Off-market Sapporo Asaichi area. A popular restaurant among the 100 warriors of the Hyakumeiten 2021. Today, I visited here with the purpose of having morning ramen in Susukino, but all the places were closed, so I came here instead. This is a popular restaurant that requires reservations, but I visited without one! When I entered the restaurant, I realized that the chef was working alone, so I was worried that there might not be enough shari, and I felt sorry for causing any inconvenience. The interior of the restaurant is small with an L-shaped counter. The nigiri sushi starts at only 100 yen! First, I had some seaweed soup. The soup had a strong dashi flavor and was richer than the usual miso soup at sushi restaurants. The dashi was delicious and the aroma of the seaweed was pleasant. For the nigiri sushi, I started with flounder and chutoro, with the soy sauce being brushed on top so there was no soy sauce on the table. The chutoro didn't look impressive, but the slight sweetness of the soy sauce matched well with it and it was to my liking. The flounder was thick and delicious, and the soy sauce matched well with the white fish. Next, I had seared salmon, which was delicious. The scallop had a moist and melty texture and was very tasty. The snow crab looked fancy but lacked flavor. The horse mackerel had a weak ginger scent but was relatively tasty. The hokkigai had been simmered to a soft texture. The texture was high-quality, like the neta at a top sushi restaurant, but I would have preferred a bit more flavor. The sweet shrimp was moist and had a sweet and high-quality taste. The ikura was plump and had a very fragrant aroma that paired well with the seaweed. The sea urchin was melt-in-your-mouth and delicious. Overall, I stayed for only 11 minutes as I had requested to enter the restaurant, so I couldn't take good photos, but in the end, I was satisfied with my visit. The shari was at the right temperature, perfectly firm, and melted in the mouth cleanly without any stress. The size of the neta was "slightly larger" compared to nationwide standards, smaller than the ridiculous sizes at gourmet conveyor belt sushi restaurants, and smaller than high-end sushi restaurants, especially for shellfish. The sea urchin and other ingredients at this price point make it a great value. There were no particularly striking items, but the sushi showcased Hokkaido's ingredients and is recommended even for those not used to sushi restaurants. The order form makes it easy to understand the prices for your preferred nigiri sushi. The 15-piece omakase set is only 800 yen more than the 10-piece set, so it's definitely recommended for the extra 5 pieces. There was seared kinki being served. I liked the atmosphere of the chef and wanted to take a picture, but I'll ask next time. It was delicious. Thank you for the meal♪♪
