I visited the restaurant on a weeknight. I arrived at 8:00 pm and there were empty seats available. This is a yakitori restaurant in Muroran, which I had been curious about after seeing it on TV. I was really looking forward to it. First, I read the "3 main features of Muroran yakitori" on the menu. [Pork] The rich flavor of pork meat is different from chicken meat, and it is a characteristic feature. In Muroran yakitori restaurants, they distinguish between chicken meat as "tori-sei" and pork meat as "buta-sei". [Onion] In some parts of Honshu, they call it "naganegi" when it is sandwiched between the meat, but in Muroran yakitori, "onions" are used, and its natural sweetness and aroma stimulate the appetite. [Wasabi] Serving "wasabi" as a condiment for yakitori to bring out the flavor of the meat is also a delicious commitment of Muroran yakitori. [Sauce] The secret "sauce" is a taste created by the tradition since the establishment. It's a bit late, but in Hokkaido, they call fresh meat "seiko". It's educational. Now, I ordered "Muroran Yakitori Buta-sei (400 yen)", "Ippin Original Quail Charcoal Grill with Shell (380 yen)", "Shiraoi Beef Amiyaki Steak Assortment (1,900 yen)", and "Torisei (380 yen)". It arrived in about 10 minutes. First, I tried the quail. The charcoal aroma is fragrant, the thin shell is crispy, and the inside is as tender as a boiled egg. For some reason, the shell does not linger in the mouth as expected. Is this quail! It's delicious as expected. Next is the pork meat. It was recommended to have it with sauce. It is a combination of pork shoulder and onions, and it goes well with the sweet and spicy secret sauce because it is lighter than pork belly. The wasabi also adds an accent. And then the Shiraoi beef. The dish and presentation are unexpected for a yakitori restaurant. As expected of a brand beef, the taste is sweet, juicy, and refreshing. Finally, the chicken meat. It's just a regular yakitori, but it is packed with umami and has an elegant aftertaste. Perhaps the chicken meat is the best today. I might have to go to the original place. Thank you for the meal.
