From morning until evening, we walked through the mountainous grasslands, getting soaked in the rain, and finally arrived in Sapporo after splitting into several cars at the airport. We quickly dropped off our luggage at the hotel and gathered for a banquet. The city was lively with YOSAKOI Soran on that day, and we had made reservations at a bar in advance. Although we added one more person over the phone earlier in the day, we managed to squeeze all seven of us into the place. We were thankful for the arrangement as there was a sign outside saying it was fully booked for the day. Some of the seven people were meeting for the first time, while the rest were familiar with each other. When I suggested having salted hormone in Sapporo, most people agreed, even though half of them were from the western Japan area and were a bit surprised by the idea of pork hormone. Each of us ordered our favorite drinks, and the grill master cooked the hormone and guts for us. Everyone enjoyed the meal, especially those trying pork hormone for the first time. We talked and ate for about three hours, enjoying the delicious food and drinks. The atmosphere was lively, and we all left feeling satisfied and full. A man from Kansai kindly paid for the meal, and we said our goodbyes. I would continue my journey alone the next day.

Recommended by a resident of Sapporo, I was able to enter the restaurant without a reservation. There were many unusual cuts such as salted pork hormone and pork harami, which were all very delicious. The grilled chicken breast was also cooked quickly and had a unique texture that I had never experienced before. It was really delicious!

I was lucky to make a same-day reservation on a Sunday at a Sapporo gourmet restaurant for 5,330 yen. The weather was hot like midsummer. I ordered beer, beef intestines, pork hormone, and chicken neck. They were all delicious with a salty flavor and no sauce. The specialty is the hormone, but the chicken neck was especially tasty. This is a delicious hormone restaurant that requires a reservation.

I visited Sapporo in May, not Susukino, and I was extremely satisfied with my trip. I had tonkatsu for lunch and Genghis Khan for dinner, but I would definitely want to visit again even if I have to go in a state of hunger. I chose from the recommended menu of a specialty shop for Asahikawa hormones. <What I ate> - Chicken neck (tori kashiwa) ... 690 yen - Chicken heart (heart) ... 730 yen - Pork hormone rectum ... 670 yen - Pork hormone special gatsu ... 800 yen All the seasoning was salt, which seems to be a feature of Asahikawa hormones, making it easy to understand the difference in taste of each part. Everything I ate that day was delicious, especially the chicken heart (maru hatsu) was one of the most delicious things I've ever eaten in my life.

Susukino area. This is a restaurant that was selected for the Yakiniku Hyakumeiten 2022. It was completely unknown until being selected as one of the top 100. Upon researching, I found out that the owner trained at a place called "Shio Horumon Kuri no Ki" in Asahikawa. I'm not familiar with that place either, but let's give it a try. The restaurant, located next to Jingisukan Jutetsu, has counter seats and table seats, but it's not very spacious. The taste is only salt. There are no condiments on the table! I ordered: - Straight Intestine (670 yen): I thought it was pork intestine, but it was thin and not fatty, with a thick texture. The seasoning with garlic and salt & pepper gives it a punch. I also tried the crispy grilling, but it's better when grilled moist, letting the umami spread in your mouth and inside. It was delicious! - Pork Guts (800 yen): Many people can't tell the difference from beef tripe, but it has a crispy texture and good freshness. It may not match the taste of a good beef tripe place though. - Pork Skirt (price not mentioned): I made a mistake by ordering the thick cut. It has a slightly wild taste of pork with salt sauce. - Salted Onion (430 yen): Onion in salt sauce. It goes well with horumon. - Edel Pils (700 yen): I like this one. It's becoming more available lately. It's poured well with good foam. The bitterness is excellent, very delicious! It's not too cold and that's what makes it tasty! But most people prefer regular beer. Overall, I liked the Edel Pils and straight intestine. The staff saw me off when I left. The toilet was spacious and clean. Asahikawa Hormone is a place that I had heard was delicious. They cook the meat on a gas stove that resembles a shichirin. The meat is pre-seasoned with a salt base, so there is no sauce provided. I wanted to order water, but they require at least one drink order, so I got a ginger sour. The lamb loin was delicious and easy to eat. It didn't have a strong lamb taste. The thick-cut beef sagari had a nice texture and was juicy. The standout was the pork hormone cobukuro. It had a crispy and crunchy texture, with a light amount of fat and was very tasty. I definitely want to come back for this dish!

Today's first stop at a bar is Horumon Shogo's for a toast with Sapporo Classic. It's been a while since I had yakiniku. The salted horumon has a strong presence. It's tender and delicious, and goes well with beer. The high-quality beef tongue has a nice crunchy texture that I like. The salted horumon has just the right amount of saltiness. It's well-cooked and goes well with alcohol. Lastly, the garlic oil grilled dish was surprisingly delicious, to the point where it made me laugh. I ate the whole garlic, but it didn't taste overly garlicky at all.

I started eating salt hormone a few years ago, and I think this place is the best. First, I order a lemon sour and look at the menu and blackboard on the wall. I start with the premium guts, rectum, and pickles. The guts with a good texture were good, but personally, I thought the rectum was the most delicious. I wanted to try other parts as well, but the initial impact was so strong that I ordered more premium guts, rectum, and lemon sour. 2 lemon sours, 2 premium guts, 2 rectums, 1 pickles, total 4450 yen. Hormones tend to give off a cheap impression, so when the bill reaches the 4000 yen range, I momentarily think, "Huh?" But it's so delicious that I don't mind at all. Even though I was a first-time customer, the service was very good, and the interior of the restaurant is simple and very clean. The shiny stainless steel cooking utensils on the wall are dazzling, conveying the seriousness of their business.

On the way to the first restaurant, I saw this shop while walking. I decided to go to the second restaurant. The interior of the shop is beautiful. The kitchen is also spotless and well-organized. I feel safe in such a shop. It's a salt hormone restaurant, so I squeeze lemon on the sagari. The gatsu is crunchy. It was a shame that I couldn't eat much because it was the second restaurant. The tomato highball was also very delicious, and I want to go back to try the Red Eye tomato juice from Kamikawa.

On a certain Saturday, I decided to visit a restaurant I had been curious about, called Shogo. They serve Asahikawa salt hormone, which piqued my interest. It was my first time in Asahikawa, so I was a bit unsure. The restaurant had 6 counter seats, 3 tables for 4 people, and 1 table for 6 people. When I arrived at 9:00 PM, there were 7 customers already there and 6 more came in after me. I ordered a classic beer for 500 yen, served in a tumbler. The service was average. I tried the "direct rectum" for 490 yen, which was basically open rectum with some thin slices of hormone mixed in. The salt marinade was well rubbed in, giving it a mild saltiness without being too sharp. Next, I had the premium beef tripe for 600 yen. It looked like tripe but had a crispy texture similar to beef tendon. It was delicious. I also tried the "chire" for 480 yen, which had no fishy smell at all. It was perfectly grilled, with a firm yet tender texture. I had eaten earlier in the day, so I couldn't eat much more, but I definitely want to come back with an empty stomach or with someone else next time. The prices were reasonable, and I really enjoyed the meal. When I asked for the bill, they even served me tea, which was a nice touch. I will definitely be visiting this restaurant again. I visited Gurume Buta Shogu's restaurant for dinner. It is a sister shop of the Asahikawa Shio Hormone Kurinoki and has been open for just one year. It is a hidden gem known among top chefs and highly rated restaurants in Sapporo. Located a 6-minute walk from Susukino Station, on the first floor of Hotel Mystays Sapporo Susukino. Drinks: - Edelpils 550 yen Food: - Hormone Intestine 490 yen - Premium Guts 600 yen (limited quantity) - Chire (Hizou) 480 yen - Thick-cut Beef Sagari 1400 yen - Salted Lamb Loin 1300 yen The hormone meats are well-prepared with no unpleasant smell and a smooth texture. The salt sauce pairs perfectly with the meat. The lamb loin is a rare cut and very tender. The restaurant is open until 2 am, making it a great spot for second or third rounds. I highly recommend trying their delicious hormone meats when visiting Sapporo.

Here is a recommended hormone restaurant by Chef Kudo of Sushi Issai and Chef Araki of Tempura Araki (both Michelin two-star chefs). I visited with high expectations, and it did not disappoint. They offer various cuts of hormone, all of which are delicious. It's true that restaurants recommended by top chefs are always good. When you visit an unfamiliar place, asking top chefs for recommendations is the best way. I definitely want to visit again next time I'm in Sapporo. The dishes I had on this day were as follows: "Pork intestine hormone," "Premium pork stomach," "Thick-cut beef sagari," "Salted lamb loin," "Pork spleen hormone," and "Spicy egg soup."

Today, the Sapporo Beer Garden opened. The drinking buddies couldn't resist going on the first day. Despite the questionable weather, I came to Sapporo Beer. Here, I will drink limited edition beers. I tried the beer from Furano and the legendary (or was it mythical?) hop beer. My phone is acting up so I can't take pictures. As it started to get a bit chilly and drizzly, I quickly moved on. The second stop was an oyster restaurant where I had fresh oysters and grilled oysters, but I couldn't take pictures. The menu here was not very extensive, so I moved on again. Finally, I arrived at "Shugo". I left the beer garden and got here in just an hour (laughs). First, the beer. The beer here is so delicious! Great aroma too, what is this (it's beer though, haha). I quickly asked the regular A-chan to order various dishes. We ordered cow's knee cartilage (which always leads to air guitar playing), gatsu (intestines), spleen, hormone, and chicken hearts (which leads to singing Lion Heart). Each dish had a refreshing salty flavor. We also ordered side dishes like kimchi, spicy egg soup, and green onion egg rice. The green onion egg rice was surprisingly delicious! The kimchi was endless. Rice topped with salted green onions, egg yolks, and sesame seeds. It was impossible for it to taste bad. I need to try making this at home! Thank you for the meal. It's cold in Sapporo during the winter, so in response to my boss's request to have dinner somewhere not too far from the hotel, I decided to try this place I had been checking out since it opened last year. The restaurant is located on the first floor of Hotel Kaiko. I haven't stayed there recently, but I think it would be convenient to eat here next time I stay. The interior is clean and has a calm color scheme layout, with no smoky atmosphere, making it a very pleasant place to dine. The tables and chairs used are from Asahikawa Furniture, which I encountered for the first time and found the seating to be very comfortable. To start, I toasted with a Classic (490 yen) and ordered Kimchi (390 yen) and Chilean sweetbreads, which are well-known for their rich flavor and light texture when cooked properly. I also had Pork Harami (550 yen), which allows you to savor the juiciness of the meat directly, a must-order at a horumon restaurant. The Horumon (550 yen) was delicious, with a preference for thin slices. The Premium Gatsu (600 yen) was fresh and tender, best enjoyed with salt sauce. The Jumbo Shiitake (450 yen each) had a strong impact, with a well-balanced flavor and generous portion. After the Classic, I looped with a Dewar's Highball (430 yen). Unlike other horumon restaurants with a smoky atmosphere, the special salt sauce here was mild and flavorful, allowing me to enjoy it until the end without getting tired. I was hungry, so I quickly placed my order! I ordered the straight intestine [490 yen], premium beef offal (limited quantity) [600 yen], garlic pork skirt meat [570 yen], chicken thigh meat [520 yen], chicken skirt meat [520 yen], and lamb loin [820 yen]. This restaurant serves all its meat with salt instead of sauce. I immediately tried the recommended straight intestine (salted hormone) and it was delicious, just as recommended.
