The noodles are medium-thin, slightly curly egg noodles. The noodles have a slightly lower water content, giving them a unique texture and good firmness.

This is a noodle-only dish where you can choose the thickness. I chose medium thickness. I paired these noodles with a commercially available miso soup. Despite being egg noodles, they have a firm texture with good firmness, and although the water content is not high, they are well-made and delicious.

Located quietly on the north side of the former Hokubu Army Headquarters, which later became the Tsukisendensho, along Tohoku Street, is a well-known long-established noodle manufacturing company. Established in 1954, Uemura specializes in ramen egg noodles and fresh hiyamugi noodles. I had been curious about Uemura's noodles, which are occasionally seen in ramen shops, so I visited for the first time. The office has a typical Showa-era feel, with noodle boxes and samples placed near the entrance. I tried the dishes mentioned above. The set with soup was simple but not bad, and the other noodle dish, recommended by Uemura, was quite good. The egg noodles were unexpectedly delicious, and I would like to buy noodles here in the future instead of at supermarkets.
