The approach to the calm atmosphere inside the restaurant, up the stairs of a building you would never enter otherwise, is quite nice. The menu is omakase only, with high-quality dishes starting from the appetizers. The shumai is a must-order addition, and it pairs well with natural wine. Personally, I was impressed by the sand liver wrap, and finishing with corn rice is very Hokkaido-like. The dishes are cute. On this day, we requested the 5000 yen chef's choice menu. Young bamboo shoots tempura, bamboo shoots and wakame fritters, cherry salmon larb, cherry salmon and vegetables, Tatar salad from a region in Thailand, green asparagus with egg yolk vinegar dressing, stir-fried scallops from Betsukai with spring vegetables and butterbur sprouts, homemade confit of free-range pork from Hokkaido, steamed rice topped with boiled whitebait, pistachio pudding. Currently, they only offer course meals by reservation. I tried the course meal priced at 3500 yen excluding tax. The appetizers made with seasonal ingredients were delicious, and the popular dumplings were juicy and tasty! The main course allowed us to choose between meat and fish. We ordered separately since there were two of us. Both dishes had a perfect combination of ingredients, providing a new sensation. The rice seemed to contain sticky rice, which was chewy and delicious. The miso soup had just the right flavor. For dessert, we could choose from three options. I thought it might be just a small bonus, but the dessert was incredibly delicious! I would come back just for the dessert alone. The dishes were served in lovely plates, and I could enjoy the atmosphere. However, it's not suitable for those in a hurry as it's a place to relax and enjoy a meal slowly, especially while sipping on some drinks.

The preparation to remove the fishy smell is weak and the cooking is too gentle, resulting in poor texture and aroma. However, even after considering that, the other dishes were surprisingly good. The main dish, the spicy grilled duck, was juicy, fragrant, and delicious. I want to go back for seconds! I ended up drinking two bottles of sparkling wine. I definitely want to visit again.

On the third night of my business trip in Sapporo, I visited GRIS with a business partner. We had made a reservation a few days in advance. The restaurant is located at Minami 2-jo Nishi 8-chome, just a little past where the Tanuki Koji arcade ends. As there are no big signs, you need to pay attention to find it. We arrived right at our reservation time of 7:00 PM. The restaurant is on the 4th floor of a building, with no elevator so you have to take the stairs. Upon entering, we were greeted by a unique and sophisticated interior design, lighting, and background music that set a mature ambiance. There are around 15 seats in the restaurant. We hung our coats on the wall hanger rack and were seated at a table for two. GRIS offers fusion cuisine that blends Chinese and Japanese influences. Here is what we ordered and the order in which it was served: - Shumai: Large shumai served with mustard. It had a refined flavor and was satisfying. - Deep Potato Fry: Deep-fried two kinds of potatoes. The dish highlighted the natural flavors of the ingredients. - Homemade Daikon Radish and Brown Rice Pickles: A gentle flavor. - Tomakomai Kitayuki Mushroom Salad: This dish was okay, but the mixing of flavors seemed to overshadow the goodness of the Kitayuki mushrooms. - Vinegar Chicken (Sweet and Sour Fried Chicken): Chicken fried with a light batter and served with a sweet and sour sauce. The sauce was a bit too sour. We also had two draft beers and four glasses of white wine. The total bill for two people was 8,910 yen, which we felt was reasonable. The menu also includes rules such as ordering all dishes at once to avoid delays, no sharing of dishes for parties of two or more, restrictions on visiting with children, and a requirement for groups of four or more to order the chef's choice set menu. This is my second visit. I was lucky to get a reservation by calling on the day. I ordered the recommended white wine from the same producer since the usual wine I wanted was sold out. The label was cute and the wine was delicious. My companion who can't drink alcohol had a white peach soda, which sounded delicious just by the name. The wine glasses were sparkling and lovely.
- Various boiled vegetables: a mix of greens, mountain vegetables, zucchini, with cherry tomatoes as a nice touch, very tasty.
- Shumai: large, juicy, and delicious, a must-order.
- Steamed pork bun: the slightly sweet Chinese bun skin was delicious.
- White asparagus and egg blue cheese stir-fry: the sweet white asparagus and fluffy egg with a hint of blue cheese saltiness was a perfect combination.
- Potato salad with mountain wasabi, seaweed, and long yam: the wasabi was just subtly present, a perfect palate cleanser.
- Pork belly white miso simmered: the tender meat that crumbles with chopsticks and the grilled bamboo shoot side dish were delicious. The white miso had a gentle flavor.

On a weekday night with light rain falling, my friend and I climbed the stairs of a worn-out building on Tanuki Koji 8-chome up to the 4th floor. We arrived at 6:30 pm and were seated at a two-seater table in the back of the cafe-like interior. There were private rooms in the back as well. We discussed what to eat, but with so many tempting options on the menu, we ended up choosing something reliable. We started with a Sapporo Perfect Classic to cheers. The menu for the day included:
- 2 pieces of shumai for 500 yen: The large dumplings arrived steaming hot in a bamboo steamer, with flavorful juices oozing out when bitten into. The simple seasoning allowed the richness of the pork, sweetness of the onions, and umami of the shiitake mushrooms to shine. Delicious!
- 2 spring rolls for 850 yen: Fried to a crispy perfection, filled with shrimp and broccoli. While the shrimp was juicy, the broccoli felt a bit lacking in flavor. We paired this with a glass of House white wine.
- Nori and wasabi potato salad with nagaimo for 600 yen: A unique twist on the classic potato salad, with the smoothness of the nagaimo, fragrance of the nori, and kick of wasabi. No mayo in sight!
- Betsukai lamb (hogget) cloud white meat for 1800 yen: A dish made with hogget, something between mutton and lamb, boiled or steamed and finished with a soy-based sauce mixed with the broth from cooking the lamb. Topped with sesame, minced wood ear mushrooms, and buckwheat seeds for added aroma and texture. The dish also included shredded Chinese cabbage for sweetness. The subtle sauce allowed the flavor of the lamb to shine. We switched to sake at this point.
- Sesame-dressed white fish (today's was sea bass) for 900 yen: The light acidity of the sesame sauce complemented the fatty sea bass beautifully. Delicious!
- Yuba and mountain wasabi for 500 yen: Firm yuba and mountain wasabi enveloped in a gentle dashi broth made from kombu and bonito flakes. The fragrant mountain wasabi-infused broth was irresistible, no need for soy sauce! Although it's a Chinese restaurant, it has a touch of Japanese taste. Wine or sake pairs well.
