I arrived at Sapporo Station at 13:30, one flight behind my friends, after handling important matters. I splurged on a taxi and made it just in time at 13:55. As soon as I entered the restaurant, the curtain was drawn behind me, with a few customers inside. Two women were cooking and serving. When I asked for recommendations, they suggested the popular soy sauce ramen. I ordered the soy sauce ramen. The staff cooked the noodles in a hot wok, sautéed vegetables separately, and then assembled the bowl with care. The ramen was piping hot, making it a challenge to hold. The garlic pork bone broth was surprisingly mild, different from recent trends, but the gentle flavor was delightful. The staff's thoughtful service, such as pulling out chairs for our bags, was a nice touch. The noodles were wavy and thin, offering a chewy texture and absorbing the soup's flavor well. The menma was thick and crunchy, the chashu had a satisfying bite, and the vegetables were crisp. It was a classic Sapporo ramen with a unique twist in the soup and a meticulous preparation of the vegetables. Among the ramen in Sapporo, this one matched my taste preferences quite well. In the Tanukikoji area, where legendary ramen shops from the early days of Sapporo ramen are located close to each other, there is a place that carries on the taste of "Tomikou" on Tanukikoji 7-chome. I arrived around 12:15 on a weekday and there were empty seats at the counter. For over 30 years, the almost default choice has been the blue shiso soy sauce ramen. Today, I also asked for a small portion of rice. The master's work with the Chinese wok, burnt lard, onions, and bean sprouts is always a pleasure to watch. The soup is not too heavy, the Sapporo soy sauce flavor is delightful. The noodles are slightly thin with a gentle wave, and they go well with the crunchy onions and bean sprouts. The menma and chashu (3 slices) have that nostalgic taste. The small portion of rice is cooked perfectly, and the pickles, today's kimchi, were delicious. I hope this long-established Sapporo ramen shop continues to shine as the origin of its taste. It was delicious. Thank you. Next time, I might ask for extra vegetables. It may seem like this type of restaurant is only good for lunch, but their true specialty is at night! The Genghis Khan at the back of the shop is also delicious, and the izakaya atmosphere is great. Oh, I want to eat the tuna with spicy mustard. Of course, the ramen to finish the meal too! I also have to go to "Shiun-tei," which also carries on the taste of "Tomikou."

Sorry for the unnecessary information! My food arrived in just 5 minutes. I've tried miso and salt ramen before, and they were both delicious, but the Green Shiso Soy Sauce Ramen is always a safe choice! Everyone has their own preferences, but for me, Green Shiso Soy Sauce Ramen is the best! I finished every drop of the soup. It was delicious! Thank you for the meal, I will definitely come back!

About 10 years ago, I was recommended this ramen shop in Sapporo by someone on a business trip. Over the years, my visits decreased due to less business trips and the impact of COVID-19. The shop underwent renovations and sometimes wasn't open when I tried to go. Today, I finally had the chance to go back after a long time and ordered the "Aojiso Miso Ramen" for 800 yen. The chef prepared the ramen by first stir-frying lard and bean sprouts in a wok, then adding in a flavorful broth made from dashi. The special miso paste was added to the bowl, followed by the yellow noodles from Katou Seimen, thick slices of roasted pork, and green onions. The counter seating provided a great view of the cooking process. I couldn't help but exclaim how delicious the first sip of soup was. The owner, who is usually reserved, even smiled at my compliment. Despite sweating from the heat, I finished every last drop of the soup. I expressed my gratitude to the owner again, and she kindly offered a cold towel. This experience reminded me of what a great meal truly means.

Located in Chuo-ku, Sapporo, Hokkaido, the place is Tanukikoji Shopping Street. It seems they are closed on Sundays, so the only option is to go on a Saturday when off work. Parked my bike in front of the shop and entered. Ordered the Aojiso Ramen (Miso) for ¥800, a menu item I had never seen before. There were options of miso, salt, and shoyu, and when I asked for a recommendation, the wife said, "We don't have a recommendation, so choose your favorite flavor." I went with miso. The owner then said, "I don't like it when customers ask for recommendations, try it, and then leave with a disappointed face. So, we don't have recommendations." Maybe they had a bad experience in the past. Anyway, the main dish arrived, a bowl filled with chashu, menma, moyashi, and other toppings in the miso ramen. The soup was not very Aojiso-flavored, as the miso flavor was dominant. The soup was hot and tasty, slightly oily but not overwhelming, and the noodles were delicious. Recently, I always visited at night, but for the first time in a while, I came for lunch. So, I ordered only ramen. It was miso ramen with shiso leaves. While enjoying the good smell of vegetables being stir-fried, I observed the skilled movements of the owner and before I knew it, the ramen was served. Ah, the nostalgic appearance. Yes, this is it. Char siu, green onions, menma, shiso leaves, vegetables. And the unique color of the soup. It's neither miso nor soy sauce, but the taste is definitely miso. The occasional spicy kick from the shiso leaves also leaves an impact. The noodles are on the thinner side, reminiscent of Asahikawa noodles. Overall, it's well-balanced and I love this bowl of ramen. Thank you for the meal.

I first learned about this restaurant a while back when it was featured on a TV show about night drinking spots. The owner at that time reminded me of Hikaru Utada, showing signs of aging. I ordered the Shio Ramen with Green Shiso (800 yen). The way the seasonings were added, the way the pot was stirred, the way the flame was adjusted, the way the soup was mixed, and the way the noodles were loosened, all followed the rhythm of the owner, which was very comforting. The dish that came out was slightly thick, but not too heavy for those who don't like rich flavors. It was really delicious. The vegetables, including onions, added a nice flavor. I would love to visit this place again when I come to Sapporo.

From morning until just 5 hours of work... I was hungry and appeared! I ordered soy sauce chashu (extra large) with a small rice. It arrived in about 7 minutes! I quickly dug in... The soup was rich and piping hot... and delicious! The chashu pieces were quite generous in size! The noodles were packed in tightly! As expected from an extra large portion! It was satisfying to eat! The soup was so tasty and towards the end, more chashu kept coming out! It was like old-fashioned chashu! Quite delicious! The small rice with two pickled radish slices had a subtle feeling of value... A happy weekend lunch... A nice and charming restaurant indeed! I returned home and took a nap with the window wide open and the fan on high... Goodnight cicadas...

On Saturday for lunch, I went to Shiuntei on Tanukikoji Street, a place known for continuing the legendary ramen from Tomikou, which was previously located there. The weather was warming up, so the door was left wide open today and it seemed like there were available seats, so I walked in. The interior of the restaurant had counter seats near the entrance as well as table seats in the back. It seemed like they transition into more of a izakaya-style place in the evenings, which made sense. I took a seat at one of the four tables for four people. I decided to try the basic Shoyu Ramen for 750 yen, although the unique blue shiso menu caught my eye. From my seat, I couldn't see the details of the kitchen, but I could see the flames reaching up towards the ceiling. The ramen arrived, and it looked so thick that I almost thought they made a mistake and brought me miso ramen instead. Despite the thick appearance, it wasn't greasy at all and had a rich and mellow flavor. I usually like Sapporo-style ramen, but I really enjoyed this classic style as well. The chashu was firm and had a strong flavor, while the onions still had a good texture even after being cooked. The noodles were low-hydrated, making them perfect for soaking up the soup. I wished I had discovered this place sooner, as I really enjoyed the ramen. I'm curious about trying the blue shiso ramen next time, so I'll have to come back for lunch on a weekday.

I ordered miso ramen. The chef demonstrated a vegetable stir-fry with flames shooting up. He then added the soup to the stir-fried vegetables and mixed in the base flavor (miso, salt, soy sauce) for each. The miso ramen turned out surprisingly light and easy to eat. However, the highlight of this ramen was the chewy and flavorful chashu pork topping. It paired perfectly with the noodles, stir-fried vegetables, and soup. It was fantastic. Thank you for the meal.

Unfortunately, when I arrived before 11:30 for lunch on a holiday to have Benbera's soup curry, they had a facility issue and changed their opening hours to the evening. Met up with my military academy classmates in Sapporo after 10 years, and we had a meal at my favorite ramen spot on Tanuki Koji Street, "Ittetsu." I brought along a famous Osaka sweet called "Interesting Lover" as a gift. We greeted the owner and quickly placed our order, including steak salad, braised lamb, and lamb ravioli gyoza-style. As a former renowned hotel chef, every dish was delicious just like it was 10 years ago. We finished off with my favorite miso ramen. The restaurant was packed with regular customers, showing how popular it had become. It's definitely a 3-star establishment!

The 750 yen ramen still has a great smell ( ˆ∞ˆ ) At first glance, it's hard to tell the difference between this one and the shoyu ramen I had last time, but that's the signature of a deliciously fragrant ramen. I will visit a beloved long-established restaurant that carries on the taste of the legendary shop "Tomikou" from the early days of Sapporo ramen. Until now, it was always the green shiso soy sauce ramen for me. I would like to try the green shiso miso ramen for the first time. The chef throws in onions and bean sprouts into the wok, and then it's wok fire time! As always, excellent work. Thank you for the quick service. Now, let's dig in. First, a sip of the soup. It's the traditional Sapporo miso soup, not too heavy, very delicious. It would be nice if you could add more green shiso as an option, just like with the soy sauce version. The slightly thinner Sapporo curly noodles go well with the crunchy onions and bean sprouts. The bamboo shoots are average, but still tasty. The char siu has a good chewy texture, just like in the old days. Maybe updating it to a more tender version could be a good idea, but it might be difficult to maintain the traditional Tomikou taste. In terms of taste, it's almost as good as the soy sauce ramen, but I think I prefer the soy sauce one a bit more. In any case, I hope this long-standing ramen shop continues to thrive for a long time. I wonder if they have a successor in place. I'm a bit worried. Ah, it was delicious. Thank you for the meal.
