I visited the stylish commercial facility "Maruyama Class" after a long time. "Maruyama Class" is located in the central area of the city in the Enzan area. There were some new shops that were not there before when I visited. One of these new shops is the "Chino Rice Shop Maruyama Seimai-ten." Previously, this space used to be occupied by a cute goods store called "Joy Luck Love." I will post pictures of the goods as well. Now, it has become a member of our family. (laughs)
"Chino Rice Shop" is a rice shop with its main store located in the eastern area of the city. It has branches in this "Maruyama Class store" and the "Daimaru Sapporo store." The "Maruyama Class store" mainly sells rice for daily use, while the "Daimaru Sapporo store" has more gift items. They adjust the product lineup based on the needs of each store. One of the unique features is that they display brown rice at the storefront and mill it in 1 kg units after ordering. The milled rice options include "brown rice as it is, 1-minute, 3-minute, 5-minute, 7-minute, and white rice." If requested, you can also get the rice bran ("nuka") after milling. By the way, they also sell rice bran for 70 yen per 500g.
I visited with my usual companion for the first time. This shop is located in the Maruyama Class on the first floor near the Maruyama Station on the Tozai Line of the Sapporo City Central Area. For the exact location of the shop, please check on Tabelog. I love sushi, especially hand-rolled sushi. Therefore, "nori" and "rice" are important points for me. The rice from the rice specialty store is indeed delicious. This time, I bought the staple rice for hand-rolled sushi at home, "Hokkaido Shinshinzu Ayahime brown rice." I had it milled into white rice. I also had the regular rice milled, but I will review that later.
■Hokkaido Shinshinzu Ayahime Brown Rice
The rice was milled at the store. It is a "low amylose rice," so it has a high stickiness and maintains its deliciousness even when cold. It has the highest stickiness among Hokkaido-grown rice. It is softer than regular rice, so you need to use less water when cooking. It is commonly used to mix with rice for soup curry.

"Ayahime" is a low amylose rice with high stickiness. By the way, glutinous rice does not contain amylose. Regular rice tends to fall apart easily in hand-rolled sushi. In that regard, "Ayahime" blends well with the ingredients, making it easier to enjoy without spilling the rice. Personally, I think "Ayahime" is a rice variety suitable for hand-rolled sushi.
The scallop meat in the hand-rolled sushi photo is a frozen product from "Fujiiya Honten" in the basement of Mitsukoshi Sapporo store. It has a taste similar to instantly frozen scallops, and when thawed, it tastes like fresh scallops. It is a bit pricey, but it is worth buying during sales. (laughs)
The freshly milled rice is very warm. It also serves as a hot water bottle. (laughs) Rice is the basis of a meal. The rice from a rice shop provides a sense of security. Hokkaido-grown rice offers a delicious and safe taste. The best taste of rice is right after milling. The taste deteriorates as time passes after milling.
