On the first day of my business trip, I was taken to a restaurant by a regular customer of the client. The restaurant is located on the first floor of a dining building about 200-300m from the Goryokaku Koen-mae tram stop. Upon entering the restaurant, a lively chef greeted us. The interior was clean and had a nice atmosphere with counter seats and a raised tatami area. It was clean and very comfortable. Moreover, this restaurant not only offers delicious fish but also has an amazing selection of "sake". The lineup of Japanese sake was extensive, and I believe it is a reliable place to enjoy Hokkaido's seasonal ingredients. I definitely want to stop by again when I visit Hakodate!!

It's dinner at Tsukasa. It's a famous restaurant, isn't it? It is a prominent restaurant in Honcho, the bustling area of Hakodate. The customer next to me was an elderly person, probably a chairman somewhere. He seemed like a celestial being. Tsukasa is one of the sushi restaurants in Hakodate that you must talk about. The quality of the sushi is top-notch. I ordered the premium sushi. The sea urchin was especially delicious. It was from Okushiri, saltwater sea urchin. For the soup, you can choose between kinmedai or jidori chicken. It's a restaurant that you can only use for business entertainment, but it's nice to visit occasionally. Thank you for the meal.

Just a few minutes' walk from Goryokaku or a 3-minute walk from Goryokaku Koen-mae, this restaurant is open until 3 am. It functions as an izakaya as well, offering a variety of small dishes and appetizers. I made a same-day reservation and only had sushi before heading home. It's so convenient to be able to use this place so casually. I arrived at 7 pm, so I didn't realize how close it was to Goryokaku. The omakase set for 4,000 yen included 13 pieces of sushi (with tamago). The quality of the fish was excellent, with highlights including the thick-cut tuna, large red shrimp, and sweet and fatty otoro. The sushi was fresh and delicious, showcasing the seafood of Hakodate. The portions were generous, and the overall experience was fantastic. Thank you for the meal!

This time, I wanted to eat seafood in Hakodate, so I did some research and found "Tsukasa" to visit. The entrance curtain was inviting, and we visited with four people, so we used a private room. The counter also had a nice atmosphere, so I recommend sitting there as well. Please refer to the photos for the dishes we ordered. By the way, they were so delicious that I forgot to take pictures. There were various dishes like steamed dishes and soups. We could feel the season, enjoy fresh seafood, and the sushi was also delicious. It was a wonderful restaurant.

This is a sushi restaurant near Goryokaku Park. They have both counter seats and tatami seating, and it's quite spacious. The whiteboard is filled with various types of seafood, but unfortunately, they didn't have live squid that day. I asked for recommendations and tried the taraba crab innards, young ayu fish, and tokishirazu sashimi. I ended with a sushi set plus additional anago and mirugai. The total came to just over 10,000 yen. It was my first time trying taraba crab innards, and it was a unique experience. The special sushi set I ordered had a variety of seafood like hokkigai, sea urchin, salmon roe, crab, kombu with crab eggs, shrimp, and more. It was a great selection of northern sea delicacies and perfect for tourists. Everything was delicious. It felt more like a seafood restaurant with sushi rather than just a sushi place. It was bustling with locals, but even dining alone at the counter, I could enjoy a leisurely meal with drinks!

I used it for entertaining with business associates. It was past 1 am, but there were still a few customers. I didn't capture everything in photos, but I was very satisfied with dishes like abalone sautéed in butter soy sauce and grape shrimp that are purple in color as the name suggests. My favorite local sushi restaurant. I was able to get fresh squid that has been hard to find in recent years. I love the texture of the innards - mixing it with ginger soy sauce and eating it as sashimi is the way to go! The fresh swordfish during this season is also amazing. It's rich and delicious. Of course, the sushi is also very tasty. The small rice portions are great for women. The menu is also extensive. I was satisfied after a long time since my last visit.

Today, I visited Sushidokoro Tsukasa near Goryokaku Park in Hakodate City by myself! This restaurant is not open for lunch, but it is open from 6 pm to 3 am, which is quite convenient. <Dishes> - Assorted sashimi - Crab ovaries and testes - Hachinohe jidori chicken tataki - Saikyo grilled black cod <Sushi> - Karei (flatfish) - Salmon roe - Chu-toro (medium fatty tuna) - Uni (sea urchin) <Drinks> - Draft beer - Highball - Tadaginjo sake - Kunimare Starting with a luxurious assortment of sashimi including snow crab, amberjack, shrimp, red tuna, chu-toro, live octopus, uni, ikura, and scallop. Each bite is a delight, with no disappointments. Next, the Hachinohe jidori chicken tataki is served rare and tender, bursting with flavor. The crab ovaries and testes are a delicacy that pairs perfectly with sake. The Saikyo grilled black cod is cooked to perfection, a must-try dish. Moving on to the sushi, the Karei is soft and delicate, the Salmon roe is bursting with flavor, and the Chu-toro and Uni are exceptional. The elusive Salmon roe is a treat with its unique flavor. The Chu-toro and Uni are so delicious that I had to order more sushi of them. The Chu-toro is rich and flavorful, while the Uni is creamy and sweet, melting in your mouth. The Uni sushi also has a nice hint of nori flavor. Custom sushi orders are also available, with a variety of options to choose from. The staff is friendly and accommodating, making it a great dining experience even for solo diners. I can't wait to come back with friends and try more dishes next time!

The long-awaited Hokkaido gourmet tour began on the first day. After arriving at Hakodate Airport at 4 pm and checking in at the hotel, I came here. I had researched in advance and found that Tsukasa-san here offers a wide selection of a la carte dishes and will make sushi according to your preferences. Perfect for someone like me who dislikes set courses! And to top it off, I heard that I can try that elusive ingredient here??? First, I ordered some a la carte dishes... Shirako (milt) & Ankimo (monkfish liver) - Different from what I expected, but a delicacy! Botan Ebi (shrimp) tempura - Firm and crispy, I love tempura... Kinmedai (splendid alfonsino) simmered - I thought it was Grouper or Sebastes, but it's actually Splendid Alfonsino. Surprisingly large at about 40cm in size! Rich in fat, the flesh is tender and flavorful. Then, I requested my favorite sushi... Zuwai Kani (snow crab) ~ Iwashi (sardine) seared ~ Otoro (fatty tuna) seared ~ Shio Water Uni (sea urchin) ~ Ikura (salmon roe) ~ Nishin (herring) seared ~ Kinmedai (splendid alfonsino) seared ~ Elusive Botan Ebi (shrimp) ~ Grilled Botan Ebi head ~ Elusive Salmon Roe ~ Sujiko (salmon roe) ~ Hokkigai (surf clam) - Full... I ate my fill... The seared items are done on a grill, not with a burner. The elusive Botan Ebi is frozen so the texture is not the best, but it's still sweet. However, how does it compare to live Botan Ebi? In terms of price, personally, I prefer live Botan Ebi... And the Salmon Roe is also frozen. Surprisingly lacking in fat... I guess that's how it is... As someone from Kyushu, I never thought I would have the opportunity to taste this Botan Ebi and Salmon Roe, so I am truly grateful... I would love to try fresh ones someday... And surprisingly, the Kinmedai was huge, but I managed to finish it all! Thank you for the meal!

This is a sushi restaurant located in the bustling area of Hakodate. I visited on a Saturday night around 9 pm without a reservation and was able to get in easily. I started with some appetizers - the recommended salmon butter and tachitenpura from the daily specials boat. Both were reasonably priced. The salmon butter consisted of thick slices of grilled salmon with butter on the side, which was pretty good. The tachitenpura was made with cod milt tempura, creamy and melting in the mouth. Perfect with sake. Next, I ordered the "Tsukasa" assorted sushi for 4000 yen. It included akami, gurnard, surf clam, toro, abalone, otoro, spot prawn, yellowtail, kelp-wrapped sushi, snow crab, sea urchin, salmon roe, shishamo, and more. I also added an extra shishamo. Overall, the quality was high and everything was delicious. With three glasses of sake, the total bill came to just over 10,000 yen. I wondered if it would have been worth trying a more expensive sushi course, as the tuna seemed a bit tough and possibly young, but the spot prawn and snow crab were exceptionally tasty. The sake I had was Hokuto Zuusou from Kuriyama, Hokkaido, Kokki from Masakamachi, Hokkaido, and Hamachidori from Kamaishi, Iwate. Thank you for the meal.

I used to stay around this area and often visited this sushi restaurant. It had around two counters, tables, and a raised seating area. The service was great and the food was delicious. The menu had prices listed per piece, which was very reasonable. I definitely want to go back!

All of the dishes were delicious. There were various types of chawanmushi available, and being able to choose one with sea urchin was a plus. The crab served as an appetizer was also very tasty. We ate lightly at the second place and it ended up costing just over 10,000 yen, so if you stay longer, it could become quite expensive.

Tsukasa-san's restaurant is always a favorite of mine. Everything I eat there is delicious, and the sushi is made with great care and attention to detail. The location is just a 3-minute walk from Goryokaku Park, making it easily accessible! The interior has a calm Japanese atmosphere, with a total of 32 seats including 7 counter seats, table seats for 4 people or more, and private rooms with sunken kotatsu seats for 2 people or more! If you want to enjoy sushi prepared by chefs in front of you, the counter seats are recommended, while if you want to relax and enjoy your meal in a private setting, the table seats or sunken kotatsu rooms are ideal! The restaurant can accommodate up to 25 people in private rooms, making it suitable for parties or business entertainment! The atmosphere inside is bright and lively, and I felt very comfortable! Here are the dishes I ordered this time: - Assorted sashimi: Snow crab, amberjack, botan shrimp, lean tuna, medium fatty tuna, octopus, sea urchin, salmon roe, and scallop were all included! The freshness was excellent, and each piece was delicious!
