewy type, thin and with a high water content. The timing of serving them was perfect, as they didn't stretch easily, showing the chef's confidence in their preparation. The tender beef tendons melted in the mouth, still retaining their deliciousness after being simmered thoroughly. The elegance of the Kujo negi was a perfect match for this bowl. Overall, it was a tasty bowl of ramen, but I would have preferred it to be a bit less salty. *It will be available until the end of February.

Second visit. Last time it was salt, but this time I went for the white soy sauce flavor with seasoned egg set for 1000 yen. In conclusion, there is nothing to complain about with this ramen. It is a well-crafted, complete taste that I believe will remain unchanged in the future. The soup is mainly chicken-based, but the richness of the white soy sauce gives it a refreshing taste. There are two types of chashu, pork and chicken breast, both marinated in brine and cooked evenly, following a traditional and orthodox style. In every aspect, there is skill and no cutting corners, with a clean and slightly old-fashioned yet modern ramen feel. Simply a delicious ramen.

The moment the Chicken Soba with White Soy Sauce and Flavored Egg arrived, I was mesmerized by its beauty. The soup was incredibly clear. The noodles were thin and straight, similar to hiyamugi noodles. Straight noodles actually absorb more soup, as scientifically proven. There are two types of chashu, but the chicken chashu was particularly excellent. The flavored egg was also outstanding. I'll have to try the soy sauce version next time. By the way, today is Christmas Eve. Ramen shops are usually less crowded on Christmas Eve, so it might be a good time to visit. Every year on Christmas Eve, I make it a point to go to a ramen shop that usually has long lines.
