28th December 2022, 10:30 am - Revisited the Central Market, always the first shop I visit. Around 10 am, the pickles are usually sold out, and the shop is occasionally closed. Luckily, it was still open this day. However, there were hardly any pickles left. They were just packing up the Daikon Natamawari pickles, with a sweet taste similar to sake lees and a sharpness from the daikon, a perfect match for my winter diet dominated by grilled fish.
They also had Napa cabbage and cucumber pickles made with just salt and water, using homemade brine for pickling. They put them in the same bag since they don't use artificial seasoning, allowing the flavors of the cabbage and cucumber to blend together and enhance the taste - killing two birds with one stone. Since they don't use any seasonings, it doesn't have any strange flavors, making it a treasure for me. I'll definitely be going back to buy more!

Welcome! Located in the Marugata Center in the Sapporo Central Wholesale Market in the Kuwanazono area of Chuo Ward, this pickles shop is where Mokutan-san frequents for the cleanest air. The shop offers a variety of pickles, especially during the winter season. Tom once mentioned that he only buys pickles from here and not the commercially available ones. Today, I bought a bag of pickles for 500 yen, which is usually the price. The pickles this time were herring pickles, filled with plenty of herring pieces, including bones and heads. Despite the need to chew carefully, the pickles were well marinated with a strong flavor from the seasoning, especially using the power of malt. The cabbage, turnips, and other vegetables added a crunchy texture and delicious taste. I feel sorry for Keipon-san, but I would like to try the regular pickles from here as well, especially the cucumbers. I wonder when they will be pickled.
